Os micro-organismos probióticos são utilizados em vários produtos alimentícios ou em suplementos alimentares. Simuladores intestinais representam uma opção de realização de estudos com a microbiota intestinal. O simulador do ecossistema microbiano humano (SEMH) consiste em uma sucessão de cinco reatores conectados que representam as diferentes partes do trato gastrointestinal humano com seus respectivos valores de pH, tempo de residência e capacidade volumétrica. O SEMH foi utilizado para estudar o efeito do Enterococcus faecium CRL 183 e do Lactobacillus acidophilus CRL 1014 sobre a microbiota intestinal nativa. Inicialmente, o inóculo preparado com fezes humanas foi introduzido nos três reatores, responsáveis por simular o cólon ascendente, transverso e descendente. Após duas semanas de estabilização foi adicionado, diariamente, durante quatro semanas, E. faecium CRL 183 e L. acidophilus CRL 1014 contendo 108 UFC/mL nos três compartimentos que simulam o cólon ascendente, transverso e descendente. Após as quatro semanas de tratamento o sistema permaneceu durante duas semanas sem adição de probióticos. Durante todo o experimento, foi realizado semanalmente a composição da microbiota intestinal baseada na enumeração de bactérias aeróbias e anaeróbias totais, Enterococcus spp., Lactobacillus spp., Bifidobacterium spp., Enterobactérias e Clostridium spp. Semanalmente, também, foram realizadas análises de ácidos graxos de cadeia curta (acetato, butirato e propionato) e amônia. Através da análise microbiológica observou-se alterações significativas na composição da microbiota do SEMH no decorrer do período do experimento. Alterações significativas também foram observadas na concentração de amônia e de AGCC, podendo assim observar a influência da inoculação de probióticos na microbiota nativa e os metabólitos produzidos por ela

The present study aimed to analyze the effects of exercise performed at aerobic/anaerobic transition on non-alcoholic hepatic steatosis (NAHS) markers in diabetic rats. Adult (60 days) male Wistar rats were divided into 4 groups: sedentary control (SC), trained control (TC), sedentary diabetic (i.v. alloxan injection) (SD) and trained diabetic (TD). At the beginning of the experiment, all the animals were submitted to maximal lactate steady state test (MLSS) in order to identify the aerobic/anaerobic metabolic transition during swimming exercise. The trained groups were submitted to swimming, supporting overloads (% of body weight – b.w.) equivalent to MLSS intensity, 1h/day, 5 days/week, during 8 weeks. We analyzed: serum ALT, AST, albumin, glucose and free fat acids (FFA), body weight and total lipid concentrations in the liver. The diabetic groups showed higher (ANOVA two-way, p<0.05) serum glucose (SD=200% and TD= 150%) and weight loss (SD= 15.0% and TD= 8.5%) compared to controls and the SD showed higher glucose concentration and weight loss when compared to TD. The work load (% b.w.) equivalent to the MLSS was lower in TD (4.7%) than in TC (5.6%) group. The NAHS markers (U/L) did not show... (Complete abstract click electronic access below)

Epidemiological studies have shown an inverse relationship between nuts, including walnuts, intakes and chronic diseases such as cardiovascular diseases and cancers. The nuts contain phenolics compounds and flavonoids and are rich in tocopherol, phytosterols, and squalene. They are sources of carbohydrates, essential fatty acids and minerals. Since walnuts contain high levels of n-3 fatty acids and low unsaturated fatty acids, high levels of vitamin E, pholyphenols, flavonoids, arginine and fiber. The compounds possible beneficial effects are due to their antioxidant and antiproliferative activities, which are linked to a reduced risk for developing atherosclerosis and cancer. In recent years, the consumers have been showing an increased interest in nuts and walnuts because of their nutritional qualities and their potential beneficial effects on people’s health This review aims to describe the importance of beneficial bioactive compounds present in nuts and walnuts.

Frying is a widely used method of preparing food, because it is a very fast and convenient process, and because it provides specific characteristics of color, flavor, odor, and texture, besides having great consumer acceptance. Therefore, the interest in the physiological effects that oils heated at high temperatures can cause to the human body arises. The aim of this work was to analyze the levels of frying used oil alteration in different kinds of foods served at the university restaurant at “Instituto de Biociências, Letras e Ciências Exatas” (IBILCE), in São José do Rio Preto-SP. In addition, it aims to make the restaurant aware of the good ways to fry and the commitment of providing good quality food to students and professionals of the Institute. With this purpose, determination of total polar compounds, conjugated dienoic acids, peroxide value, and fatty acid profile were analyzed. Two rapid tests were also used: 3M Fat Monitor and Oil Test kit. The results were compared with limits recommended for the disposal of oils and fats used in frying by the Brazilian Health Surveillance Agency (ANVISA), by other countries, and by other researches. Thus, it was concluded that the university restaurant provides the consumers with fried food of good quality, since none of the analyses showed results above recommended, although there is a need of improvement in the quality control of the oil used, in order to avoid unnecessary costs to the university restaurant.
