The goal of the present study was to investigate possible differences towards strenght recovery measured by different methods and running economy (RE), after one session of downhill running (DR), in order to induce muscle damage (MD). Our hypothesis is that the strenght recovery measured by jumps is more alike RE markers, due to the measures' specificity. Ten male subjects, ages 18 to 30, apparently healthy, without any experience with strenght training at least 6 months before the tests took place in this study. After going to the lab twice (to familiarize themselves with the protocols, and determine their maximum oxygen consumption/running speeds), they went to the lab five times in the following week, in order to collect all the variables before, immediately after, and 24, 48, 72 and 96 hours in. The variables obtained were: stride frequency (SF), stride lenght (SL), oxygen volume (VO2), carbon dioxide volume (VCO2), ventilation (VE), lactate blood concentration ([Lac]), isometric peak torque (IPT), subjective pain perception (SPP), effort perception (EP), medial-portion circumference (CIR), knee movement extent (EXT), torque development rate (TDR), counter movement jump and squat jump height (HCM and HS), strenght development rate of both jumps (SDCM and SDS), and maximum soil strenght reaction (SRCM and SRS). Changes over time in all variables were verified by one way variancy analysis. Differences between the strenght measures were verified by two way variancy analysis. When significant effects were verified, Tuckey's post-hoc were applied. The significancy level taken on this study was p < 0,05. Of all indirect muscle damage markers, IPT, SPP and TDR were the only ones in which ocurred significant changes. We couldn't find the moments where this happened for TDR with the post-hoc used. We measured alcohol levels by the Cordebard method in 148 CSF samples from individuals who had abstained from alcohol for at least 7 days prior to the beginning of the study. Each blood sample was accompanied by a CSF sample from the same patient. CSF samples found to be normal after analysis were used as controls. Mean alcohol concentration in blood did not differ significantly between the control group and the groups with altered CSF. The group with altered CSF had statistically higher alcohol levels in CSF than in blood. CSF lactate, glucose and protein levels were not correlated with alcohol level. The results suggest the presence of endogenous alcohol in the CSF, with levels increasing in the presence of pathological processes involving the nervous system.

Quality is a variable concept, which involves many factors, depending on the consumer market. In meat production, the concern with environmental aspects, animal welfare and the health and safety of workers is increasing. This work studied the effect of controlled atmosphere stunning of broilers on meat features and biochemical parameters for stress. Cobb broilers were stunned by electrical stunning and by controlled atmosphere with 70% CO2 and 70% CO2 + 30% Argon. After stunning, serum levels of glucose, lactate and corticosterone were compared with those of broilers at rest, immediately before transportation and slaughter and after 12 h of feed withdrawal (control group). At slaughter, blood volume drained during bleeding was not different for the stunning methods tested, ranging from 3.3 to 3.4% birds weight. This finding was important to demonstrate that gas stunning was not responsible for the animals′ death. Final pH in breast (6.1 to 6.2) and thigh (6.3 to 6.5) also did not vary among the different stunning methods (P > 0.05). Lightness (L = 60.55) and redness (a = +8.94) values found for breasts from electrical stunning showed that they were darker and redder (P < 0.05), probably due to changes in blood pressure. Glucose and corticosterone levels were not different between gas stunned birds (302.45 to 315.7 mg/dl and 55.71 to 72.49 ng/ml respectively) and birds at rest (305.95 mg/dl and 50.65 ng/ml) (P > 0.05). These stress indicators were higher (337.65 mg/dl for glucose and 104.13 ng/ml for costicosterone) when electrical stunning was used (P < 0.05). Lactate concentrations were lower (5.4 mmol/l) for birds at rest (P < 0.05) but not different for all stunning methods tested (7.3 to 8.1 mmol/l; P > 0.05). These results show that serum glucose may be used as a stress indicator in birds, with the advantage of being a quick and cheap biochemical test. Gas stunning favored birds′ management during slaughter and so reduced workers′ effort and injury hazard and the amount of feces and dust in the room. To make this method available for a large scale process, adjustments in equipments will be necessary to avoid delays in the processing line.

Several nutritional interventions are performed in order to reduce the impact of EO induced by exercise. Some studies suggest that mate tea (CM) have compounds, which can act as antioxidants reducing EO. The aim of this study was to evaluate the effect of CM induced under the EO after a single bout of aerobic exercise. Methods: We used male Wistar rats (50 days and 200g) distributed in four experimental groups: control (CON); mate tea (CM), Swimming (N); Swimming+mate tea (N + CM) . The CM and N+CM groups received CM diluted in distilled water at 96 ° C for five days, oropharyngeal route (50 mg / kg body weight, 0.5 mL). Both groups were adapted to the aquatic environment prior to experimental day, after a single swimming session, with 5% of body weight attached to the tail, until the animals reached exhaustion. Immediately after the state of exhaustion, peripheral blood was collected for further analysis. Results: The animals of the group N + CM showed improved resistance swimming compared to group C (p < 0.0001). No increase in lipid oxidative damage and production of lactate in group N + CM , compared to group N , may be attributed to the significant increase in plasma uric acid concentrations demonstrated in this study was observed . Conclusion: Therefore, the results indicate that consumption of CM may be natural strategy for improving aerobic exercise endurance and reduce the impact of EO induced by aerobic exercise.

The physical (pH) and microbiological (psychotrofi c microorganisms and lactic bacteria) characteristics of beef outside round (m. Biceps femoris) injected (15%) with brines free of polyphosphates containing and sodium lactate or sodium lactate and sodium diacetate and liquid bovine plasma (PLL and PLO) or dehydrated bovine plasma (PDL, PDO) were evaluated along with beef cuts injected with brines free from plasma, but containing polyphosphates and bacteriostatic agents (CL and CO) and non injected beef cuts (IN), comprising seven treatments of cooked and vacuum packaged beef steaks stored under refrigeration (6ºC) during 43 days. No differences in pH were detected among raw or cooked injected treatments, although IN showed lower pH value in raw beef cuts. The addition of liquid or dehydrated bovine plasma did not affect the microbial load after whole muscles pasteurization, but increased the bacterial counts in cooked beef steaks during refrigerated storage, comparing to treatments with no plasma addition (CL and CO). The storage temperature (6ºC), usually found during commercialization of meat increased the microorganisms growth rate affecting the microbiological quality, especially when plasma was added to the brine.
