Devido à grande importância médico-veterinária dos carrapatos e a ampla utilização de produtos químicos sintéticos para o seu controle, tais como a permetrina, o presente estudo trouxe uma análise morfofisiológica, citoquímica e da reorganização do citoesqueleto durante os processos de degeneração e de morte celular que ocorreram nas glândulas salivares de fêmeas semi-ingurgitadas de carrapatos Rhipicephalus sanguineus quando expostas a 206, 1031 e 2062 ppm de permetrina. Os resultados obtidos mostraram que a permetrina é um potente agente químico que interfere na morfofisiologia do tecido glandular desta espécie, causando severas alterações na forma dos ácinos, bem como intensa vacuolização citoplasmática nas células acinares e acentuada desorganização do tecido glandular, culminando num avançado processo de degeneração, com consequente formação de corpos apoptóticos. Além disso, este piretróide comprometeu a capacidade de secreção das glândulas salivares, visto a drástica redução de proteínas, lipídeos e polissacarídeos nas diferentes células acinares. O material genético do tecido glandular também mostrou severas alterações induzidas pela permetrina, tais como: na forma e no tamanho do núcleo das células acinares, marginalização da cromatina, fragmentação nuclear, bem como surgimento de núcleos picnóticos, principalmente quando aplicadas as maiores concentrações do produto. Com relação à reorganização do citoesqueleto, os resultados revelaram que a permetrina foi capaz de modificar o citoesqueleto das glândulas salivares de R. sanguineus por meio de um processo gradual de desintegração à medida que as concentrações do acaricida aumentaram. Nestas células glandulares, os processos de morte celular ocorreram num ritmo mais acelerado do que em condições naturais, nas quais esse processo dar-se-ia somente no final do ingurgitamento da fêmea. Macrófitas aquáticas têm grande importância na dinâmica dos ecossistemas aquáticos através de sua alta produtividade e sua participação na cadeia de herbivoria e detritívora. Através de estudos da sazonalidade da biomassa e da composição química dessas plantas é possível avaliar seu papel no ecossistema inferindo sobre seu período de crescimento e estoque de nutrientes. Em regiões tropicais a biomassa vegetal apresenta pequena ou ausente variação sazonal devido à pouca variação de temperatura e fotoperíodo, diferentemente das regiões temperadas onde estas variações ambientais são marcantes refletindo em sazonalidades na biomassa. Os objetivos deste trabalho foram avaliar se a biomassa e a composição química de Crinum procerum apresentam padrão de variação temporal. E ainda, avaliar se a disponibilidade de nutrientes (N-total e P-total) no sedimento se relaciona ao seu teor na macrófita. As plantas aquáticas foram coletadas (quadrado de 0,25 m²) em quintuplicata em um banco monoespecífico no rio Branco, bacia do rio Itanhaém, litoral sul de SP, na primavera (nov. 2009/10), verão (fev. 2010/11), outono (mai. 2010/11) e inverno (jul. 2010/11), totalizando oito coletas. As plantas foram secas em estufa para obtenção da biomassa e análise de sua composição química (nitrogênio, fósforo, carboidratos solúveis, lipídeos, polifenóis e fração de parede celular). O teor de N-total e P-total do sedimento do estande também foi obtido. O maior valor médio de biomassa total (parte aérea e parte submersa) ocorreu na primavera/09 (1696,97 g.m-2) e os menores valores médios ocorreram nos invernos/10 e 11 (respectivamente, 825,95 g.m-2 e 565,29 g.m-2). No outono/11 o teor médio de N-total (2,16 %MS) na biomassa vegetal foi o mais elevado e o de P-total (0,048 %MS) foi o menor entre as demais estações. Diabetes Mellitus is caracterized by a disturbance on endocrine pâncreas with reduction in serum levels of insulin. The deficiency or absence of insulin promotes alterations in the metabolism of carbohydrates, lipidis and proteins. The most common clinical signs of disease are polyuria, polydipsia, polyphagia and loses of weight. The diagnosis is made based on clinical symptoms, with laboratory confirmation through persistent hyperglycemia on fasting and glycosuria. Treatment includes insulin therapy, diet, exercise and oral hypoglycemic agents in an attempt to reverse the catabolic effects associated with deficiency or antagonism of insulin and restore normal homeostasis of the metabolism of proteins, lipids and carbohydrates

