The objective of this trial was to evaluate the effect of ascorbic acid (AA) and calcium chloride (CaCl2) applied by immersion at temperatures of 20 and 40 degrees C on the physicochemical and sensory characteristics of minimally processed cabbage, stored under refrigeration. Cabbages were processed in an industrial food processing equipment to be cut in slices with thickness of 3 mm. Slices were immersed in sodium hypochlorite (50 ppm) during 5 minutes for sanitization. After, the following treatments were carried out T1= control (immersion in water during 5 minutes at 20 degrees C); T2= immersion in 1% AA solution, during 5 minutes at 20 degrees C; T3= immersion in 2% AA solution, during 5 minutes at 20 degrees C; T4= immersion in 1% CaCl2 solution during 5 minutes at 20 degrees C; T5= immersion in 2% CaCl2 solution during 5 minutes at 20 degrees C, T6= immersion in 1% CaCl2 solution during 5 minutes at 40 degrees C; and T7= immersion in 2% CaCl2 solution during 5 minutes at 40 degrees C; with four replications each one. After application of treatments, cabbage was centrifuged during one minute, wrapped with polyvinyl chloride, 20 mu m, in trays of expanded polystyrene and maintained in refrigerated environment, at 6 +/- 1 degrees C and 85-90% of relative humidity, during eight days. Little increasing was observed in pH and titratable acidity values and reduction in soluble solids during conservation period on all treatments. Treatment with AA did not differ from control for color and general appearance, while treatment with 2% CaCl2 at 20 degrees C maintained the best quality, with less intensity of browning, best general appearance and purchase intent and least strange odor at the end of evaluation period.

Forty-five Brazilian populations of freshwater Audouinella were analysed using multivariate morphometrics. These populations were statistically related to seven type specimens. Five species are recognised on the basis of qualitative (plant colour and size, basal system type and branch angle) and quantitative (length and diameter of vegetative cells and monosporangia) characters. A. hermannii (syn. A. violacea) is characterised by a reddish colour, an irregular prostrate basal system, open branch angles (greater than or equal to 25 degrees) and small monosporangia (less than or equal to 15 mu m in diameter). A. macrospora (syn. A. chalybea var. brasiliensis) is distinguished from the other Brazilian species by having a bluish colour, a basal system composed of well-developed rhizoids, narrow branch angles (< 25 degrees) and large monosporangia (greater than or equal to 15 mu m in diameter). A. meiospora is microscopic and has a reddish colour, a basal system composed of creeping filaments, narrow branch angles and small monosporangia. A. pysmaea (syn. A. leibleinii) is characterised by being bluish, having an irregular prostrate basal system, narrow branch angles and small monosporangia. A, tenella is distinct from the other species by having a reddish colour, an irregular prostrate basal system, open branch angles, small monosporangia and small vegetative cells (less than or equal to 6 mu m in diameter). An identification key and revised descriptions and synonyms are presented for the five species. A. meiospora and A. tenella are reported for the first time for Brazil. A. macrospora and A. pygmaea were the most widespread species and occurred in tropical and subtropical regions. A. meiospora was found at two sites in a tropical rainforest region, whereas A. hermannii and A. tenella were found at only one site. Selected physical and chemical environmental data (temperature, specific conductance, current velocity, turbidity, pH and dissolved oxygen) are presented for most species.

This work evaluated the physicochemical and structural properties of rice starch of the cultivars IAC 202 and IRGA 417 modified by irradiation. Starch samples were irradiated by (60)Co in doses 1, 2 and 5kGy, on a rate of 0.4kGy/h. A control not irradiated was used for comparison. The granule morphology and A-type X-ray diffraction pattern were not altered by irradiation. There was an increase in amylose content, carboxyl content and acidity with irradiation. Gamma radiation did not affect the thermal properties of IAC202, but increased gelatinization temperature of IRGA417, in the higher dose (5kGy). The number of long chains of amylopectin was reduced and short chains were increased for IAC202, whereas for IRGA 417, the opposite was observed, probably due to cross-linking of starch chains. Starches had their physicochemical and structural properties modified by irradiation differently.

