This research was designed to study the elaboration of chicken loaf with ground meat. The products were elaborated in laboratory scale utilizing broiler meat bought at the market. The products were conditioned in vacuum-packages and stored for 133 days at 5 and 10 degrees C. Chemical, sensorial and microbiological analyses of the elaborated products were performed. The storage temperature affected the total bacterial counts, pH, characteristic aroma and rancid aroma. In both treatments (storage temperature: 5 and 10 degrees C), depletion of nitrites, reaching 24 ppm in 133 days of storage, and exudate formation after 77 days were observed. The storage of chicken leaves, vacuum-packaged, at 5 degrees C for a maximum of 77 days is recommended.

Mangoes cv. Keitt were individually sealed in a heat-shrinkable polyolefin film (D-955) and a low-density polyethylene film (LDPE), stored for 0-5 weeks at 12°C and 17°C, and then ripened unwrapped at 22°C. Weight loss of packaged mangoes was significantly lower than that of the non-wrapped control. A sensory panel ranked the mangoes for overall eating quality and appearance. D-955 and LDPE film-sealed mangoes and control had shelf lives of 33, 15 and 7 days at 12°C and 17,10 and 7 days at 17°C, respectively.

The objective of this study was to evaluate the shelf-life of peeled giant river prawn Macrobrachium rosenbergii stored directly in contact with ice (DCI), and without direct contact with ice (WCI). The prawns from DCI treatment showed an intense leaching of non-protein nitrogen (NPN) and total volatile bases nitrogen (TVB-N), thus suggesting that NPN or TVB-N should not be used as freshness indicators of peeled tails stored directly in contact with ice. Loss of flavor and a quick texture tactile decrease with time occurred in both treatments. The shelf-life of peeled tails prepared from M. rosenbergii was 7 days for DCI and 10 days WCI. © 2006 by The Haworth Press, Inc. All rights reserved.

Fresh-cut fruit products, including carambola (Averrhoa carambola L.) have limited marketability due to cut surface browning attributed to oxidation of phenolic compounds by enzymes such as polyphenol oxidase (PPO). The objective of this study was to evaluate postharvest changes of carambola slices in three different packagings. Carambola fruit (cv. Fwang Tung) were picked from the orchard of Estação Experimental de Citricultura de Bebedouro at mature-green stage. Fruit were washed, dipped in NaOCl solution (200 mg.L -1 for 5 minutes), and stored overnight at 10°C. Fruit were manually sliced into pieces of approximately 1 cm. Slices were rinsed with NaOCl solution at 20 mg.L-1, drained for 3 minutes, and packaged in polyethylene terephthalate (PET) trays (Neoform N94); polystyrene trays covered with PVC 0.017 mm (Vitafilm - Goodyear); and vacuum sealed polyolefin bags (PLO, Cryovac PD900). The packages were stored at 6.8°C and 90%RH for 12 days and samples taken every 4 days. PET trays and PVC film did not significantly modify internal atmosphere and the high water permeability of PVC led to more rapid slice desiccation. PPO activity was lower when slices were packaged in PLO vacuum sealed bags, which reduced discolouration and led to better appearance maintenance for up to 12 days.

