An experiment was carried out to evaluate the performance of piglets fed rations containing fermented milk and zinc and copper amino acid complex. Sixty four piglets, littermates, were used. The experimental design was based on random block with two dietary treatments. One of these contained a basal diet (DB) with ZnO e CuSO 4 and the other one with the DB, but without CuSO 4 and with the addition of fermented milk and zinc and copper amino acid complex (SLF Lact +ZnCuAA). There were eight replicate pens per treatment, and pigs were grouped at 4 per pen. The SLF Lact + ZnCuAA didn't not affect (p>0.05) final live weight of the piglets. However, live weight was different (p<0.01) between males and females (24.3 vs. 24.0 kg) at end of experiment. The feed intake of animals feed with SLF Lact+ZnCuAA was higher (p<0.01) in 8% in the first 14 days (0.261 vs. 0.239 kg/d), 15% from 15 to 28 days (0.756 vs. 0.675 kg/ d) and 12% from 29 to 42 days (1.091 vs. 0.962 kg/ d) compared to control group. Daily average feed intake in the experimental period was 11% higher (p<0.01) for the animals fed with the diet contained SLF Lact+ZnCuAA. Weight gain of the treatment with SLFL act+ZnCuAA was higher (p<0.01) by 14% from 0 to 14 days (0.176 vs. 0.152 kg/d), 11% from 15 to 28 days (0.564 vs. 0.500 kg/d) and 12% from 29 to 42 days (0,572 vs. 0,501 kg/d). Average daily weight gain of 42 days of trial of treatment with SLF Lact +ZnCuAA was 12% higher (p<0.01) compared to control group (0.437 vs. 0.384 kg/d). Feed conversion ratio was 8% lower (p<0.01) for treatment with SLF Lact+ZnCuAA in the first 14 days (1.487 vs. 1.614). Supplementation with fermented milk and zinc and copper amino acid complex in diets containing zinc oxide improved growth performance of weanling piglets.

In order to improve the quality and safety of food, the active packaging emerges as a new technology based on the release of composites beneficial to food products. Thus, biodegradable films incorporated with active substances have the function of acting as a barrier to external elements, protecting the product and increasing its shelf life. They are formulated from proteins, polysaccharides, lipids or from the combination of these compounds. However, there is a need to improve the performance properties of these packages. Nanotechnologies, then, emerges with the study of many nanoparticles as additives to modify the performance of biodegradable polymers. With this, we aimed at developing and active antioxidant film of corn starch blenders and whey protein isolate with rosemary essential oil or microcapsules of rosemary essential oil reinforced with sodium montmorillonite (MMTNa + ) nanoparticles by extrusion. The films were developed and characterized in a first stage for the selection of the best polymeric blender using the following analyses: water vapor permeability (WVP), machanical properties; optical, thermogravimetry (TG), differential scanning calorimetry (DSC), x-ray diffraction (XRD) and scanning electron microscopy (SEM). In the second stage, montmorillonite clay nanoparticles and rosemary essential oil were added as reinforcement to evaluate its antioxidant effect. In a third stage, we studied the addition of microcapsules of rosemary essential oil (MR) as a form of protecting the active agent and its antioxidant potential in the films. The results indicate that the development of p olymeric blender with 30% of corn starch substitution is the most indicated for future work. The addition of rosemary essential oil or microcapsule of rosemary essential oil allowed for the obtaining of nanocomposites with antioxidant potential for application in food packages.

Functional foods are defined as those that provide additional benefits to consumers. The market for foods with functional properties is expanding, supported by scientific evidences, which leads the developing of different special foods. This market segment is related to the innovations, as well as the traditional functional dairy and non dairy products, gain traction in the marketplace for innovative products like based whey sports beverage. Besides the functionality of muscle protein synthesis, these beverages are entering into areas such as clinical nutrition and satiety. Thus, it can be supposed that the composition and technological versatility of the whey support the use asinnovative ingredient for foods and beverages. This review aim to supply an overview about functional foods, mainly the segment of whey based beverages. The success of this new nutritional approach is close related to the requirement to identify, to characterize and to develop methodologies to measure and to validate more precisely the relevant functional markers, making them open for a public domain.

