CONSUMERS SENSORY EVALUATION OF MELON SWEETNESS AND QUALITY Agulheiro Santos, A.C, Rato, A.E., Laranjo, M. and Gonçalves, C. ABSTRACT The sensory quality of fruits is made of a range of attributes like sweetness, acidity, aroma, firmness, color. Taste perception and perception threshold of these attributes are variable according to the psychological and cultural development of individuals. To better understand the quality evaluation of melon by consumers, consumers were invited to taste melon samples, in supermarkets in Évora (South region), Lisbon (Central region) and Vila Nova de Gaia (North region). The present work explored the importance given by consumers to sweetness in order to classify the overall quality of melon. Furthermore, the relationship of the chemical evaluation of Total Soluble Solids (TSS) with sweetness of melon was studied. Fruits from the variety Melão branco picked randomly from those that were exposed for sale in supermarkets were used for analysis. Fruits were chinned along the equatorial zone and only the central part of the fruit, opposite to the part that leaned on the soil, was used to obtain homogeneous samples. Consumers were invited to taste four small pieces of each fruit, previously referenced with a code number, and answer a questionnaire with two questions related to sweetness and overall quality. Each question had five possible levels, identified from “Nothing sweet”, to “Extremely sweet”, in one case, and from “Poor” to “Excellent” in the other. Simultaneously, the values of TSS (measured in ºBrix) for each melon used in the study were evaluated by refractometry. This sensory analysis allowed us to point out the following findings: first of all, there is good agreement between the results obtained to classify “Sweetness” and “Overall Quality” (Cohen’s Kappa=53.1%, p<0.001), which means, for example, that fruits with excellent quality are in general extremely sweet. Moreover, fruits with less than 9.6 °Brix are considered of poor quality and nothing sweet, whereas fruits with values between 10 °Brix and 12 °Brix are considered good in terms of overall quality. It seems that the thresholds for the stimulus/intensity of sweetness lied between 10 °Brix to 14 °Brix for this melon variety. Due to economical and scientific limitations, sheep embryo reproductive technologies are less commercially applied than in other animal species. However, it is very clear that, in the near future, those techniques are expected to have a central role in animal production as a consequence of genetic and reproductive demands. One drawback is that results obtained after sheep embryo cryopreservation are unattractive for commercial purposes. It is expected that a successful cryopreservation of sheep embryos can push forward all other reproductive biotechnologies in this species, such as multiple ovulation and embryo transfer (MOET), artificial insemination, or in vitro production of embryos. This paper tries to discuss the current and future perspectives of cryopreservation of in vivo- and in vitro-produced sheep embryos concerning advantages and limitations for its practical use and possible solutions for improving methods to allow a higher survival rate of cryopreserved embryos.

Esta dissertação debruça-se sobre a perspectiva Epidemiológica da Efectividade aplicada ao Programa de Planeamento Urbano Saudável (PPUS) - um programa interdisciplinar e transectorial dado os vários campos e matérias neste envolvido, concebido pelo município de Viana do Castelo e enquadrado no conceito de Cidade Saudável desenvolvido pela Organização Mundial de Saúde. O estudo centrou-se concretamente na acção do Plano Estratégico que previa a alteração do arruamento e circulação rodoviária no centro da cidade, com implicações ao nível do Plano Director Municipal (PDM), cujo objectivo era o de diminuir os níveis de Poluição Atmosférica através da aplicação do Projecto Ambiente Urbano, desenvolvido a partir do referido PPUS. O nosso objectivo foi o de identificar a Acessibilidade, Viabilidade e Conteúdo do Programa como valores inerentes à verificação da pertinência programática para alcançar a sua Efectividade. Para tal definimos a verificação de alguns aspectos estruturais programáticos, nomeadamente os objectivos, as metas, a génese, a acção e o conteúdo do PPUS. Isto tendo em consideração os seus antecedentes, apesar de os sabermos enquadrados em dimensões políticas diferentes, tanto ao nível internacional, como ao nacional e local. Como resultado, concluímos pela não pertinência deste Programa, não excluindo, no entanto, o facto de novos e mais profundos estudos poderem fornecer dados diferentes daqueles que aqui apresentamos. ABSTRACT: This master thesis deals with the Effectiveness of the Epidemiologist perspective applied to the Healthy Urban Planning Program (PPUS) - an interdisciplary and transectorial program involving several fields and subjects - conceived by the city of Viana do Castelo and framed into the concept of Healthy Cities developed by the WHO. The study was based on the action of the Strategic Plan that foresaw the alteration of the streets adjustment and cars circulation in the city centre, with implications on the Urban Environment Project, in order to reduce the atmospheric pollution levels. Our aim was to recognize the Program Accessibility, Viability and Contents as intrinsic values for the verification of its programmatic relevance in terms of effectiveness. ln order to achieve this, we defined the verification of some structural aspects of Program, such as the aims, the goals, the concepts and the contents. This having in mind the previous political dimensions either at international level as well as national and local. As final result, we concluded that the Viana do Castelo's Urban Planning Program was irrelevant. However, this doesn't exclude the possibility of further studies provide different elements from the ones we present here.