The shelf life of the organic passion fruit pulp, both fresh and pasteurized at 70C and 90C and stored under refrigeration, was evaluated. The heat treatment did not affect the sensory and physicochemical characteristics of the pasteurized pulps when compared with the fresh pulp, except for the ascorbic acid content. The pulps were also microbiologically safe. The pulps pasteurized at 70 and 90C were suitable for consumption for a minimum shelf-life period of 207 days of storage under refrigeration and for the fresh pulp it was attributed a shelf-life period of 60 to 90 days. The pulp pasteurized at 70C showed higher acceptance scores for all the attributes and purchase intention scores, suggesting a more stable behavior and higher sensory quality. Practical Applications: This work intended to evaluate the influence of the minimum pasteurization on the sensory acceptance and microbiological and physicochemical characteristics of the organic passion fruit pulp stored under refrigeration, with the aim to identify the shelf life. Heat treatment is one of the processes used for food preservation. Lower pasteurization temperature than that used by the Brazilian industries and storage under refrigeration showed to be appropriate for passion fruit pulp quality. In this way, the microbiological, physicochemical and sensory features of passion fruit were preserved. This work can be used as a reference for passion fruit pasteurization, which is able to increase the shelf life of this fruit while preserving its desirable original features. Growth potential (delta) is defined as the difference between the population of a microorganism at the end of shelf-life of specific food and its initial population. The determination of 6 of Salmonella and Listeria monocytogenes in RTE vegetables can be very useful to determine likely threats to food safety. However, little is known on the behavior of these microorganisms in several RTE vegetables. Therefore, the aim of this study was to determine the delta of both pathogens in nine different types of RTE vegetables (escarole, collard green, spinach, watercress, arugula, grated carrot, green salad, and mix for yakisoba) stored at refrigeration (7 degrees C) and abuse temperature (15 degrees C). The population of aerobic microorganisms and lactic acid bacteria, including those showing antimicrobial activity has been also determined. Results indicated that L monocytogenes was able to grow (delta >= 0.5 log(10)) in more storage conditions and vegetables than Salmonella. Both microorganisms were inhibited in carrots, although a more pronounced effect has been observed against L monocytogenes. The highest 5 values were obtained when the RTE vegetables were stored 15 degrees C/6 days in collard greens (delta=3.3) and arugula (delta=3.2) (L monocytogenes) and arugula (delta=4.1) and escarole (delta=2.8) (Salmonella). In most vegetables and storage conditions studied, the counts of total aerobic microorganisms raised significantly independent of the temperature of storage (p<0.05). Counts of lactic acid bacteria were higher in vegetables partially or fully stored at abuse temperature with recovery of isolates showing antimicrobial activity. In conclusion, the results of this study show that Salmonella and L monocytogenes may grow and reach high populations in RTE vegetables depending on storage conditions and the definition of effective intervention strategies are needed to control their growth in these products. Maintaining the postharvest quality of whole and fresh-cut fruit during storage and distribution is the major challenge facing fruit industry. For this purpose, industry adopt a wide range of technologies to enable extended shelf-life. Many factors can lead to loss of quality in fresh product, hence the common description of these products as ‘perishable’. As a consequence normal factors such as transpiration and respiration lead ultimately to water loss and senescence of the product. Fruits and vegetables are living commodities and their rate of respiration is of key importance to maintenance of quality. It has been commonly observed that the greater the respiration rate of a product, the shorter the shelf-life. The principal problem for fresh-cut fruit industries is the relative shorter shelf-life of minimally processed fruit (MPF) compared to intact product. This fact is strictly connected with the higher ethylene production of fruit tissue stimulated during fresh-cut processing (peeling, cutting, dipping). 1-Methylcyclopropene (1-MCP) is an inhibitor of ethylene action and several researches have shown its effectiveness on the inhibition of ripening and senescence incidence for intact fruit and consequently on their shelf-life extension. More recently 1-MCP treatment has been tested also for shelf-life extension of MPF but discordant results have been obtained. Considering that in some countries 1-MCP is already a commercial product registered for the use on a number of horticultural products, the main aim of this actual study was to enhance our understanding on the effects of 1-MCP treatment on the quality maintenance of whole and fresh-cut climacteric and non-climacteric fruit (apple, kiwifruit and pineapple). Concerning the effects of 1-MCP on whole fruit, was investigated the effects of a semi-commercial postharvest treatment with 1-MCP on the quality of Pink Lady apples as functions of fruit ripening stage, 1-MCP dose, storage time and also in combination with controlled atmospheres storage in order to better understand what is the relationship among these parameters and if is possible to maximize the 1-MCP treatment to meet the market/consumer needs and then in order to put in the market excellent fruit. To achieve this purpose an incomplete three-level three-factor design was adopted. During the storage were monitored several quality parameters: firmness, ripening index, ethylene and carbon dioxide production and were also performed a sensory evaluations after 6 month of storage. In this study the higher retention of firmness (at the end of storage) was achieved by applying the greatest 1-MCP concentration to fruits with the lowest maturity stage. This finding means that in these semi-commercial conditions we may considerate completely blocked the fruit softening. 