Interest in oligosaccharide production and its general characteristics is growing. The physiological effects resulting from its ingestion make them more attractive than its sweetness, and the versatility of these carbohydrates allows their use for human and animal nutrition, pharmacology and the cosmetics industry, among others. Several microorganisms are involved in enzyme production to create oligomers with biological activity, including fructooligosaccharides, galactooligosaccharides and aminoglucanoligosaccharides. Some oligomers are currently on the market, but the search for new microorganisms producing enzymes, high-yield processes for obtaining oligosaccharides, different physiological effects, and a correlation between chemical structure and function continues.

Frying is a widely used method of preparing food, because it is a very fast and convenient process, and because it provides specific characteristics of color, flavor, odor, and texture, besides having great consumer acceptance. Therefore, the interest in the physiological effects that oils heated at high temperatures can cause to the human body arises. The aim of this work was to analyze the levels of frying used oil alteration in different kinds of foods served at the university restaurant at “Instituto de Biociências, Letras e Ciências Exatas” (IBILCE), in São José do Rio Preto-SP. In addition, it aims to make the restaurant aware of the good ways to fry and the commitment of providing good quality food to students and professionals of the Institute. With this purpose, determination of total polar compounds, conjugated dienoic acids, peroxide value, and fatty acid profile were analyzed. Two rapid tests were also used: 3M Fat Monitor and Oil Test kit. The results were compared with limits recommended for the disposal of oils and fats used in frying by the Brazilian Health Surveillance Agency (ANVISA), by other countries, and by other researches. Thus, it was concluded that the university restaurant provides the consumers with fried food of good quality, since none of the analyses showed results above recommended, although there is a need of improvement in the quality control of the oil used, in order to avoid unnecessary costs to the university restaurant.

This work had the purpose to study the physiological effects of pyraclostrobin, boscalid, plant growth regulators and plant extract on the accumulation of carbohydrates during the development of tomato plants (Solanum lycopersicum L.), hybrid Giuliana, in protected environment conditions. The treatments were: T1- control; T2- pyraclostrobin 0.2 g L-1; T3- boscalid 0.075 g L-1, T4- pyraclostrobin 0.2 g L-1 + boscalid 0.075 g L-1, T5- IBA + GA(3) + kinetin 375 mg L-1, T6- GA(4+7) + benzylaminopurine 100 mg L-1 and T7- plant extract 100 mg L-1. The carbohydrate accumulation curve was accomplished with 5 samples, at 20-day intervals between evaluations, the 1st evaluation being carried out at 30 days after transplantation, on the day of the first treatment application. At each sampling the plants were separated in stem, leaves and fruits, of which the contents of total soluble sugars, reducing sugars and saccharose were evaluated. The effects of the treatments on chlorophyll content and gas exchanges were also evaluated. The experimental design was completely randomized, with 4 repetitions and 6 destructive evaluations during the development, with 1 plant per experimental unit for each sampling. The pyraclostrobin and boscalid applied in isolation and/or combined favor the increase of carbohydrates in leaves, stems and fruits of tomato hybrid Giuliana.