No quadro de uma sociologia da ação, procurámos conhecer as políticas públicas do setor social em preparação ou implementadas pela autarquia de Mafra e, simultaneamente, perceber a influência que a interação e o grau de concordância dos diferentes atores sociais envolvidos no desenvolvimento do projeto social do município, exercem no processo de concretização das mesmas, contribuindo, deste modo, para o sucesso do plano de ação social programado para o território, ou, pelo contrário, dificultando a sua implementação. Neste sentido, procurámos encontrar os desafios e, ao mesmo tempo, os obstáculos que se apresentam à Câmara Municipal de Mafra na implementação de um projeto social adequado à realidade da comunidade local, enquanto ator privilegiado no campo da proteção social à população, ação que vem assumindo ao longo das últimas décadas, evidenciando um papel prioritário e determinante na programação das políticas públicas desenvolvidas no território, considerando, igualmente, a influência que a regularidade da representação política dos órgãos autárquicos deste município vem exercendo também na concretização deste processo de intervenção social. Através de uma estratégia metodológica orientada para a realização de um diagnóstico prospetivo, propusemo-nos estudar os elementos principais do sistema de implementação de políticas sociais no Município de Mafra e, neste sentido: a) delimitámos o sistema e estudámos os seus elementos mais pertinentes, nomeadamente, a posição estratégica da autarquia no desenvolvimento de um projeto de intervenção social adequado ao território; b) assinalámos os objetivos estratégicos do plano de intervenção social elaborado pela autarquia em coordenação com outros atores com responsabilidade social no município e posicionámos os atores relativamente a estes objetivos estratégicos; e por fim, c) avaliámos as convergências e as divergências possíveis e a implicação dos atores na concretização dos objetivos deste plano estratégico de intervenção social. As principais conclusões deste estudo referem a existência de uma grande convergência dos atores perante os objetivos do plano de intervenção social programado pela autarquia para o município, tendo em conta a sua participação e intervenção na elaboração e execução deste projeto de âmbito social, sendo identificado como principal obstáculo de implementação, a escassez de recursos financeiros, e, como desafio de execução com maior importância, a cooperação entre a autarquia e os demais parceiros sociais do município reveladora da congregação de esforços conducentes ao desenvolvimento da estratégia de intervenção social mais adequada às necessidades do território; ABSTRACT: In the context of an action sociology sought to know the public policies in the social sector in preparation or implemented by the municipality of Mafra and simultaneously realize the influence that interaction and the degree of agreement of the different social actors involved in the development of the social project city, play in the process of implementation of the same, thus contributing to the success of social action plan scheduled for the territory, or, conversely, hindering its implementation. In this sense, we tried to meet the challenges and at the same time, the obstacles that are presented to the Municipality of Mafra in the implementation of an adequate social project the reality of the local community, as a privileged actor in the field of social protection of the population, action is taking over the past decades, showing a priority and decisive role in the planning of public policies developed in the territory, considering also the influence that the regularity of political representation of local government bodies in this municipality has exercised also in the realization of this process of social intervention. Through targeted methodological strategy for the realization of a prospective diagnosis, we proposed to study the main elements of the system of implementation of social policies in the city of Mafra and in this regard: a) delimit the system and studied the relevant elements, namely, the strategic position of authority in the development of a social intervention project suitable to the territory; b) have pointed out the strategic objectives of social intervention plan drawn up by the municipality in coordination with other actors with social responsibility in the city and we positioned the actors for these strategic objectives; and finally, c) we evaluated the convergences and divergences and the possible involvement of actors in achieving the objectives of this strategic plan of social intervention. The main findings of this study relate to the existence of a large convergence of actors towards the objectives of social intervention plan set by the local authority for the city, taking into account their participation and assistance in the preparation and implementation of the social context of the project, being identified as main obstacle to implementing the scarcity of financial resources, and the challenge of implementing more importantly, cooperation between the municipality and the other social partners in revealing municipality of congregation of efforts leading to the development of more appropriate social intervention strategy to the needs of territory.