The stomach is an exceptional organ, which functions are sterilize food ingested, form the primitive bolus, digest lipids and proteins, and to store food temporarily in the gastrointestinal tract. Its capacity of digesting food without digesting itself is amazing. This fact occurs due to innumerous protective substances adjacent to the gastric mucosa. When aggressive factors overwhelm the protective factors, a lesion in the gastric mucosa is formed. Lesions that reach the lamina propria are called gastric ulcers, which are classified macroscopically as openings on the gastric wall and; microscopically, as a gastric injury characterized with epithelial desquamation, mucosal hemorrhage, glandular damage and eosinophilic infiltration. The current therapy available is effective, although it causes collateral effects, therefore researching new drugs is necessary. This work aim to evaluate the gastroprotective effect of epicatechin against gastric lesions induced by absolute ethanol and non steroidal anti-inflammatory drugs which are the main causes of this disease currently, yet we aim to study the main mechanisms of action responsible for the gastroprotective effect. The results show that epicatechin has a significant macroscopic and microscopic gastroprotective effect against gastric injuries induced by ethanol and indomethacin, acting locally by augmenting gastric mucus secretion and it also acts via antioxidant system by holding total glutathione levels. Epicatechin’s gastroprotective mechanisms depend on the activation of sulfhydryl compounds and doesn’t depend on the NO-synthase enzyme

Brazil has one of the largest cattle herds in the world, so the cattle slaughter is one of the most important economic activities in the Brazilian market. But this activity requires a high demand of water, resulting in serious problems about the correct disposal of wastewater generated in the process. This effluent has a high pollution load, becoming its receiving bodies (streams and rivers) unfit for various activities such as public water supply, recreation, fisheries. To minimize the environmental impacts of its industrial wastewater and fallow the local environmental legislation, refrigerators must make the treatment of these effluents. This study aimed to verify the efficiency of a enzymatic reactor, when occur hydrolysis of lipids present in the effluent industrial of an cattle slaughter industry. The treatment system used was composed of two separate reactors: one being the anaerobic fluidized bed reactor (AFBR), inoculated with immobilized enzymes on the matrix support, and the other by sequential batch reactor (SBR) inoculated with activated sludge. Whereas, the reactors have been developed and installed at the Wastewater Treatment Laboratory, Faculdade de Ciências e Tecnologia, UNESP, campus Presidente Prudente. The procedure operating occurred differently for each reactor: preparation and inoculation of enzyme granules, filling the reactor, hydrolysis, and AFBR emptying, filling, aerobic reaction, sedimentation, and emptying the SBR. Fibers are non-digestible materials by human organism, and they are insoluble in specific conditions. The corn fiber has been used as an alternative to enrich the food products for human consumption, in order to add nutritious value to this co-product. This study aimed at determining the chemical and fractions components of corn fiber, extracted by semi-wet milling in laboratory (LabF), and by semi-humid milling in industrial process (IndF); and microbiological analyses were perform in the last fraction. The fiber composition differed significantly among these two products as to moisture, ash, lipids, proteins, insoluble dietary fiber, neutral detergent fiber (NDF), acid detergent fiber (ADF), cellulose and lignin contents. The sample IndF showed microbiological parameters in compliance with the specifications for consumption. The investigated corn fiber may effectively contribute to increase the fiber intake in the diet. As the industrially processed fiber (IndF) showed compliant microbiological parameters with the specifications for food, this component might be incorporated into the food products formulation.

The consumption of fat related to the incidence of diseases has motivated the development of food with less or even no fat. However, fat is important for the full functioning of the human body and sensory characteristics of food. Therefore, making food with little or no fat and at the same time maintaining the desired quality is a challenge for the industry. Fat substitutes were created to achieve this objective. Fat substitutes can be more effective in their applications when mixtures of different types of them are used. The number and variety of these ingredients are still growing, expanding options of choice when a fat substitute is required in a certain type of food. Considering the importance of fat substitutes nowadays, this paper presents an overview of functions and implications of fats in the human body and food, the terminology used to refer to fat substitutes, the categories of different types of fat substitutes available in the market and their applications in dairy products.

A large amount of external factors that can foster the emergence of free radicals in organisms has created a imminent need for understanding and technologies that enables the search of antioxidant componds and extraction of antioxidants from natural sources. These compounds have great potential for kidnapping free radicals which are highly harmful to organisms, being the principal responsible for the decrease in the shelf life of foods, and aging. These free radicals are also related to diseases such as AIDS, arthritis, diabetes, heart disease and others. Fruits and vegetables are true mines of compounds with antioxidant potential, its vitamins and phenolic compounds present an essential role in the nutrition of living beings acting as a defense against degradation of lipids and proteins, which indicates the importance of a diet rich in these nutrients, given that part of the antioxidant defenses of the body comes from the diet. This revision study aims to put in evidence the indispensable role of antioxidants in the survival of organisms.
