Tannins are widespread throughout the plant kingdom, occurring as hydrolysable and condensed tannins and at different levels in several animal feeding sources. Recent years have seen an increasing interest in the use of tannin-rich plants and plant extracts in ruminant diets for improving the quality of their edible products. Some results show that this strategy is effective in improving the fatty acid profile of meat and milk, increasing the level of health-beneficial fatty acids as well as enhancing the oxidative stability of the products. However, the use of tannin-rich feed in animal diets requires great care, due to its possible detrimental effects on animal performance and induction of metabolic disorders. Although promising, the results of studies on the effects of tannins on animal performance and quality of their products are still controversial, probably depending on type and chemical structure of tannins, amount ingested, composition of diet, and species of animal. In this chapter, the current knowledge regarding the effect of dietary tannins on animal performance and the quality of their products (meat and milk), particularly on the fatty acid profile, oxidative stability, and organoleptic properties, is reviewed. The tannin chemistry diversity and its occurrence in ruminant diets, as well as its beneficial and adverse effects on ruminants, will be briefly reviewed, and aspects related to oral cavity physiology, saliva production/composition, and postingestive effects will also be discussed.

This research aims to determine the dimensions of motivation and satisfaction, acquired, through the perception in context of job training, by future technicians (students) in the hospitality and tourism industry, particularly by technical courses in the hotel and restaurant sector. The methodology comprises three distinct stages. First were recovered instruments (questionnaires), already validated by other authors of motivation and satisfaction, which had the intention to replicate studies conducted in other scientific knowledge fields, such as tourism. Those instruments were recovered from the reviewed literature conducted about other themes. On second place the measuring instruments were submitted to a pre-test, or rather, were subject of a pioneer study, in order to verify other assumptions such as semantic errors or see if there was the possibility of some prepared questions to be consider invalidated by poor formulation or interpretation. Finally, were applied in three educational institutions who agreed to cooperate on the research, with the reservation that the interviewed needed a mandatory pre-requirement that consisted in conducting a minimum training in work context (TWC). Then, proceed the statistical analysis to support all the empirical part. The results show that, in general, motivation and satisfaction were present during the period of training in work context. To some people it meant a very important period of personal and professional life, concerning the interactions, emotions and involvement with touristic organizations but also the personal and social relationships.

ABSTRACT; People are responsible for the quality of services, much more than ambient, procedures and technologies. Our project tried to analyse through the sociological point of view the performance and satisfaction of bank employees and the factors which are responsible for “services-product" of quality, with high attendance standing out the relation between employees’ satisfaction and clients' satisfaction. Analysing two branches of a bank we tried to identify the satisfaction level and other connected factors. We opted to make a case study describing the branches' characteristics, trying to identify the socio-organizational responsible factors for satisfactionIno satisfaction of employees, dealing with aspects such as work organization, life quality, health/illness complaints, employees’ relationship, wages and reconnaissance. The bank sector and other financial sectors are becoming a "service area", so, our research pointed out the service relations and the competence model seen in the bank sector. The "actors" (bank employees) were observed and interviewed, because they are the main responsible for the informal procedures, the norms and practical work methods, inside the “sociological spaces” where different negotiation procedures occurred, generating new limits and strategic ranges for the resources of the professional group of bank clerks.