1-MCP was able to delay also the ethylene and CO2 production and the maturity parameters (soluble solids content and total acidity). Only in some cases 1-MCP generate a synergistic effect with the CA storage. The results of sensory analyses indicated that, the 1-MCP treatment did not affect the sweetness and whole fruit flavour while had a little effect on the decreasing cut fruit flavour. On the contrary the treated apple was more sour, crisp, firm and juicy. The effects of some treatment (dipping and MAP) on the nutrient stability were also investigated showing that in this case study the adopted treatments did not have drastic effects on the antioxidant compounds on the contrary the dipping may enhance the total antioxidant activity by the accumulation of ascorbic acid on the apple cut surface. Results concerning the effects of 1-MCP in combination with MAP on the quality parameters behaviour of the kiwifruit were not always consistent and clear: in terms of colour maintenance, it seemed to have a synergistic effect with N2O MAP; as far as ripening index is concerned, 1-MCP had a preservative effect, but just for sample packed in air.

"Bioactive compounds" are extranutritional constituents that typically occur in small quantities in food. They are being intensively studied to evaluate their effects on health. Bioactive compounds include both water soluble compounds, such as phenolics, and lipidic substances such as n-3 fatty acids, tocopherols and sterols. Phenolic compounds, tocopherols and sterols are present in all plants and have been studied extensively in cereals, nuts and oil. n-3 fatty acids are present in fish and all around the vegetable kingdom. The aim of the present work was the determination of bioactive and potentially toxic compounds in cereal based foods and nuts. The first section of this study was focused on the determination of bioactive compounds in cereals. Because of that the different forms of phytosterols were investigated in hexaploid and tetraploid wheats. Hexaploid cultivars were the best source of esterified sterols (40.7% and 37.3% of total sterols for Triticum aestivum and Triticum spelta, respectively). Significant amounts of free sterols (65.5% and 60.7% of total sterols for Triticum durum and Triticum dicoccon, respectively) were found in the tetraploid cultivars. Then, free and bound phenolic compounds were identified in barley flours. HPLCESI/ MSD analysis in negative and positive ion mode established that barley free flavan-3- ols and proanthocyanidins were four dimers and four trimers having (epi)catechin and/or (epi)gallocatechin (C and/or GC) subunits. Hydroxycinnamic acids and their derivatives were the main bound phenols in barley flours. The results obtained demonstrated that barley flours were rich in phenolic compounds that showed high antioxidant activity. The study also examined the relationships between phenolic compounds and lipid oxidation of bakery. To this purpose, the investigated barley flours were used in the bakery production. The formulated oven products presented an interesting content of phenolic compounds, but they were not able to contain the lipid oxidation. Furthermore, the influence of conventional packaging on lipid oxidation of pasta was evaluated in n-3 enriched spaghetti and egg spaghetti. The results proved that conventional packaging was not appropriated to preserve pasta from lipid oxidation; in fact, pasta that was exposed to light showed a high content of potentially toxic compounds derived from lipid oxidation (such as peroxide, oxidized fatty acids and COPs). In the second section, the content of sterols, phenolic compounds, n-3 fatty acids and tocopherols in walnuts were reported. Rapid analytical techniques were used to analyze the lipid fraction and to characterize phenolic compounds in walnuts. Total lipid chromatogram was used for the simultaneous determination of the profile of sterols and tocopherols. Linoleic and linolenic acids were the most representative n-6 and n-3 essential dietary fatty acids present in these nuts. Walnuts contained substantial amounts of γ- and δ-tocopherol, which explained their antioxidant properties. Sitosterol, Δ5-avenasterol and campesterol were the major free sterols found. Capillary electrophoresis coupled to DAD and microTOF was utilized to determine phenolic content of walnut. A new compound in walnut ((2E,4E)- 8-hydroxy-2,7-dimethyl-2,4-decadiene-1,10-dioic acid 6-O-β-D-glucopiranosyl ester, [M−H]− 403.161m/z) with a structure similar to glansreginins was also identified. Phenolic compounds corresponded to 14–28% of total polar compounds quantified. Aglycone and glycosylated ellagic acid represented the principal components and account for 64–75% of total phenols in walnuts. However, the sum of glansreginins A, B and ((2E,4E)-8-hydroxy- 2,7-dimethyl-2,4-decadiene-1,10-dioic acid 6-O-β-D-glucopiranosyl ester was in the range of 72–86% of total quantified compounds.

