The increase in the elderly population is a worldwide phenomenon and has different consequences not only in terms of health, but also in terms of economy. One of those consequences is the institutionalization. The understanding of this process, as well as of the reality of the institutionalized elderly is essential to develop policies of care. Goals: a) present the epidemiological profile of institutionalized elderly who live in institutions in the countryside of São PauloState and describe the development of an extension project implemented in two elderly-care institutions (IRLPI’s). Methods and procedures: data were collected in three forms, from which it was possible to verify: a) institutional data; b) social data and c) data about general and mental health. The data related to health were collected from the medication of continuous use. All data were launched into the database (Access) and subjected to the descriptive statistical analysis. Data related to mental health were confirmed from the application of clinical trials (Geriatric Depression Scale – GDS and Mini Mental State Examination: MMSE).

The urbanization process established in Brazilian society since the middle of last century brought changes in the population habits and customs, which was responsible for the increased of chronic diseases incidence, such as arterial hypertension, for example. Although this is a common disease nowadays, it is still difficult to establish a significant control in subjects with this disease and its consequences. This is apparently due to lack of interest to the correct plan of care developed for the treatment of this disease. The nursing consultation identifies potential problematic situations and the patient needs, setting actions that are complementary to their benefit in order to promote health. The present work aims to observe how the nursing consultation is being used as strategy for patients with arterial hypertension, and to understand the difficulties faced during treatment of these patients. For this purpose, it was performed qualitative and quantitative studies with patients from Centro Saúde Escola (CSE), Unidade Auxiliar, Faculdade de Medicina de Botucatu, UNESP, located in Botucatu, employing as methodology the Discourse of the Collective Subject and descriptive statistical analysis of quantitative results. The vast majority of consultations were held by medical professionals and it was observed that the multidisciplinary work still needs to be recognized and valued by users. The lack of knowledge of some individuals in relation to the potential and importance of the nursing consultation occurs not only for the treatment of arterial hypertension, but for the treatment and monitoring of the individual as a whole. Therefore, it is still necessary to clarify the true essence and necessity of the nursing consultation, since so important tool should be used in its entirely. Moreover, the role of the multidisciplinary team should be more discussed

O trabalho teve o objetivo de desenvolver uma linha de preparações cosméticas baseada no estudo das matérias-primas, na análise sensorial do produto e no mercado atual. A linha desenvolvida recebeu o nome de Bella Fiore. Essa linha é composta por produtos destinados ao uso capilar, banho e corporal. Foram desenvolvidos 10 produtos, sendo eles, três xampus, três condicionadores, uma máscara capilar, um sabonete líquido, um óleo para banho e um hidratante corporal.

This study aimed to produce beer, using different botanical origins of honeys (orange, eucalyptus and wild), as malt adjuncts, and their Physical-chemical and sensorial characterizations. The production was made with malt, water, hops and honey. All musts were adjusted to 12 Brix, and the concentration of honey in the formulation was 45% (based on the extract), except for the control (0%). The physical and chemical analysis were performed on malt (extract content), honey (pH, free acidity, lactonic acidity, total acidity, color, turbidity, extract content, moisture content, reducing sugar, total reducing sugar and sucrose) in wort (content extract, pH, color, turbidity, fermentability ,bitterness and total acidity) and beer apparent extract, apparent fermentability, real extract, real fermentability, alcohol content, pH, total acidity, total foam, foam density , bitterness, carbon dioxide, color and turbidity). Sensory analysis was performed by nine-points hedonic scale testing. The attributes evaluated were appearance, aroma, flavor and overall. The results were submitted to ANOVA and means compared by Tukey testing at a 5% of probability. Beer with honey as adjuncts’ had high fermentability and low content of fat, compared to the pure malt beer. The addition of honey as an adjunct did not affect the majority of the physical-chemical parameters, except for turbidity, whereas beer with honey showed the highest value for this feature, in addition, it has also presented their biterness differences the values for beer with honey were lower. The different types of honeys did not affect the acceptability of beer, however, the beer with honey showed greater acceptance between beer with malt and honey

