Glazing is a technique used to retard fish deterioration during storage. This work focuses on the study of distinct variables (fish temperature, coating temperature, dipping time) that affect the thickness of edible coatings (water glazing and 1.5% chitosan) applied on frozen fish. Samples of frozen Atlantic salmon (Salmo salar) at -15, -20, and -25 °C were either glazed with water at 0.5, 1.5 or 2.5 °C or coated with 1.5% chitosan solution at 2.5, 5 or 8 °C, by dipping during 10 to 60 s. For both water and chitosan coatings, lowering the salmon and coating solution temperatures resulted in an increase of coating thickness. At the same conditions, higher thickness values were obtained when using chitosan (max. thickness of 1.41±0.05 mm) compared to water (max. thickness of 0.84±0.03 mm). Freezing temperature and crystallization heat were found to be lower for 1.5% chitosan solution than for water, thus favoring phase change. Salmon temperature profiles allowed determining, for different dipping conditions, whether the salmon temperature was within food safety standards to prevent the growth of pathogenic microorganisms. The concept of safe dipping time is proposed to define how long a frozen product can be dipped into a solution without the temperature raising to a point where it can constitute a hazard.

Analogues of Peptaibolin, a peptaibol with antibiotic activity, incorporating α,α-dialkylglycines (Deg, Dpg, and Ac6c) at selected positions were synthesised by MW-SPPS and fully characterized. A control analogue incorporating L-alanine was also prepared. The native peptide and the analogues were studied by fluorescence spectroscopy for their membrane permeating activity. Small unilamellar vesicles (SUVs) of egg phosphatidylcholine/ cholesterol (70:30) containing an encapsulated fluorescence probe (6-carboxyfluorescein) were used as membrane models. The assays of carboxyfluorescein release from SUVs upon peptide addition showed that Peptaibolin-Dpg and Peptaibolin-Ac6c are the most active peptides. These results indicate that the structure of the α,α-dialkylglycines is crucial for the membrane permeating ability of these Peptaibolin analogues.

A ruptura em relação à conceptualização clássica de arte, problematizando o conceito de ‘sublime’ - em que se verificou um abaixamento de valores, da eternidade para a corporalidade - leva-nos ao grotesco e sobre o que se entende por arte, belo e, em consequência, pelo seu contrário. Com este artigo, pretende-se saber de que forma é que o grotesco se dissemina nas pinturas de Paula Rego e os escritos de Adília Lopes e se o que a primeira referiu em relação à obra de Adília e às suas próprias produções, usando o epíteto de “grotesco belo” e possuidor de “muita ternura”, é verificável. As postulações principais sobre o grotesco foram produzidas por Mikhail Bakhtin, Wolfgang Kayser e Victor Hugo. Para além das produções de cada uma das criadoras, foi também observado o cruzamento de ambas no livro “Obra”, uma antologia de Adília Lopes, com imagens da autoria de Rego
