The precious coral fishery in Hawaii and the Western Pacific consists of one industry but two distinct and separate fisheries. The first is the harvest of black coral by scuba divers from depths of 30-100 m. The second is a fishery for pink and gold coral at depths between 400 and 1500 m and employs either a human-operated submersible that permits selective harvest or tangle net dredges which are nonselective. The modern history of these fisheries date from 1958 until the present. In this paper the ecology, life history. and management of the dominant species that make up these fisheries are reviewed. Research needs of the fisheries and the economic and future prospects of the precious coral industry are also described. At the present, the precious coral jewelry industry in Hawaii (all species) is valued at about $25 million at the retail level.

A method of handling hooked fish at intermediate depth was developed for species which occur deeper than conventional scuba depths. Juvenile pink snappers, Pristipomoides filamentosus, were hauled from 65-100 m to a depth of only 30 m, where the ambient pressure change was a fraction of that produced by hauling fish to the sea surface. This method afforded a unique opportunity to acoustically tag deepwater, physoclistous fish without the need to alter the fish's original swim bladder volume and without the high risk of further injury associated with surface handling. Tagged P. filamentosus survived and behaved well and were tracked successfully. This basic method could be applied to a variety of deepwater species in a number of research approaches, including tagging and dietary studies.

The pink shrimp, Haliporoides triarthrus, is an important species in the deep-water shrimp fishery in Mozambique. Total catches are in the range of 1,500 to 2,700 tons, with the pink shrimp accounting for 70-90%. Estimates of growth parameters and of natural mortality are used for a preliminary assessment of the fishery, based on length-structured virtual population analysis and yield-per-recruit analyses. With an arbitrarily chosen terminal fishing mortality F, the results indicate a situation of overfishing, but realistic parameters must be acquired in order to diagnose the state of the stock

A method for the preparation of fish pickles from a lean variety of fish namely pink perch (Nemipterus japonicus) is described. Dipping the fish in 10% sodium chloride solution containing 6% acetic acid before pickling, was found desirable for retaining the meaty texture of the product. The product has no fish smell or flavour and has a shelf life of more than six months at ambient temperatures and scored very well in organoleptic tests.

Silver carp, Hypophthalmichthys molitrix is contributing significantly to the total production of fish through aquaculture in Bangladesh. However, its low market price has become a serious concern to the fish farmers. The suitability of silver carp mince for the production of various value-added products (VAPs) - surimi, fish sausage, fish burger and fish stick was studied during April-September 2000 to ensure more appropriate and profitable utilization of silver carp. Surimi/frozen mince block was produced by washing the silver carp mince with 0.1% NaCl for 7-8 min (4-5 min agitation and 3-4 min settling). A two-step heating schedule for incubation at 50°C for 2 h and cooking at 95°C for 30 min gave high textured good quality consumer product. With the addition of cryoprotectants, surimi could be kept frozen for 5 months without loosing [sic] much of its textural and sensory qualities. Mince-mix and a batter with different ingredients and spices were formulated to produce fish burger using potato smash as the binding agent. Fish flake-mix and a batter with different ingredients and spices were formulated to prepare fish stick using both potato starch and potato smash as filler ingredients. Unwashed and washed frozen mince block or fresh flesh of silver carp was used to prepare fish sausage by heating at 100°C for 1 h after incubating at 50°C for 2 h. A spice-mix formulated with various local spices at the rate of 1.0-1.2% gave good texture and flavor to the sausage. A good-appeared sausage-pink color was developed by combining three food-grade colors of asthaxanthin. Products prepared with potato starch, potato smash and rice smash had an acceptable bacterial load in refrigeration (5°C) for up to 8 days and in room temperature (28°C) for up to 3 days. No coliform bacteria were found in the products prepared.

Blanching is an important operation in the shrimp canning process, in order to bring down the moisture content of the product to the required level, to allow the proteins to coagulate and to give proper texture, shape and characteristic pink colour to the meat. It has been observed that among other factors responsible for fluctuations in the drained weight in the canned prawns, concentration of brine used for blanching and the duration of blanching are important (Varma, Chaudhury and Pillai 1961). This paper reports the results of a preliminary study on the biochemical composition and nutritional charactersitics of fish solubles from oil sardines (Sardinella longiceps) and white tailed pink perch (Nemipterus japonicus). The nutritional quality of sardine solubles has been evaluated by feeding trials using albino rats also. The studies have shown that compared to a control group of rats whose diet had casein as the sole source of protein, a group of rats in whose diet dried sardine solubles replaced half of the casein, had a noticeably higher growth rate. This higher growth rate was not prominent in the early stages of growth (4-7 weeks). But, during later stages (7-10 weeks), solubles incorporated diet supported a distinctly higher growth rate. This effect was more pronounced in female rats (17% over the control group) compared to the male rats (4% over the control group). Fish solubles are found to be poor sources of essential amino acids. Thus, the observed increase in growth rate is higher than the rate expected from the amino acid make up. This probably supports the view expressed by workers elsewhere that fish solubles contain some unidentified growth factors.

Again the washing process was repeated three times for oil sardine and mackerel; but two times for pink perch and croaker. The washed meat was mixed with 2.5% NaC1 and set at +5°C and +40°C for 1, 2 and 3hrs. The gel strength and expressible water content was measured. Basing on this study, setting temperature at +40°C was selected and with respect to time 1hr for sardine and mackerel and 3hrs for pink perch and croaker was selected.
