The influence of feeding systems on the levels of functional lipids and other fatty acid concentrations in Australian beef was examined. Rump, strip loin and blade cuts obtained from grass feeding, short-term grain feeding (80 days; STGF) and long-term grain feedlot rations (150-200 days; LTFL) were used in the present study. The typical Australian feedlot ration contains more than 50% barley and/or sorghum and balanced with whole cottonseed and protein meals were used as feed for STGF and LTFL regimens. Meat cuts from 18 cattle for each feeding regimen were trimmed of visible fat and  connective tissue and then minced (300 g lean beef); replicate samples of 7g were used for fatty acid (FA) analysis. There was a significantly higher level of total omega-3 (n-3) and long chain n-3 FA in grass-fed beef (P <0.0001) than the grain-fed groups regardless of cut types. Cuts from STGF beef had significantly reduced levels of n-3 FA and conjugated linoleic acid (CLA) and similar levels of saturated, monounsaturated and n-6 FA compared with grass feeding (P <0.001). Cuts from LTFL beef had higher levels of saturated, monounsaturated, n-6 FA and trans 18:1 than similar  cuts from the other two groups (P <0.01), indicating that increased length of grain feeding was associated with more fat deposited in the carcass. There was a step-wise increase in trans 18:1 content from grass to STGF to LTGF, suggesting grain feeding elevates trans FA in beef, probably because of increased intake of 18:2n-6. Only grass-fed beef reached the target of more than 30mg of long chain n-3 FA/100 g muscle as recommended by Food Standard Australia and New Zealand for a food to be considered a source of omega- 3 fatty acids. The proportions of trans 18:1 and n-6 FA were higher (P<0.001) for both grain-fed beef groups than grass-fed beef. Data from the present study show that grain feeding decreases functional lipid  components (long chain n-3 FA and CLA) in Australian beef regardless of meat cuts, while increasing total trans 18:1 and saturated FA levels.

Cattle grow and shed fibre which assists them adapt to seasonal changes in the environment. In the absence of cattle fibre production data for southern Australia, Angus, Hereford, Simmental and Limousin cows and crosses between these breeds grazing perennial pastures at Hamilton, Victoria were sampled in late winter. The fibre-growing area on the sides of cattle was measured, fibre sampled at the mid-side site and the sampling area determined. Fibre was tested for fibre diameter distribution, clean washing yield and fibre length measured. Cows were 3-7 years of age, liveweights were 412-712 kg and the mean fibre-growing area was 2.2 m2. This produced an average 682 g of total fibre (range 3461-175 g). The mean fibre diameter of all fibres was 51.7 μm (range 43-62 μm) and 18% of fibres were 36 μm (range 6-39%). The clean washing yield was 92.4% (range 87.4-95.8%). Fibre length averaged 21 mm. Increasing the age, liveweight and condition score of cows and increasing weight of clean fibre were associated with significant increases in mean fibre diameter. Breed of cattle did not affect fibre production (P > 0.1) but did affect mean fibre diameter (P < 0.05). The quantity of fibre production indicates potential for low value textile production. The high level of total fibre production, twice that of an earlier report, and fibre shedding from cattle suggests that white fibre-producing animals such as Merino sheep, Angora and cashmere goats and alpaca should avoid using cattle-handling facilities, particularly in the month before shearing.

This paper uses a novel approach to investigate how food consumption in Japan may change as Japanese consumers become more westernised in their tastes and preferences for food. It is widely believed that as food prices in Japan fall to international levels and as Japanese consumers become more westernised in their taste and preferences for food, their meat consumption patterns, in particular, will approach those of western countries. The approach undertaken in this paper involves a comprehensive survey of Japanese expatriates in Los Angeles, California, regarding their food consumption habits. The findings are interesting as they shed some light on the changing nature of food consumption of accultured Japanese faced with competitive food prices. The results indicate that although household meat consumption of Japanese expatriates have changed, it remains debatable, however, that their food consumption habits will approach those of western consumers in the foreseeable future. The findings have important implications for food marketeers in Japan and elsewhere, particularly as further liberalisation of food import in that country gains momentum.

Over the last several years there has been increasing pressure on most western industrialised countries to liberalise trade for food and agricultural products and yet the full implications of freer trade are not always well understood. This paper attempts to fill this gap by reviewing the developments in the Japanese beef market following import liberalisation. We conclude that the Japanese beef market has experienced major structural changes over a relatively short period as a result of liberalising beef imports. The most apparent impact has been on Japanese consumers who have benefited from lower retail beef prices and a greater variety of beef cuts to choose from. The types and quality of beef imported have also changed and consequently major suppliers have adapted their production systems and their products to the changing taste and preferences of Japanese consumers. Beef exporters to Japan, on the other hand, have experienced declining wholesale prices but have, nevertheless, benefited from the growing size of the market. Developments in the wider economy, such as changes in the retail distribution systems and the exchange rate have also influenced the beef sector.

Superficially, the high human populations of prosperous, well-fed city-states such as Singapore and Hong Kong might appear to support the view that high concentrations of human dynamism and enterprise can alone transcend environmental constraints. Indeed, extrapolations from such densely populated regions to the whole world form the historical basis for the most optimistic estimates of how many people the Earth might support. In fact, these affluent, densely populated regions require goods and services that are produced by areas far larger than the residential area of the state. For the foreseeable future, the whole world cannot live as densely and as well as Singapore. For example, some of the fish eaten in Hong Kong is captured in Pacific Island fisheries. Beef from the Northern Territory is exported to Japan. More generally, the supply of environmentally dependent goods - including sinks for wastes - is always limited, as are inputs such as fertile soil, clean fresh water and a benign climate.

Inulin and oligofructose were used as fat replacers in Anzac cookies, blueberry muffins, carrot cake, chocolate cake, lemon cheesecake, ice cream, and beef sausages at levels ranging from 4 to 13g/100g, achieving a significant reduction in fat content (20% to 80% relative). These foods were rated as acceptable by an untrained taste panel, but scored consistently lower than their full-fat counterparts (controls). Regression analysis showed that, unlike the controls, texture was more important than flavor in determining overall acceptability of the low-fat foods. Inulin and oligofructose are readily incorporated into bakery and meat formulations, but their use might be limited by adverse physiological effects when consumed at high levels.
