This paper aimed to study the treatability of rainwater using natural coagulant tannin based. Assays were performed in laboratory scale and aimed to study the conditions most suitable for dosage and for pH of coagulation. Preliminary tests indicated that tannin concentration of 3% (m/m) prepared from the commercial solution presented the best set of results (84.3% of removal for apparent color and 82.51% for turbidity) compared to ferric chloride (66.25% of removal for apparent color and 67.82% for turbidity) and starch (73.68% of removal for apparent color and 67.19% for turbidity). The coagulation diagrams indicate that the best region for dosage ranges from 15 mg/L to about 37.5 mg/L and for pH ranging from about 6.5 to 7.5. The results indicate that the tannin based natural coagulant may be an alternative to conventional coagulants for rainwater treatment seeking non potable uses.

Due to its nutritional characteristics sorghum has been indicated as substitute cereal to corn and wheat. Besides, in Brazil sorghum is not used for human feeding unlike corn, witch reduces its costs in almost 20% in comparison to corn costs. This research was conducted at UNESP, in Botucatu and Jaboticabal Campus, São Paulo, Brazil, with the purpose to evaluate the grinding effect on two sorghum genotypes grain (with and without tannin) preserved dry or ensiled humid above the degradability in situ of the dry matter, crude protein and starch. Three rumen fistulated sheep were used, distributed in an experimental block design, at 2 x 2 x 3 factorial outline, with two sorghum genotypes (with and without tannin), two forms of conservation (dry grain and high moisture grains silage) and three grinding ways (undivided, thick grinding and fine grinding) and the time as sub-portion. According to the results the grinding is recommended to sorghum grains because it increases the ruminal and effective degradability of the dry matter, crude protein and starch. The presence of tannin in sorghum grain changed the degrability potential of crude protein and starch. The thick grinding in dry grain without tannin was the better treatment.

There were used four castrated male horses, crossbred. It was used randomized block by design for four replications. The objective was to evaluate the effect of using samples, ground or in natura, in the precision of the mobile nylon bag technique (MNBT) in comparison to the total collection (CT) method in oder to estimate the apparent digestibility coefficient (DC) of nutrients of high-moisture grains silage of sorghum with low (SSLT) and high (SSHT) tannin in the feeding equine. No effect was observed for MNBT and CT methods with in natura sample for DC of DM, OM, CE, CP to SSLT (P>0.05), whose average values were 81.71, 84.23, 82.27 e 81.43%, respectively. The MNBT did not showacuracy to evaluate of DC of the SSHT, with ground and in natura samples. It was concluded that MNBT containing in natura sample should be used to determinating the DC of SSLT to DM, OM, CE and CP for equines.

This work aimed to analyze the chemical composition and paste properties of cassava flours, from several producers and classifications, marked in different Brazilian cities. Flours were characterized to moisture, ash, fibers, protein, lipids, total sugars and starch. The paste properties were analyzed in RVA. The results showed significant differences to chemical components in cassava flours. The moisture ranged from 4.39 to 10.26, starch (82.19 to 88.90%), ash (0.48 to 1.07%), fiber (3.23 to 6.41%), protein (1.15 to 2.13%), total sugar (0.05 to 0.56%) and lipids (0.40 to 1.24). These differences can be due the variations of raw material and process. The paste properties of flours were different, with viscosity peak ranged from 73.33 to 387.08 RVU, breakdown (2.42 to 248.83RVU, final viscosity (154.92 to 275.5 RVU) and retrogradation tendency (50.75 to 132.5 RVU), showing the influence of kind of processing on flour viscosity.

Vinegar is a food product that has a great market potential and beneficial health properties. Each type of vinegar has its taste, since the transformation of alcoholic into acetic acid preserves the raw materials fragrancesand other organic acids can be formed. This study produced and characterized vinegars from ginger and cassava starch. The raw materials were first hydrolyzed by an enzymatic process, thenthey suffered an alcoholic fermentation, and finally an acetic fermentation by the Orleans process. The ash quantity, total acidity in acetic acid, dry extract, and alcohol content of the final product were analyzed based on the current vinegars legislation. The results showed that it is possible to obtain vinegars with good quality from ginger and cassava starch.

The starch market has been growing and improving in recent years, leading to a search for products with specific characteristics that meet the industrial requirements. This work aimed to evaluate the centesimal composition of potato tubers cv Pirassu and its industrial potential. The potato cv Pirassu was cultivated in Pouso Alegre, mountainous region south of Minas Gerais state, with planting season in August and harvest season in November, 2011. The tubers were analyzed for color, pulp and centesimal composition. The starch extract was analyzed for centesimal composition, phosphorus content, apparent amylose, pasting properties and thermal properties. The results showed that the content of dry matter, total soluble sugar and starch of tubers, are compatible for processing for potato chips. The starch of this cultivate showed important viscosity characteristics for food industry such as: heat resistance and friction, good final viscosity and low granular organization.

The application of extrusion technology in the food industry has enabled the development of new commercial products of fast preparation, and maintaining the nutritional characteristics after the process. During this process there are changes in raw material due to the action of temperature, humidity and mechanical friction resulting in a modified product which can be used in various industrial applications. This work aimed to evaluate the effect of the composition of the raw material and operating conditions of the extrusion process on the properties of paste and thermal properties in the development of a functional instant flour of cassava and soybean. The results showed significant effects of all operating parameters on the rheological properties studied. The extruded flours showed no residual gelatinization enthalpy, suggesting that the starch in the samples was gelatinized. The experimental conditions of the smallest percentages of cassava residue (10%) and high soybean flour (25%) mixed with cassava starch, extrusion temperature of 75ºC and low screw speed (170rpm) leads to obtain instant flour with desirable characteristics.

This study aimed to characterize the physical and chemical composition of ten items of arracacha grown in the municipality of São Manuel for the 2009 harvest. In the roots of the clones BGH (4560, 5741, 5744, 5746, 5747, 6414, 6513, 6525 and 7609) and the cultivar Amarela de Senador Amaral the characteristics evaluated were: color (L *, a * and b *) and moisture, ash, crude fiber, raw grease, protein, reducing sugars, total sugars and starch. After obtaining the data, an analysis was performed for the variance of test F and comparisons between the means made by the Tukey test at 5% probability. There was no significant difference to the results of luminosity (L *) while BGH 6414 and BGH 5744 showed the highest values for chroma and * BGH 5741, BGH 6414, BGH 7609, 'Amarela de Senador Amaral' BGH 5747 presented the highest chroma values for b *. Clones BGH 7609 and BGH 6414 showed significantly higher levels of dry matter and with the potential yield of agro-industrial processes it would be best suited in the form of frying. The materials that showed significantly larger amounts of ash were BGH 6525, BGH 5747, 'Amarela de Senador Amaral ", BGH 4560, BGH 5746, BGH 6513. Regarding the contents of fatty matter BGH 6525, BGH 5741 and BGH 5744 showed the highest levels. The results of BGH 7609 showed crude fiber significantly higher than the other materials tested, it can be used in diets composed of fibers. BGH 4560 and cultivar had the highest crude protein. BGH 5741 showed the lowest reducing sugar content among the clones, but not significantly different from results found for the cultivar. All clones showed total sugar levels were higher in the cultivar, which may have more flavor. BGH 5741, BGH 5746, BGH 6525 and BGH 6513 showed significantly higher starch content than the cultivar Amarela de Senador Amaral. From these results we conclude that the clones have similar color characteristics, and are potentially a nutritionally adequate substitute for the cultivar.
