Laajennetun lähettämön sisäisten materiaalivirtojen hallinta leipomoteollisuudessa

Työn tavoitteena on esitellä suunnitelma VAASAN Oy:n Vantaan leipomon laajennetun lähettämön materiaalivirtojen hallinasta. Suunnitelma pohjautuu laskelmiin, jotka sisältävät arviot lähettämön kasvavista materiaalivirroista sekä niiden vaikutuksista lähettämön toimintaan. Laskelmien pohjalta määritetään erikokoisten varastointialueiden sijoittelu, varastointikapasiteetit sekä kunkin alueen kuormittuneisuudet. Teoriaosuus käsittelee työn taustaksi keskeisimpiä teorioita materiaalivirtojen hallinnasta, layoutsuunnittelusta sekä lähettämön toiminnoista. Kunkin osa-alueen avulla voidaan vaikuttaa yrityksen materiaalivirtojen hallintaan. Teoriaosuutta koskevaa tietoa on hankittu logistiikan alan kirjallisuudesta, erilaisista tieteellisistä julkaisuista sekä verkkomateriaaleista. Empiirisessä osuudessa esitellään aluksi Vantaan leipomon lähettämön nykyinen toimintaperiaate. Tämän jälkeen arvioidaan laajennetun lähettämön kasvavia materiaalivirtoja. Työn tuloksena esitellään laskelmia apuna käyttäen suunnitelma laajennetun lähettämön materiaalivirtojen hallinnasta.

The objective of this thesis is to introduce a plan how to manage material flow in expanded dispatch department in VAASAN Oy Vantaa bakery. The plan is based on the calculations which include estimates on growing material flows and how the material flow would effect the operation of the dispatch department. The calculations are use on determining layout, storage capacity and the effects on storage capacity of different sized storage areas. The theoretical part discusses essential theories on material flow management, layout planning and operations of the dispatch department. The company’s material flow management can be influenced by each of these three fields. The theoretical background has been collected from literature on logistics industry, scientific publications and online material. The empirical part of the thesis first introduces the current operation of the dispatch department. After that the empirical part presents estimates of growing material flow. As a result, thesis presents material flow management plan of the expanded dispatch department on the basis of the material flow calculations.
