L’élaboration du jambon sec est réalisée depuis des temps immémoriaux par un procédé de conservation dû à la salaison et au séchage. Le produit ainsi obtenu est conditionné, par la qualité de la matière première utilisée et par le processus technologique qu’il a suivi. Il existe différentes technologies pour produire du jambon sec, mais fondamentalement elles essayent toutes d’obtenir un produit qui d’une part peut être maintenu à température ambiante sans compromettre la santé, et d’autre part qui facilite le développement des caractéristiques sensorielles désirées. L’Espagne, l’Italie, l’Allemagne et la France sont les principaux producteurs de jambons secs et en 2000, la production dans l’Union européenne était de plus de 600 000 tonnes. L’objectif de cette présentation est de passer en revue les principaux aspects du processus d’élaboration, en comparant les paramètres liés à la matière première et ceux liés aux technologies qui affectent la qualité du jambon sec.

Mushroom picking has become a widespread autumn recreational activity in the Central Pyrenees and other regions of Spain. Predictive models that relate mushroom production or fungal species richness with forest stand and site characteristics are not available. This study used mushroom production data from 24 Scots pine plots over 3 years to develop a predictive model that could facilitate forest management decisions when comparing silvicultural options in terms of mushroom production. Mixed modelling was used to model the dependence of mushroom production on stand and site factors. The results showed that productions were greatest when stand basal area was approximately 20 m2 ha-1. Increasing elevation and northern aspect increased total mushroom production as well as the production of edible and marketed mushrooms. Increasing slope decreased productions. Marketed Lactarius spp., the most important group collected in the region, showed similar relationships. The annual variation in mushroom production correlated with autumn rainfall. Mushroom species richness was highest when the total production was highest.

Among the traits of breeding interest for the common walnut tree Juglans regia L., characteristics such as timing of budbreak and leaf fall, water-use efficiency and growth performance are regarded as being of utmost relevance in Mediterranean conditions. The authors evaluated intraspecific variation in $\delta$13C (carbon isotope composition, surrogate of intrinsic water-use efficiency, WUE$_{\rm i}$) for 22 J. regia families grown in a progeny test under supplementary irrigation, and investigated whether such variation correlated with climatic indicators of native habitats. The genetic relationships between $\delta$13C, growth and phenology were also assessed during two consecutive years. Overall, the most water-use-efficient families (i.e. with higher $\delta$13C), which originated mainly from drought-prone provenance regions which have a high vapour pressure deficit and low rainfall, exhibited less height growth and smaller DBH. Using a stepwise regression procedure, $\delta$13C was included as the main explanatory variable of genotypic variation in growth traits, together with growing season duration (for DBH in both years) and flushing (for height in 2007). It was concluded that WUE$_{\rm i}$ is largely unconnected to phenology effects in the explanation of growth performance for J. regia, therefore suggesting the opportunity of simultaneously selecting for low WUE$_{\rm i}$ and extended growing period to maximise productivity in non-water-limited environments.
