Length-weight relationship of the freshwater fish of Pamba River, Nandus nandus (Ham) has been worked out. The results showed that the slope values and elevations were not significant and hence a combined regression equation has been calculated for both the sexes (Log W=2.4130 Log L -0.3306). The’t’ test analyses were conducted and found that the growth departs significantly from the isometric growth. Thus the formula W=aL super(n) has to be applied in calculating the length-weight relationship of this species.

The effect of addition of pure chitin from prawn shell, deproteinised prawn shell, demineralized prawn shell and dry prawn shell in casein based control diet on albino rats was studied. The diets contained 0.5% chitin and 10% protein. The results obtained in the studies show that the weight gain and feed conversion were maximum in the control diet. While addition of pure chitin slightly brought down the weight gain, addition of deproteinsed prawn shell have the minimum weight gain showing that presence of minerals adversely affects both feed consumption and weight gain in the case of albino rats. Although it was reported that addition of pure chitin at 0.5% in the commercial feed of broiler chicken gave increased weight, in the case of albino rats the weight gain was slightly reduced compared to control diet.

The chemical composition and nutritional quality of Peristedion adeni and Peristedion weberi, two unexploited fish species available in abundance in the Exclusive Economic Zone of India are reported. Size of the fish is small and separation of edible meat is difficult. Best method of utilization of the fish is conversion into meal. Meals having crude protein content varying from 55.0 to 57.0%, ash content from 17.0 to 19.6% and fat content from 17.7 to 18.1% can be prepared from the two species of fish. PER values of the meals are lower than that of casein. Amino acid analysis showed that isoleucine, leucine and valine are not present in the meals in adequate quantities compared to the FAO/WHO (1973) prescribed pattern.

Protein powders were prepared from processing waste of prawns either by mechanically squeezing the shell and freeze drying the resultant aqueous extract or by treating the shell with 0.5% sodium hydroxide, filtering it and freeze drying the filtrate. Comparative studies on the proximate composition, amino acid profile, consumer acceptability and nutritional quality of the protein powders showed that the product prepared by freeze drying of the press liquor obtained by passing the waste through a hand operated expeller is better in all aspects studied than the product prepared by mild alkali extraction.

Results of mesh selectivity experiments on B. tor are presented in this paper. Selectivity curve on the basis of maximum girth of fish in relation to perimeter of mesh was worked out. The optimum girth/mesh perimeter ratio was found to be 1.31. A linear regression of G+0.445L=12.8 was fitted for conversion of length to girth.

A simple and cheap process for the preservation of mussel meat by marinading is described. The method involves blanching the mussel meat shucked from depurated live mussels in 3% boiling sodium chloride solution for 5 min followed by preserving it in a solution containing 3% acetic acid and 3% sodium chloride. The product stored in closed glass jars has a storage life of approximately 16 weeks at room temperature (23-30°C), after which the quality began to deteriorate. Texture of the meat is least affected and closely resembles that of the fresh meat.

Two species of unexploited deep sea fish Peristedion adeni and Peristedion weberi caught from the Exclusive Economic Zone of India were subjected to fermentation at ambient temperature (30 ± 2°C) in the presence of salt in 4:1 ratio. Periodical analysis of the fermented product was carried out up to one year. The sauces had brownish yellow colour and conformed to special grade of the standards prescribed by the Food and Drug Administration. Further solubilization of protein after 9 month's maturation was not appreciable.

Moisture and salt content in cured fish products from various centres on the west coast of India are compared. The moisture contents varied in samples from different centres, whereas the salt content remained more or less uniform. The deviations from the Indian standard specification were highly significant in both cases. The high mean moisture values and low salt values with respect to accepted standards are indicative of the improper drying and poor salting.