O interesse no tema pela praticas alternativa e complementar na saúde vem aumentado, principalmente entre pacientes oncológicos, que buscam uma melhor qualidade de vida e algumas alternativas para amenizar os efeitos colaterais do tratamento convencional. Fazer uma revisão integrativa da produção científica em periódicos nacionais e internacionais, acerca das praticas integrativas e complementares no tratamento do paciente com câncer. Trata-se de uma revisão integrativa da literatura, indexada nas bases de dados MEDLINE e LILACS, no período de 2000 a 2010. Após exclusão daqueles que se repetiam entre as bases de dados e dos que não se encaixam nos critérios de inclusão, resultaram 19 artigos. A coleta de dados foi realizada nos meses de janeiro a março de 2011 por meio de um instrumento elaborado pela pesquisadora. Utilizou-se do aplicativo Microsoft Excel 2007 para organizar o banco referente aos dados quantitativos. Os dados quantitativos, referentes às variáveis da caracterização da produção científica, foram apresentados em tabelas e submetidos à análise estatística descritiva. A análise de conteúdo, na abordagem representacional e do tipo temática (Bardin, 1977) foi utilizada como estratégia metodológica qualitativa para organizar, sistematicamente, a produção do conhecimento. A caracterização do corpus de análise aponta uma produção majoritária de publicações internacionais (94,74%). A maior parte das publicações é oriunda dos Estados Unidos da América (EUA), correspondendo a 36,86% da amostra. O método qualitativo foi predominante (84,21%). Abstract : The objective of this study was to evaluate quantitatively and to describe qualitatively the process of bone repair in the interface of receptor bed and graft autogenous bone block with or without a e-PTFE membrane, in osteopenia induced rats. To this end, we used forty-eight Wistar rats weighing about 300g, in which, with the aid of 4.1 mm trephine a graft was removed from the parietal bone and fixed to the surface of the left mandibular ramus. The animals were randomly divided into four experimental groups: Group 1 (n=12): SHAM operated and autogenous bone graft only; Group 2 (n=12): SHAM and autogenous bone graft covered by e-PTFE membrane; Group 3 (n=12): ovariectomized rats (OVX) and autogenous bone graft only; Group 4 (n=12): OVX and autogenous bone graft covered by e-PTFE membrane. The animals in each group were sacrificed at three time periods: 21, 45 and 60 days, each time with 4 animals per group. The specimens were decalcified and included, the sections were stained with HE and subjected to histological and histomorphometric analysis in light microscopy. The results of the ANOVA showed that the variables on the condition (OVZ and SHAM), and the time (21, 45 and 60 days) were statistically significant, and can be established with the Tukey test (5%) that the period 21-day differs significantly from the periods of 45 and 60 days, which did not differ among themselves. The descriptive histological analysis showed integration of the graft in all animals. It was concluded that the initial integration of the graft bed was negatively affected in the presence of induced osteopenia, and that the use or not of a e-PTFE membrane did not interfere in the process of integration

A cachaça é uma bebida exclusivamente brasileira que vem conquistando espaço no mercado dentre as bebidas alcoólicas destiladas. Porém, o Brasil é responsável pelo consumo de 99% do total produzido por ano e apenas 1% é exportado. Isso se deve à falta de padronização na produção e de conhecimento por parte dos produtores, que levam a contaminação por compostos indesejáveis produzindo uma bebida de baixa qualidade, tanto físico-química quanto sensorialmente. Os métodos de redestilação e filtração em carvão ativado vêm sendo alternativas para melhoria da qualidade. Amostras de cachaças foram submetidas a esses métodos e avaliadas quanto à composição química e a qualidade sensorial. As análises químicas de acidez volátil, aldeídos, ésteres, metanol, álcoois superiores e carbamato de etila foram realizadas em triplicatas utilizando cromatografia gasosa. Para a análise sensorial, as amostras foram submetidas ao Teste de Aceitação utilizando escala hedônica híbrida de nove pontos e avaliadas pelo Teste de Kruskal-Wallis. Foi aplicado também o Teste de Ordenação para avaliar a preferência entre as amostras e a Intenção de Compra foi avaliada utilizando-se uma escala de cinco pontos, de certamente não compraria a certamente compraria. A redestilação reduziu os níveis de acidez volátil, cobre e carbamato de etila enquanto a filtração diminuiu as concentrações de aldeídos e ésteres. Os processos de redestilação e filtração em carvão ativado não alteraram a aceitação da bebida, mantendo seu perfil sensorial e melhoraram a composição química.

