Atualmente, os compostos bioativos presentes em alimentos in natura vem sendo amplamente estudados, já que cada vez mais fica comprovado sua importância para saúde do homem devido suas funções e ações biológicas. Hoje já associa-se a ingestão de frutas e vegetais e a diminuição do risco de diversas doenças, tais como câncer, inflamações, doenças cardiovasculares, degeneração macular e outras, sendo os carotenóides e compostos fenólicos alguns dos grupos de compostos bioativos aos quais são atribuídas tais ações.1As pimentas têm significativa importância nesse cenário, uma vez que desde a época do Brasil colônia, até hoje, são muito utilizadas na culinária, nas crenças, na medicina e inclusive com arma de defesa. Os compostos presentes na pimenta são utilizados como remédios para artrites (pomadas a base de capsaicina), dores musculares (emplastro ‘Sabiá’), má digestão, dor de cabeça e gastrite. O presente estudo teve como objetivo quantificar os teores de ácido ascórbico, acidez, flavonóides totais, fenólicos totais, carotenóides totais e atividade antioxidante de duas variedades mais comuns da espécie C. Baccatum: pimenta “Dedo-de-Moça” e pimenta “Cambuci”. Além disso, fez-se um estudo para analisar o efeito do cozimento versus compostos bioativos, a fim de avaliar possíveis perdas de atividade devido ao processamento das amostras. Em todos os ensaios, a pimenta Dedo-de-Moça apresentou valores maiores de todos os compostos bioativos, quando comparados aos da pimenta Cambuci. Após o cozimento em água fervente, a maioria dos compostos sofreu redução, exceto nos testes de quantificação de Flavonóides e Carotenóides, os quais demonstraram aumento na concentração após o processamento.

This paper reports the data on the cuiabana sausage historical aspect, and from the study performed on its technical/sensory characteristics. Four formulations of cuiabana-type sausage were prepared, varying the basic raw material (bovine, chicken and swine meats). For processing these sausages, the raw meats (beef, chicken and pork) were cut into cubes and together with the other ingredients (garlic, cheese, pepper and chives) they were weighed and homogenized. The resulting mixture was refrigerated for 24 hours for intensifying the flavor. Thereafter, it was stuffed into natural casings. These prepared samples were characterized on the physical-chemical profile and on the shelf life under refrigeration for over a seven day-storage in order to assess the microbiological contamination (total coliforms and fecal thermotolerant bacteria), sulphite-reducing clostridium, Salmonella spp., coagulase-positive Staphylococcus), and pH. The sensory evaluation and statistics analysis were carried out on the different types of laboratory- processed cuiabana sausage. Introducing over time changes in the cuiabana sausages formulation are positive factors; therefore, variations in the formulations it is feasible to get a better final product than that original one, and it might be resulted from the market demand.

This paper discusses the influence of the design parameters in the operation and construction of an internal combustion engine. A theoretical analysis was developed using a standard crank-connecting rod-piston to verify the behavior of the stresses generated in the combustion and transformed into rotational energy of the crank shaft. Design parameters directly influence not only the final result of the characteristics of power and torque, but how the engine must be built to withstand different loads. The choice of parameters of a combustion engine is directly linked with the application of the engine and the final result expected of it function

This article aims to discuss and reflect on the contributions of the Critical Theory of Society called for the field of education in times of increasing technological development. Therefore, we look to the works of three authors exponents of Critical Theory: Walter Benjamin, Theodor W. Adorno and Herbert Marcuse, highlighting the reflections and analyzes of these authors and using them as input in the educational field. The selfreflective and self-education is conceived in its potential to overcome the conditions of domination that remain in our society increasingly technified and supposedly democratic. Thus, the educational praxis think it seems like something urgent and necessary to be broken with certain conditions that keeps our potential to barbarism.

In this work evaluated the content of vitamin C and total carotenoid in tomatoes fresh and dehydrated for conserve, with posterior immersion in sauce, verifying its sensorial acceptability. Dehydration was performed in dryer with airflow at 70 °C to obtain a product with final moisture of 45%. Determinations were carried out ascorbic acid, soluble solids, acidity, sugars and carotenoid before and after the dehydration process. The dehydrated tomatoes had been immersed in three types of sauces (pepper sauce, oregano with parrot leaves sauce and garlic sauce) per 25 days. After this period, the dry tomatoes in conserve had been submitted to the sensorial analysis in the pate form, applying themselves preference test. The results had been showed that retention of vitamin C and total carotenoid in the dehydrated product showed retention of 14.0% and 44.3%, respectively, in tomatoes after the dehydration process. Starting with a critical review that make Deleuze and Guattari about the use of images in the writings and drawings reproduced in Narrative of a Child Analysis, by Melanie Klein, the authors reflect on the place of metaphor in the speech of this analyzed child about desiring life, intoxicated with Oedipian metaphors. They highlight the role of metaphor in the production of the alleged psychoanalytic intoxication.
