Protein-enriched cookies were prepared by supplementing gram flour into wheat flour at levels of 0%, 10%, 20%, 30%, 40% and 50% and analysed for physicochemical properties. The protein quality of the cookies was assessed by feeding gram flour-supplemented cookies to albino rats for 10 days. The supplementation resulted in a significant increase in protein, fat, crude fibre and ash contents of the cookies. The thickness and spread factor of cookies differ significantly while non-significant effect was observed in the width of the cookies. The protein efficiency ratio, net protein utilization, biological value and true digestibility differed significantly among diets containing cookies with gram flour fed to rats. Cookies with 30% substitution of straight grade flour and gram flour produced acceptable cookies as compared to control. The cookies containing 40-50% gram flour were best regarded as protein bioavailability for rats.

The use of hydrocolloids in different foods systems has become more commonly applied to improve the texture and quality of baked products. Nevertheless, the effects of these compounds on partially baked frozen chapatti have not been studied. The objective of the present study was to improve the storage stability, quality and shelf life of partially baked chapatti by adding various hydrocolloids, hydroxyl propyl methylcellulose (HPMC), carboxy methylcellulose (CMC) and guar gum, followed by frozen storage for 28 days. Partially baked and fully baked chapattis after frozen storage were analyzed for chemical and sensory attributes at 7-day intervals. Rheological studies showed an increase in water absorption, dough development time and dough stability after the addition of hydrocolloids. In partially baked chapatti with hydrocolloids after frozen storage, an increase in moisture retention and water soluble starch was observed. Sensory characteristics were also improved by combining both techniques. Among the hydrocolloids, HPMC exhibited the best results, followed by CMC and guar gum. These hydrocolloids and partial baking with frozen storage helped to improve the quality, and extend the shelf life of partially baked chapatti.

Four treatments (roasting, germination, autoclaving and an application of 0.5% EDTA+0.5% sodium hydroxide) were used to reduce the beany flavour of soya beans to produce a soy-based beverage. While germination significantly increased the protein level as compared to the other treatments, the maximum reduction of the beany flavour was achieved by the 0.5% EDTA+0.5% sodium hydroxide application. The soya beans that underwent this treatment were used during the second phase for optimized beverage formulation. During the second phase, a beverage was prepared according to different formulations and analysed for chemical composition and total viable count during a two-month storage period. During storage, the beverage samples exhibited variations in several parameters. The acidity, reducing sugars and total sugars increased, while the ascorbic acid, total soluble solids and pH decreased. Overall, chemical and microbial analyses showed the stability of the product during the storage period.

Summary: Copper (Cu), cadmium (Cd), chromium (Cr) nickel (Ni), lead (Pb), Iron (Fe), Manganese (Mn) and zinc (Zn) contents of various vegetables (bitter melon, tomato, eggplant, lettuce, cucumber and bell pepper) produced in Rawalpindi, Pakistan was determined using Atomic absorption spectrophotometer (AAS). These plants are the basis of human nutrition in the study area. All vegetables grown at sewage water by farmers showed the highest contamination of heavy metals, followed by local market, Progressive farmers and hydroponic plant. The concentration ranges in mg/kg were (1.45 -2.55) for Cd, (3.10 to 4.92) Cr, (12.15- 20.50) Cu, (25.00-51.00) for Fe, (7.80 to 15.60) for Mn, (10.16 to 15.42) for Ni, (2.12 to 5.41) Pb and (16.58 to 24.08) for zinc. The contamination was above the Maximum Residue Limits (MRLs), set out by WHO. Irregular trends in concentration were also observed in vegetables obtained from local market, progressive farmers and hydroponic plant.

Thermo-Electrochemical cells (Thermocells/TECs) transform thermal energy into electricity by means of electrochemical potential disequilibrium between electrodes induced by a temperature gradient (ΔT). Heat conduction across the terminals of the cell is one of the primary reasons for device inefficiency. Herein, we embed Poly(Vinylidene Fluoride) (PVDF) membrane in thermocells to mitigate the heat transfer effects - we refer to these membrane-thermocells as MTECs. At a ΔT of 12 K, an improvement in the open circuit voltage (Voc) of the TEC from 1.3 mV to 2.8 mV is obtained by employment of the membrane. The PVDF membrane is employed at three different locations between the electrodes i.e. x = 2 mm, 5 mm, and 8 mm where 'x' defines the distance between the cathode and PVDF membrane. We found that the membrane position at x = 5 mm achieves the closest internal ΔT (i.e. 8.8 K) to the externally applied ΔT of 10 K and corresponding power density is 254 nWcm-2; 78% higher than the conventional TEC. Finally, a thermal resistivity model based on infrared thermography explains mass and heat transfer within the thermocells.

The awarding of the 2006 Nobel Peace prize to Grameen Bank founder Muhammad Yunus has further highlighted how microfinance has come to be regarded as a significant and effective tool in making finance available to the poor. However, much debate still centres on both how microfmance should be delivered and its effectiveness measured. Microfinance funding is not something that should be undertaken lightly, and an awareness of all the cogent issues is essential for any donor looking to undertake effective microfinance programming. This chapter will outline some of the key arguments in the contested debate on effective microfinance programming. It will focus on a discussion of poverty and impact assessments and argues that the effective funding of microfinance is dependent on the ability of an NGO to recognise the many forms which micro finance can take and direct their funding accordingly.

