Novos hábitos alimentares da população e as mudanças nos sistemas de produção e distribuição dos alimentos podem estar fortemente relacionados aos casos de doenças transmitidas pelo consumo de alimentos contaminados por microorganismos. Isso faz com que a preocupação com a qualidade microbiológica dos alimentos aumente mundialmente. Dentre os principais patógenos, destaca-se a Salmonella sp, que pertence à microbiota gatrentestinal de animais silvestres e de animais domésticos criados para o consumo humano (aves, bovinos e suínos). Este fato torna o problema de grande relevância para as autoridades de saúde pública, pois esses microrganismos podem estar associados às infecções ou surtos provocados pela ingestão de alimentos contaminados. Foram coletadas 35 amostras de lingüiças e 25 cortes de frango, nos principais supermercados do município de Botucatu-SP e avaliados quanto à qualidade higiênico-sanitária através da determinação do número mais provável de coliformes termotolerantes (CT), além da presença de Salmonella sp. Os resultados obtidos mostram que 31% das lingüiças e 84% das amostras de frango estavam fora dos padrões higiênico-sanitários estabelecido pela ANVISA (RDC n° 12), que determina uma quantidade máxima de 5x103 CT/g em lingüiça e 104 /g em carne de aves. Em relação à Salmonella sp, estabeleceu-se a ausência dessa bactéria em 25g de lingüiça e não determina nenhum parâmetro para o frango. Food contamination caused by enteric pathogens is a major cause of diarrheal disease worldwide, resulting in high morbidity and mortality and significant economic losses. Bacteria are important agents of foodborne diseases, particularly diarrheagenic Escherichia coli. The present study assessed the genetic diversity and antimicrobial resistance of E. coli isolates from pasteurized milk processed in 21 dairies in northwestern State of Parana, Brazil. The 95 E. coli isolates were subjected to antimicrobial susceptibility testing according to the recommendations of the Clinical and Laboratory Standards Institute and assessed genotypically by Enterobacterial Repetitive Intergenic Consensus-Polymerase Chain Reaction (ERIC-PCR). The highest rate of resistance was observed for cephalothin (55.78%). ERIC-PCR revealed high genetic diversity, clustering the 95 bacterial isolates into 90 different genotypic patterns. These results showed a heterogeneous population of E. coli in milk samples produced in the northwestern region of Parana and the need for good manufacturing practices throughout the processing of pasteurized milk to reduce the risk of foodborne illnesses.

Results of educative actions on the control of vectors for dengue and leishmaniasis were evaluated by using an online semi-present course directed to teachers from Fundamental I Education level in Araçatuba-SP. 40 teachers from municipal schools located on geographical areas of town with higher occurrence of dengue and leishmaniasis cases, attended to the course, which consisted in a conceptual part directed to specific subjects such as vector borne and zoonotic diseases, responsible ownership of pets and health education and a practical phase, directed to execution and application of educative projects in the target schools. Data about the teacher’s specific knowledge, before and after the attendance to the course, were submitted to the Wilcoxon test with a 5% of significant level. The application of practical educative projects was evaluated by multiplicative actions involving target public. Tests showed statistically significant increase in the knowledge about the studied diseases (p<0.0001) after the course, especially on questions related to etiological agent, clinical symptoms on man and animals and prevention. Activities of knowledge multiplication envolved teachers and students which detected the problems and promoted education actions in their neighborhood as stage performing, group cleaning activities and elaboration and distribution of folders during a student pared. In conclusion, educative actions direct to the control of diseases vectors using a semi-present course, provides new knowledge to the teachers, impelling them to motivate their students to adopt vectors control measures and environmental cares and to sensitive the community to collaborate with control diseases.

Milk is considered a nutritionally complete food but it is also an excellent substrate for microbial growth. Therefore, it may pose a risk to consumers’ health. The aim of this study was to collect data on the occurrence of gastroenteritis outbreaks caused by the intake of milk and dairy products in the state of São Paulo, from 2000 to 2010. The data were collected from the records on foodborne illness outbreaks kept by the Division of Waterborne and Foodborne Diseases of the Center for Epidemiological Surveillance of the Department of Health of the State of São Paulo. A total of 239 outbreaks were notifi ed. They involved 2.418 cases related to the consumption of dairy products during the study period. The etiological agents were identifi ed in 79 outbreaks (33.0%). They were mostly bacteria (84.8%), especially Staphylococcus aureus. Most outbreaks occurred at home (59.4%) and during the months of January (14.2%) and July (12.5%). Most (24.1%) of the affected individuals aged 20 to 49 years. The results shows the need of better manufacturing and handling practices, as well as increasing the awareness of the population and relevant agencies about the importance of notifying cases and implementing preventive measures to ensure food safety.

Visceral leishmaniasis (VL) is among the most important vector-borne diseases that occur in Brazil, mainly due to its zoonotic nature. It is currently present in almost all Brazilian territory, and its control is a challenge both for veterinarians and for public health officials. The etiologic agent is Leishmania infantum (syn chagasi), and the main vector in Brazil is Lutzomyia longipalpis. Of all animals identified as reservoirs of VL, the dog is considered the most important domestic reservoir. Although the disease has already been identified in cats, the epidemiological role of this animal species is still unclear. This article presents a brief review of the epidemiological situation of the disease, its mode of transmission, clinical features in dogs and cats as well as possible risk factors associated with the occurrence of the disease in Brazil.

Tuberculosis and brucellosis are important diseases in national scenario, as they affect national cattle and can be transmitted to human, as they are zoonosis. The transmission risk increases mostly for those who have strict contact with animals, as is this case of slaughterhouse workers. This paper presents a bibliographic review of data referent to both diseases occurring in bovine slaughterhouse workers in Brazil, characterizing as occupational zoonosis diseases. We still have few data available of this subject, what raise difficulties to know the real incidence of both diseases in national cattle and in people who work in contact with animals, and most of the time are not instructed to the risk that they are exposed and how to prevent it. It’s important to know which is the situation of both diseases so that prevention and even eradication measures can be taken, as we know the Veterinary has an essential function in this matter, protecting animal health as much as protecting national public health

Among the major food-borne parasitic zoonoses, the helminthiasis transmitted by consumption of fish have been highlighted because they involve a large number of individuals in many regions of the world in recent years. In the past, these parasitosis were restricted to underdeveloped nations or with peculiar eating habits; however the process of globalization of food production, the increased international travel and consumption of fish for their nutritional benefits caused the expansion into new areas, which had never before been recorded, making it a serious public health problem in some countries. This review discuss the main helminths transmitted by eating raw or undercooked fish, in order to alert the public, the scientific community and health authorities about their risks to human health, as well as stimulate the realization of new researches that contributes to a greater knowledge of the epidemiological situation in the country of these parasites and the development of strategies for prevention and control of them.