Avaliou-se o efeito da substituição parcial do farelo de soja (FS) por hidrolisado protéico do conteúdo celular de levedura (HPCCL), proteína isolada de soja (PIS) ou hidrolisado protéico de mucosa intestinal de suínos (HPMIS) em dietas com leite em integral (LPI) sobre o desempenho, os níveis séricos de uréia e a incidência de diarréia em leitões desmamados. Foram utilizados 40 leitões desmamados aos 21 dias de idade (20 machos castrados e 20 fêmeas), distribuídos em delineamento em blocos ao acaso, com cinco tratamentos (dietas) e oito repetições. As dietas foram fornecidas em três fases, de acordo com a idade dos animais: fase pré-inicial 1 (21 aos 35 dias de idade): dieta à base de milho e farelo de soja (FS); dieta com 15,0% LPI; dieta com 15,0% LPI + 3,5% HPMIS; dieta com 15,0% LPI + 5,0% de PIS; dieta com 15,0% LPI + 5,0% HPCCL. Na fase pré-inicial 2 (36 aos 49 dias de idade), foi mantida a dieta à base de milho e farelo de soja e o LPI foi reduzido para 7,5% em todas as dietas, o HPMIS para 1,5%, a PIS para 4% e o HPCCL foi mantido em 5%. Na fase inicial (50 aos 70 dias de idade), foi mantida a dieta à base de milho e farelo de soja, o LPI foi retirado de todas as dietas e os animais que nas fases pré-inicial 1 e 2 foram alimentados com as dietas contendo LPI e LPI + HPMIS passaram a ser alimentados com a dieta à base de milho e farelo de soja; a PIS foi reduzida para 3% e o HPCCL para 2,5%. No período de 21 a 35 dias, a dieta LPI + PIS proporcionou maior ganho diário de peso e melhor conversão alimentar. Nas fases seguintes, não houve diferença no desempenho entre as dietas. Até cinco dias as o desmame, os animais alimentados com as rações FS e LPI + PIS apresentaram menor índice de diarréia. Os níveis séricos de uréia não foram influenciados pelas dietas. A utilização de PIS, HPMIS e HPCCL em dietas complexas contendo leite em pode consistir em alternativa biologicamente viável em dietas para leitões.

Objetivou-se verificar o efeito da substituição do leite desnatado em pelo isolado protéico de soja em rações para leitões desmamados aos 21 dias de idade sobre o desempenho, a morfometria intestinal e relação peso de pâncreas/peso de carcaça. Foram utilizados 80 leitões desmamados, no período de 21 a 35 dias de idade, distribuídos em delineamento de blocos ao acaso com cinco tratamentos, quatro repetições e quatro animais por unidade experimental (dois machos e duas fêmeas), totalizando 16 leitões por tratamento. Os tratamentos consistiram na substituição protéica (0, 25, 50, 75 e 100%) do leite desnatado em pelo isolado protéico de soja. Todas as dietas apresentaram mesmo conteúdo protéico (20,00%), energético (3420 kcal ED/kg de dieta) e de lactose (8,16%). Foram analisados parâmetros de desempenho (ganho de peso, consumo e conversão alimentar) e relação entre peso de pâncreas/peso de carcaça. Realizou-se análise morfométrica do intestino delgado, abatendo-se seis animais/tratamento ao término do período experimental. Observou-se efeito quadrático dos tratamentos para ganho de peso e conversão alimentar e efeito linear negativo para consumo de ração. Não houve alterações morfométricas para altura de vilosidade, profundidade de criptas e para a relação entre peso de pâncreas/peso de carcaça. Concluiu-se que o isolado protéico de soja pode substituir a proteína do leite em desnatado em 34,25% para máximo ganho de peso e 51,00% para melhor conversão alimentar. A substituição total da proteína láctea pela proteína da soja não afetou a integridade do vilo e a relação entre peso de pâncreas/peso de carcaça.

In this work we used chemometric tools to classify and quantify the protein content in samples of milk powder. We applied the NIR diffuse reflectance spectroscopy combined with multivariate techniques. First, we carried out an exploratory method of samples by principal component analysis (PCA), then the classification of independent modeling of class analogy (SIMCA). Thus it became possible to classify the samples that were grouped by similarities in their composition. Finally, the techniques of partial least squares regression (PLS) and principal components regression (PCR) allowed the quantification of protein content in samples of milk powder, compared with the Kjeldahl reference method. A total of 53 samples of milk powder sold in the metropolitan areas of Natal, Salvador and Rio de Janeiro were acquired for analysis, in which after pre-treatment data, there were four models, which were employed for classification and quantification of samples. The methods employed after being assessed and validated showed good performance, good accuracy and reliability of the results, showing that the NIR technique can be a non invasive technique, since it produces no waste and saves time in analyzing the samples

In this work calibration models were constructed to determine the content of total lipids and moisture in powdered milk samples. For this, used the near-infrared spectroscopy by diffuse reflectance, combined with multivariate calibration. Initially, the spectral data were submitted to correction of multiplicative light scattering (MSC) and Savitzsky-Golay smoothing. Then, the samples were divided into subgroups by application of hierarchical clustering analysis of the classes (HCA) and Ward Linkage criterion. Thus, it became possible to build regression models by partial least squares (PLS) that allowed the calibration and prediction of the content total lipid and moisture, based on the values obtained by the reference methods of Soxhlet and 105 ° C, respectively . Therefore, conclude that the NIR had a good performance for the quantification of samples of powdered milk, mainly by minimizing the analysis time, not destruction of the samples and not waste. Prediction models for determination of total lipids correlated (R) of 0.9955, RMSEP of 0.8952, therefore the average error between the Soxhlet and NIR was ± 0.70%, while the model prediction to content moisture correlated (R) of 0.9184, RMSEP, 0.3778 and error of ± 0.76%
