The meat quality is evaluated by consumers according to their physical characteristics, such as color, texture, juiciness, tenderness and odor. The stress during the life of the animal and at the moment before the slaughter may be responsible for changes in the transformation of muscle into meat. Such changes may lead to the appearance of DFD (Dark, Firm and Dry) and PSE (Pale, Soft and Exudative) meats, which are poorly accepted in the market – because of their unusual aspect – and inadequate to industrial processing. Factors related to the handling, loading, transport, unloading, resting period and stunning are singled out as critical, since that, in these phases the animals are subjected to adverse situations to which they are accustomed. The aim of this study is to identify the process of ante-mortem and the slaughter itself in which the animals are subjected to stressful situations, as well as the consequences of stress on meat quality

Este trabalho objetivou analisar a qualidade da água de três córregos tributários do rio Bauru, levando em conta a poluição causada por produtos orgânicos e industriais que vinham sendo descartados nos mesmos e as eventuais melhorias conseqüentes das medidas paliativas assumidas pelo DAE-Bauru, mediante a instalação de interceptores-coletores de águas residuárias ao longo Daqueles corpos de água, até que a Estação de Tratamento de Esgotos do município seja construída e se dê início ao seu funcionamento. O monitoramento destes corpos de água durante o período de estiagem e de cheias proposto nesta pesquisa, incluiu investigações sobre as variáveis químicas e físicas de amostras das águas, obtidas mensalmente em 7 pontos de coleta, localizados a montante e a jusante dos pontos de instalação dos emissários, ao longo dos córregos. As amostras de água foram posteriormente analisadas para fossem obtidas informações sobre a eficácia da instalação dos interceptores com relação ao processo de recuperação da saúde dos corpos aquáticos em questão. Os resultados obtidos mostraram que, de um modo geral, as águas de todos os sistemas estudados ainda sofrem impactos, até porque ainda há aquelas que recebem o esgoto descartado “in natura”. No entanto, como ja era esperado, nos pontos de coleta localizados em segmentos dos córregos nos quais os emissários já foram instalados, o impacto ambiental é menor. Mediante a comparação dos resultados obtidos das análises das características físicas e químicas das águas dos sistemas estudados realizadas durante esta investigação com aqueles obtidos nos mesmos corpos de água, em 2007, pudemos observar melhorias da água em alguns dos pontos de coleta

O grau de desenvolvimento econômico e social de uma sociedade pode ser avaliado diretamente à facilidade de transporte de passageiros e cargas. A qualidade de vida nas cidades é fortemente influenciada pelas características do transporte público. O Brasil tem 80 % de sua população morando em cidades, de forma que uma maior utilização do transporte público seria a solução para problemas de congestionamento, poluição, acidentes, desumanização e outros males que atingem as cidades modernas. Bauru, interior de São Paulo, é uma cidade de porte médio que apresenta um dos maiores índices de utilização de automóveis particulares, em parte pela formação da cidade, que é “espalhada”, e outra por suas características econômicas. A população de baixa renda, moradores da periferia e dependentes do transporte público, enfrenta grandes dificuldades para acessar as diferentes áreas da cidade (má operacionalização do sistema?). Este trabalho de finalização da graduação tem como objetivo maior trazer opções e facilitar o acesso da população a todas as áreas da cidade, através de um sistema de terminais e mini-terminais urbanos de transporte coletivo, buscando a melhor utilização do espaço público, uma maior mobilidade na cidade e a melhoria da qualidade de vida da população

