The high perishability of the onion has limited its conservation period and caused great post-harvest losses. The need of consuming fresh products has led the market of minimally processed products to considerably rise. Cut operations during the minimal processing may not only cause important biochemical reactions in the onion tissues, but also affect its sensorial quality, resulting in a drastic reduction in the post-harvest life of the product. In this study the influence of different cut types was assessed on the quality of minimally processed onions. 'Baia Periforme'onions were transported to the laboratory, where they were selected, cleaned, classified, peeled, minimally processed into slices, grated and chopped, and subsequently sanitized for 10 minutes in sodium hypochlorite at 100 mg L-1. The product was kept on polystyrene trays covered with plastic film (PVC) as 80 g portions and conserved in a cold chamber at 5 +/- 1 degrees C and 85 +/- 5% RH, during 6 days. Physical, chemical and physico-chemical assays were carried out. Statistical design was completely randomized with 3 treatments and 3 replications (plot group) and 5 replicationss for the control group. For sensorial analysis (aspect and smell), 10 replications were used. To compare means, Tukey test at 5% significance was adopted. During the refrigerated conservation, sliced onions kept more stable levels of soluble solids, titratable acidity, total sugars, reducing and non-reducing sugars. The grated onion was superior considering the sensorial characteristics, indicating that the cut types interfered in these features and the grated onion was more accepted by evaluators.

Food contamination caused by enteric pathogens is a major cause of diarrheal disease worldwide, resulting in high morbidity and mortality and significant economic losses. Bacteria are important agents of foodborne diseases, particularly diarrheagenic Escherichia coli. The present study assessed the genetic diversity and antimicrobial resistance of E. coli isolates from pasteurized milk processed in 21 dairies in northwestern State of Parana, Brazil. The 95 E. coli isolates were subjected to antimicrobial susceptibility testing according to the recommendations of the Clinical and Laboratory Standards Institute and assessed genotypically by Enterobacterial Repetitive Intergenic Consensus-Polymerase Chain Reaction (ERIC-PCR). The highest rate of resistance was observed for cephalothin (55.78%). ERIC-PCR revealed high genetic diversity, clustering the 95 bacterial isolates into 90 different genotypic patterns. These results showed a heterogeneous population of E. coli in milk samples produced in the northwestern region of Parana and the need for good manufacturing practices throughout the processing of pasteurized milk to reduce the risk of foodborne illnesses.

The purpose of this study was to analyze the biomechanical interactions in bone tissue between short implants and implant-supported crowns with different heights. Two models were made using the programs InVesalius 3.0, Rhinoceros 4.0 and Solidworks 2010. The models were established from a bone block with the short implant (3.75 x 8.5 mm) with geometry Morse taper connection (MT). The height of the crown (cemented) was set at 10.0 mm and 15.00 mm. The models were processed by programs and 10 NEiNastran Femap 10.0. The force applied was 200N (vertical) and 100N (oblique). The results were plotted on maps Voltage Maximum Principal. Statistical analysis was performed using ANOVA. The results showed that the increase in crown height, increased stress concentration in the crown of 15 mm under oblique loading (p <0.001), the oblique loading has significantly expanded the area of stress concentration (p <0.001). Conclusion:the increase of the crown increased the stress concentration, being statistically significant for short implants Morse taper. The mesial and distal region had the highest concentration of stresses under oblique loading. The oblique loading was more harmful when compared with axial loading, being statistically significant.