The process of buying, selling or interacting with customers via Internet, Tele-sale, Smart card or other computer network is referred to as Electronics Commerce. Whereas online trade has been touting its flexibility, convenience and cost savings, the newest entrant is wireless e-commerce. This form of business offers many attractions; including 24 hours seven days’ open shop–business, vastly reduced fixed cost, and increased profitability. Amazon.com is an example of a successful venture, in e-business. Internet Service providers (ISP/ASP) have a significant influence on the feasibility, security and cost competitiveness of an e-business venture. In the ISP model of services, multiple users and their databases are normally offered on a single hardware, platform sharing the same IP address and Domain name. Clients will require a mechanism, which allows them to update their Web contents and databases frequently even many times daily without intervention of local system Administrator (ISP Admin). The paper overviews few steps to enable corporate clients to update their web content more securely.

Relationship marketing aims to build and maintain relationships between customers and organizations. While building strong bonds is a key objective of relationship marketing, limited empirical attention has been paid to the role of relational bonds on enhancing loyalty. This study explores the impact of financial, social and structural bonds on consumer loyalty, using a sample of loyal Arabic hotel guests. The results of this study suggest that structural bonds increase loyalty, although financial and social bonds were not found to have a significant impact on loyalty.

This paper explores the effect of financial, social and structural bonds on the loyalty of Arabic five star hotel guests. Three different measures of loyalty are used; attitudinal, behavioural and combined to identify how the three relational bonds affect loyalty. The results show that social and structural bonds increase all types of loyalty whereas financial bonds only increase attitudinal and combined loyalty. It is also found that bonds are perceived to be more important for high-loyal consumers as compared to low-loyal consumers. This all suggests that firms seeking to increase loyalty may need different strategies depending on the consumers being targeted.

This paper examines the experiences of two academics who had been international students themselves and currently teaching in multicultural settings at tertiary level, with regards to the issues of the teacher using culture specific slang and idiom with otherwise keen and bright groups of students, in Australia. Using the research method of auto-ethnography, it examines and categorises the themes of issues most often faced by the staff members and students-such as the use of different vocabulary and keywords and the prior knowledge required of both the teacher and the students in reaching a shared understanding or inter-subjectivity. These will be discussed in terms of the various realities experienced by the students coming from a diversity of countries and cultures. The paper discusses how these challenges can be identified and addressed and how to prepare for future situations more effectively and in advance. They will be examined within the contexts of culturally responsive teaching, communication competence, the hidden curriculum, instructional scaffolding, understanding and being open to other cultures and acknowledgement of the richness and relevance of the multicultural students’ varied experiences and social realities, from the point of view of the academic discipline of communication studies.

The role of the human resource management (HRM) function and its consequent contribution to organizational culture and strategic management have been much debated. This relationship has not been empirically tested in the Australian local government sector. This paper explores the types of organizational culture and the role effectiveness of the HRM function as perceived by 217 senior managers in 71 New South Wales and Queensland local government entities. We found four clusters of local government entities, each with different profiles of organizational culture and perceived effectiveness of the HRM role. While most organizations are undergoing a transition in their cultural values, over one-third of the organizations exhibit a market-oriented culture. These market-oriented organizations have a higher level of human resource role effectiveness. The present study contributes to the ongoing debate regarding the status and influence of HRM as a value-adding corporate function.

Background: Various charts based on body mass index (BMI) and per cent body fat (%BF) are used to classify childhood body composition but outcomes may vary.

Aim: The study investigated variation in incidences of childhood obesity as depicted by four classification charts.

Subjects and methods: BMI and DXA-derived %BF were assessed in 741 children. Incidences of overweight and obesity were compared between two BMI charts and two bioelectrical impedance (BIA)-based %BF charts.

Results: The International Obesity Task Force (IOTF)-adopted BMI chart designated 21%, 6% (boys), and 26%, 9% (girls) as overweight and obese, respectively. Corresponding figures using the USA CDC BMI chart were 27%, 11% (boys) and 27%, 12% (girls). Using a USA-derived %BF chart incidences were 17%, 2% (boys) and 21%, 8% (girls) and using a UK-derived %BF chart 51%, 24% (boys) and 53%, 36% (girls). Sensitivity of BMI varied according to the %BF reference chart.

Conclusions: In contrast to the BMI-based charts, there were considerable variations in depicted incidences of obesity between the %BF-based charts. These discordances were considered to result from previously reported variation within and between BIA and DXA %BF assessments underlying the charts. The present study highlights the need for valid, reliable, unchanging BIA and DXA procedures.

Research into the prevalence of hospitalisation among childhood asthma cases is undertaken, using a data set local to the Barwon region of Victoria. Participants were the parents/guardians on behalf of children aged between 5-11 years. Various data mining techniques are used, including segmentation, association and classification to assist in predicting and exploring the instances of childhood hospitalisation due to asthma. Results from this study indicate that children in inner city and metropolitan areas may overutilise emergency department services. In addition, this study found that the prediction of hospitalisaion for asthma in children was greater for those with a written asthma management plan.

This paper deals with the TV educational media production. The main objective is to simplify production process and increase productivity. A resource management methodology is proposed. The proposed system is mainly a database of scenes and scripts (procedures) that make the TV Educational Program Unit (TVEPU). The system needs two levels of preparation. The first, which is the primary effort, is done to initiate the scenes database. The second preparation is a continuous work, is done through the system operation, updating, and maintenance. The database initiation contains the analysis and breakdown of the available material to small ingredients that constitutes the starting molecule. This molecule will be used to prepare simple and short units (TV educational program units). By the time and use of the system, the database will enlarge. This will increase system productivity and modify production quality.