This study examines some characteristics of the contemporary reality and its influence on the dynamics of the organizational activities, in particular, related to the quality management. Discusses capitalist logic of maximization of profits that has been sophisticated in face of new scenarios that arise with society evolution. It also proposes a reflection on the philosophies and formats of management that fits with the desire to meet the needs of society through the expansion of quality - now a reference for the production processes and management systems. The work highlights the relations between communication and quality, pointing them as fundamental to the use of fissures on the evolution of the capitalist system in developing programs, philosophies and management systems. A doença de Charcot-Marie-Tooth (CMT) é a mais freqüente das neuropatias hereditárias, mas a sua história natural é pouco conhecida. Apesar da maioria dos pacientes apresentarem uma evolução com características mais “benignas”, é associado à doença com um comprometimento funcional, o que pode ser acompanhado de limitações e incapacitações. O presente estudo teve como objetivo avaliar a qualidade de vida de pacientes afetados pela CMT1A. Considerando que a qualidade de vida pode sofrer influência de variáveis sócio-culturais, um estudo neste contexto mostra-se oportuno. Nenhum estudo de nosso conhecimento realizou tal avaliação no contexto brasileiro. Fizeram parte deste estudo pacientes com CMT decorrente da duplicação 17p11.2-p12 (CMT1A) que foram avaliados quanto ao comprometimento funcional por meio da aplicação do SF-36. Esse questionário é utilizado internacionalmente para aferir a qualidade de vida dos indivíduos. Os resultados obtidos foram submetidos à análise estatística. Como resultados não se observaram associações entre o gênero e os domínios avaliados para a qualidade de vida. Os dados obtidos revelaram que a qualidade de vida dos pacientes com CMT1A se mostrou comprometida principalmente quanto aos seus Aspectos Sociais (p = 0,02) e Aspectos emocionais (p = 0,04). Adicionalmente, houve uma tendência ao comprometimento da Capacidade Funcional (p = 0,08), sendo que os outros índices de avaliação de comprometimento físico se mostraram preservados. A presença ou ausência de ocupação parece influenciar os Aspectos Sociais apresentando uma tendência de diferença significativa (p = 0,07), possuindo o grupo com ocupação valores superiores. Apesar da CMT1A apresentar piora clínica ao longo dos anos, a idade mais avançada não implicou em uma pior percepção da qualidade de vida no grupo de pacientes estudados no presente trabalho... Studies regarding the quality and quantity of water have become more and more important because of the increasing negative environmental impacts occurred and their scarcity increase as well. At the Center of Tropical Fish Research (Centro de Pesquisas de Peixes Tropicais - CEPTAlIBAMA) located in the city of Pirassununga, SP, there is a dam named Represa Velha which supplies 128 tanks that are fish hatcheries. This dam takes in part of the Barrinha stream micro-basin where it has been observed strong impacts due to the deforestation of its support forest, as well an the intensive agricultural activities in the neighboring areas. There has been established and distributed 13 points of water-collectors disposed inside the stream and the dam. The water samples were taken from the stream only from its surface because of the low depth and, inside. In the dam, the water samples were taken at the water column, at a 50cm distance over the sediment. In every point of collection inside the dam, it was placed a chamber of sedimentation, vertically in the water column at a 70% height from the total depth. The collections took place during the dry/cold and raining/warm periods of the years 2000 and 2001. Then, it were analyzed the physical, physical-chemical, chemical and micro-biological parameters of the water samples. The obtained results were statistically analyzed throughout the SAS system (Statistical Analisys System). Parameters such as total phosphate, nitrate, nitrite and turbidity were within the established limits for the Class 2 water, according to the n° 20/1986 CONAMA Resolução. However, the total and Escherichia coli coliforms, mainly inside the Barrinha stream, had showed values above of the established limits for the same... The Prato cheese is the second most consumed cheese in Brazil. It is produced by milk enzymatic coagulation, and maturated for at least 25 days; it is classified as fatty cheese and of medium moisture. Due to the concern to health, the cheeses consumers have been seeking for products with low fat contents; however fat is essential for providing desirable sensory and physiologic characteristics, such as flavor, softness and texture to cheeses. Alterations on the technological processing of low fat cheeses have been made seeking for improved products, and the use of proteolytic enzymes has been a significant strategy. The meltability, color and sensory characteristics are fundamental quality indicators of the final products. This study reports the findings from the analyses on the physical and sensory characteristics of low fat Prato cheese with addition of proteolytic enzyme – fastuosain, that is extracted from unripe gravata fruit. The addition of fastuosain improved the quality of the product, as this additive neither affected the meltability, nor produced bitterness, which is a common unpleasant taste in low fat cheeses.

Frying is a widely used method of preparing food, because it is a very fast and convenient process, and because it provides specific characteristics of color, flavor, odor, and texture, besides having great consumer acceptance. Therefore, the interest in the physiological effects that oils heated at high temperatures can cause to the human body arises. The aim of this work was to analyze the levels of frying used oil alteration in different kinds of foods served at the university restaurant at “Instituto de Biociências, Letras e Ciências Exatas” (IBILCE), in São José do Rio Preto-SP. In addition, it aims to make the restaurant aware of the good ways to fry and the commitment of providing good quality food to students and professionals of the Institute. With this purpose, determination of total polar compounds, conjugated dienoic acids, peroxide value, and fatty acid profile were analyzed. Two rapid tests were also used: 3M Fat Monitor and Oil Test kit. The results were compared with limits recommended for the disposal of oils and fats used in frying by the Brazilian Health Surveillance Agency (ANVISA), by other countries, and by other researches. Thus, it was concluded that the university restaurant provides the consumers with fried food of good quality, since none of the analyses showed results above recommended, although there is a need of improvement in the quality control of the oil used, in order to avoid unnecessary costs to the university restaurant.

Epilepsy is a chronic disorder that impairs life quality (LQ) and interferes in emotional, personal, social and family relationship aspects. This study evaluated 165 people with epilepsy diagnosis, ranging from 18 to 75 years old (M=41,28; SD= 13,26), by means of the QQV-65 (Life Quality Questionnaire with 65 questions) and investigated the association between the questionnaire scores and the disease features, comparing patients who showed refrectory seizures with patients with partially controled seizures. There was no difference in relation to the two groups regarding the LQ factor. The QQV-65 emotional factor was the most affected in both groups, since the estimated mean z-escore was 51,0±14,4 for Group I and 49,9±14,7 for Group II. Regarding the type of crisis, the analysis of variance (ANOVA) revealed that Health was the only factor in QQV-65 that showed a statistically significant difference between the z-scores (P = 0.024). However, for the frequency of epileptic seizures, except Health (P = 0.185), other factors QQV-65 proved to be related in a statistically significant way (P> 0.05). The research demonstrated that seizure control perception is quite important in the evaluation of life quality in all its aspects (health, body, society, emotion, locus of control, self-concept and cognition).

This paper considers a study of the anatomical features of the cardiac system and a three-dimensional model of the different tunics that comprise the heart wall, for processing and quality control of radiological images. The structures are built by the layer overlapping method, where a layer can be understood as a slice of the three-dimensional object. The pericardium, myocardium and endocardium were represented with three-dimensional cylinders and hexagons. The spatial arrangement of the cardiac system is determined by an background image of a real model, which values are defined according to the shape of the region and on the anatomical patients characteristics. The results are significant, considering the anatomical structures details, as well as the representation of the thicknesses of the regions of the heart wall. The validation of the anatomical model was accomplished through comparisons with dimensions obtained from a real model and allows verifying that the model is appropriate. The degree of representation will allow the verification of the influence of radiological parameters, morphometric peculiarities and stage of the diseases on the quality of the images, as well as on the performance of the Computer-Aided Diagnosis (CAD).