The physical (pH) and microbiological (psychotrofi c microorganisms and lactic bacteria) characteristics of beef outside round (m. Biceps femoris) injected (15%) with brines free of polyphosphates containing and sodium lactate or sodium lactate and sodium diacetate and liquid bovine plasma (PLL and PLO) or dehydrated bovine plasma (PDL, PDO) were evaluated along with beef cuts injected with brines free from plasma, but containing polyphosphates and bacteriostatic agents (CL and CO) and non injected beef cuts (IN), comprising seven treatments of cooked and vacuum packaged beef steaks stored under refrigeration (6ºC) during 43 days. No differences in pH were detected among raw or cooked injected treatments, although IN showed lower pH value in raw beef cuts. The addition of liquid or dehydrated bovine plasma did not affect the microbial load after whole muscles pasteurization, but increased the bacterial counts in cooked beef steaks during refrigerated storage, comparing to treatments with no plasma addition (CL and CO). The storage temperature (6ºC), usually found during commercialization of meat increased the microorganisms growth rate affecting the microbiological quality, especially when plasma was added to the brine.

Forty eight piglets from a commercial strain weaned at an average age of 21 days were used in order to evaluate effects of carbohydrates sources (lactose or maltodextrin) and the weights of piglets at weaning on the stomach pH, colon and rectum contents, and the amount of total coliform, Escherichia coli and Lactobacillus spp in digesta of ileum and cecum. The experiment was conducted in a randomized block design and analyzed in split plot, considering class of weight and carbohydrates as main plots and the slaughter age of animal as sub-plots. The stomach pH and intestinal contents were not influenced by the diets provided as well as the amount of total coliform. It was found that the presence of lactose in the feed decreased counts of Escherichia coli and Lactobacillus ssp in the ileum. Regarding the class of weight, the lighter piglets had lower counts of Escherichia coli and Lactobacillus. The maltodextrin can be used as an alternative to replace the lactose in the diet, regardless of the piglets weight at weaning, as it does not adversely affect the pH and the Lactobacillus population in the gastrointestinal tract.

Apple is a fruit that offers promising prospect for industrialization as it has favorable characteristics for this purpose and can obtain products with good acceptance. In Brazil, approximately 15% of the production is processed into juice, and a portion is exported. Among the fresh fruit and juice, apple adds US$ 30 million annually to the Brazilian foreign exchange earnings. The aim of this study was to characterize, using chemical analysis, concentrated juices, commercial apple juice, nectar, and soft drink. In addition, to compare them with their respective Quality and Identity Standards (PIQ) published by the Ministry of Agriculture, Livestock and Food Supply (MAPA) and Codex Alimentarius. Concentrated juices and commercial beverages were analyzed in triplicate for soluble solids content (Brix), pH, total acidity (AT), and ratio. In concentrated juices, the Total Sugar Reducer (ART) was also assessed. The results obtained in the laboratory were compared with the PIQ and Codex Alimentarius to verify compliance with applicable regulations. Seven concentrate juices, five juices, six nectars, and three apple-flavoured soft drinks were analyzed. The Brix of pulpy and clarified concentrated juices were, respectively, 71.16±1.29 and 40.40±0.57°Brix. In all concentrated juices, the Brix was in accordance with Codex Alimentarius. The Brix and AT in sweetened clarified juices were 11.50±0.14°Brix and 0.18±0.04g of malic acid/100g sample. In pulpy whole juices the values ​​were 11.20±0.70°Brix and 0.30±0.06g of malic acid/100g sample. The values of Brix and AT in apple-flavoured soft drinks were 11.03±0.93°Brix and 0.18±0.04g of malic acid/100ml sample. Commercial juices and soft drinks also presented °Brix and AT in accord with the PIQ established by MAPA. The apple nectars could not be compared with the standards because they are not published by MAPA or Codex Alimentarius. The definition of the PIQ is an important tool for quality control of beverages manufacture in Brazil. Therefore, it is recommended for the control agencies to define the parameters that are not established.
