The objective was to study the influence of biological and processing conditions on the evaluation of a conversion factor between fillet length and fish size. This paper presents changes of the length and weight of skinless fillets from various marine fish species in relation to the ice storage time and to the deep freezing / thawing process. The biochemical changes during rigor mortis lead to considerable reduction in length of skinless fillets during ice storage and deep freezing / thawing of fillet blocks. The investigations were undertaken during various cruises of the FFS „Walther Herwig III.

North Sea plaice (Pleuronectes platessa) and dab (Limanda limanda) were experimentally stored in ice for 6 days during the 181th cruise of the FRV “Wather Herwig III. It could be demonstrated that both flat fish species showed the same storage properties and were of a comparable quality until the end of the storage experiment. The quality of both species was determined by sensory assessment of the quality grade, by measuring of the impedance using the German Fischtester VI and the Icelandic RT- tester and pH- and TVB- N- measurements. The average length of North Sea dab is generally small (female: 18,5 ± 3,9 cm; male: 17 ± 2,9 cm), therefore it seemed to be more efficient to process fish portions (eviscerated, head, tail, fins and part of belly flaps removed). The yield by manually processed filets or fish portions from dab is about 30 or 62 %, respectively

The use of differential scanning calorimetry for investigating the yolk proteins of the roe of rainbow trout allows to monitor the influence of maturation and vitellogenesis which modifies the DSC curves with regard to transition temperature and enthalpy. Two endothermic peaks become more and more pronounced with increasing maturation of the roe. However, it is still not known which protein fraction is represented by each of the peaks. DSC curves of yolk protein depend on fish species. They are also influenced by technological treatments. Further investigation is necessary to discover whether or not yolk proteins of other fish species are influenced in the same manner by maturation and vitellogenesis and which protein fraction represent the individual peaks.

The German shrimp fisheries land different types of pro-duce. Besides cooked shrimp for human consumption small (undersized), raw shrimp (industrial shrimp) are landed regionally in the second half of each year for animal feedstuff purposes. They are dried in special plants and form sellable secession from sieving processes aboard shrimping vessels. Grading the cooked shrimp ashore gives the non-marketable fraction of too small shrimp, which is not meant for shelling. That fraction is produced all year alongside landings of shrimp and is used for feed-stuff as well. Both extra fractions are listed in the official statistics since 2000 for the first time. That year industrial shrimp made up 6 % of the total landings while the non-marketable, small cooked shrimp summed up to 7 %, respectively. Though being essential for specialised animal feeds they are commercially of very little value, making up to hardly 2 ‰ of the total turnover of the German shrimp fisheries.

New regulations of the German “Fisch-Hygiene-Verordnung” lay down that all fish except pelagic species have to be gutted immediately after catch or killing, especially fresh water fish from aquaculture. Only gutted fish should be sold to the consumer. At the present time, however, it is not unusual to sell ungutted fish like tropical or mediterranean species from foreign countries, even the EC area. In this investigation the influence of gutting on the fish quality during storage on ice was tested in tench (Tinca tinca) as a model. Quality changes were controlled by sensory, chemical, physical and microbiological assessment. It was shown that for tench there were no differences between gutted and ungutted fish during 12 days of storage on ice.

Fatty acid composition of fish changes according to season, the catching area, the size, the sexuality, the physiological condition and the quantity of fat. The fatty acid composition was evaluated according to size and the catching season of anchovies Engraulis encrasicolus (L. 1758). It was observed that polyunsaturated fatty acids increasmed to highest level and saturated fatty acids decreased to lowest level in March. On the other hand, in April, it was observed that the saturated fatty acids increased to its highest level, monounsaturated fatty acids decreased to its lowest level.

Information is given on the landings of herring and sprat in the Skagerrak/Kattegat and Baltic Sea. Based on assessment units used by the ‘Herring Assessment Working Group for the Area South of 62° N’ and the ‘Baltic Fisheries Assessment’ working group, the total landings are shown for the years 1974 to 1996. Further the quarterly landings for 1996 are listed on national basis by area/Sub-Division. In addition an actual description of the national fleets operating in the Skagerrak/Kattegat and Baltic Sea is given. At least the actual stock development and the catch options estimated by the corresponding working groups for different assessment units is presented.

Colour measurements were performed on smoked Norwegian salmon sides using an objective method based on the CIELab-system. The influence of a freeze/thaw cycle was evaluated. Already after a short frozen storage of 8 hours a signiticant colour difference could be noticed. This was manifested by an increase in lightness as well as in redness and yellowness as result of the freeze/thaw cycle. These colour changes were observable by eyes too.

An iced storage experiment with plaice was conducted during the 1l5th cruise of FRV "Walther Herwig II" in the North Sea. Iced stored plaice were rated by sensory methods as saleable until day 18 of iced storage and as edible until day 20. In addition to the sensory tests the Fischtester VI readings and the pH-value measured in muscle homogenate proved to be useful freshness indicators, while TVB-N is a typical spoilage indicator.

An account of the occurrenee of tainting in fish and seafood with special consideration of spring spawning herring from the Baltic Sea (estuary of the river Oder) is given. About 26 % of the herring samples examined by sensory methods showed tainting. In general the intensity of taint was weak or moderate and weaker as observed years ago. Also in fishery products (pickled herring, deep fried herring in marinade) processed from tainted herrings the same or a similar sensory intensity of taint as in the raw material was observed. The source of taint is not dear. A pollution with halogenphenols from the sea water could be possible. In further investigations we will monitor the further development and try to identify the tainting compounds.