The aim of this study was to evaluate the learning of Senior Citizens after a face-to-face course with the goal of teaching them how to use the internet. The study population was composed of people (n=18), of both genders, aged 50 years or over, from the open university for Senior Citizens UNATI (“Universidade Aberta da Terceira Idade” in Portuguese) at Araraquara. Two hour classes weekly were taught in the computer laboratory - LDI in Portuguese located in the School of Dentistry in Araraquara. The course program content covered the use of e-mail and researches in sites. In order to evaluate the learning acquired, a self-evaluation questionnaire was applied in twice (before and after the course), which enabled the development of students concerning their knowledge and skill in the topics approached in classes. Descriptive statistical analysis was performed. The average performance of participants was calculated per point and interval of confidence of 95% (IC95%) in the beginning and in the end of the course. Comparison between the averages was performed by using the paired Student’s-t test. The level of significance adopted was 5%. It was observed that the students’ learning about computer use improved significantly after the course (Student’s-t test: -5.360, p<0.001, p2=0.628, =0,999), however, 72.2% of them reported that they did not know how to attach a file to a message to be sent by e-mail, as well as having no or little skill to perform this activity. It was concluded that the evaluated course improved the participants knowledge and skills in computer use.

In this work evaluated the content of vitamin C and total carotenoid in tomatoes fresh and dehydrated for conserve, with posterior immersion in sauce, verifying its sensorial acceptability. Dehydration was performed in dryer with airflow at 70 °C to obtain a product with final moisture of 45%. Determinations were carried out ascorbic acid, soluble solids, acidity, sugars and carotenoid before and after the dehydration process. The dehydrated tomatoes had been immersed in three types of sauces (pepper sauce, oregano with parrot leaves sauce and garlic sauce) per 25 days. After this period, the dry tomatoes in conserve had been submitted to the sensorial analysis in the pate form, applying themselves preference test. The results had been showed that retention of vitamin C and total carotenoid in the dehydrated product showed retention of 14.0% and 44.3%, respectively, in tomatoes after the dehydration process. Minas frescal cheese is a semi-skimmed product with high moisture and simple preparation and one of the most consumed in Brazil. Thus, the aim of this study was to combine the characteristics of inulin and gum acacia (by having fibers and being prebiotic) to produce a minas frescal cheese. Were evaluate the characteristics physical and chemical, microbial and sensory acceptance (hedonic scale) of each cheese. Three cheeses were prepared; one as a standard (QP) without inulin, and others with 0.49% (QI25) and 0.98% (QI50) inulin, the amount of gum acacia was maintained. The yield of the formulations with gum acacia and inulin were 9.76% for (QI25) and to 20.03% (QI50) higher than the standard sample. In relation to moisture content, samples containing inulin and gum acacia showed values greater than the standard sample. The sensory analysis indicated no differences between scores for color, aroma and texture, but significant differences were detected for flavor, in which (QI25) received the highest acceptance. Regarding the energy value, it was obtained 276 kcal (QP), 215 kcal (QI25) and 190 kcal (QI50). Therefore, the developed product presents satisfactory results for sensory, microbiological and physical- chemical analyses.