Questa relazione finale è stata frutto di un lavoro sperimentale svolto in collaborazione con un’azienda del territorio ed ha avuto come obiettivo principale quello di verificare i parametri qualitativi e compositivi di una nuova tipologia di salume in fase di studio. L’azienda sta studiando una nuova tipologia di “prodotto funzionale” addizionando componenti ad attività nutraceutica al salame ottenuto da sole parti magre di suino. L’intenzione dell’azienda è di arricchire il proprio prodotto con acidi grassi polinsaturi della serie omega-3 (da olio di semi di lino), noti per gli effetti benefici che possono esercitare sulla salute umana. A questo scopo, sul prodotto di nuova formulazione (ed in parallelo sul prodotto a formulazione classica e su un prodotto del tutto simile commercializzato da un’altra azienda) sono state effettuate sia la determinazione della percentuale lipidica, al fine di individuare il quantitativo totale di grasso, che una caratterizzazione gascromatografica del profilo quali-quantitativo in acidi grassi, analsi fondamentale per verificare la conformità con i requisiti indicati dal Reg. 1924/06, e successive modifiche, previsti per le indicazioni da inserire in etichetta (claims). Inoltre, è stato importante controllare che la concentrazione voluta di acido alfa-linolenico si mantenga tale durante tutto il periodo di shelf-life del prodotto (45 gg), perciò per soddisfare quest’ultima finalità, le analisi sono state eseguite sia all’inizio (T0) che alla fine (T1) della vita commerciale del prodotto. E’ apparso poi fondamentale monitorare un possibile decadimento/modifica della qualità organolettica del prodotto di nuova formulazione, a causa del possibile aumento di ossidabilità della frazione lipidica causata da una maggiore presenza di acidi grassi polinsaturi; ed infine, con l’intento di verificare se la nuova formulazione potesse comportare una variazione significativa delle caratteristiche sensoriali del prodotto, sono stati condotti un test descrittivo quantitativo (QDA), in grado di descrivere il profilo sensoriale del prodotto ed un test discriminante qualitativo (metodo triangolare) capace di valutare l’eventuale comparsa di cambiamenti in seguito alle modifiche apportate al prodotto; per ultimo è stato poi eseguito un test affettivo quantitativo (test di preferenza, condotto su scala di laboratorio) in grado fornire informazioni sul gradimento e di evidenziare i principali vettori che guidano le scelte dei consumatori. I risultati delle analisi chimiche e sensoriali, eseguite per soddisfare tali richieste, hanno evidenziato come il salume presenti un quantitativo di tali acidi grassi polinsaturi in linea con il claim “Alimento fonte di acidi grassi omega-3”, (requisiti indicati dal Reg. 1924/06 e successive modifiche), risultato confermato sia all’inizio che al termine della vita commerciale del prodotto (pari a circa 45 giorni). Inoltre, esso risulta essere piuttosto interessante dal punto di vista nutrizionale, poiché caratterizzato da un contenuto di grasso per la categoria dei salumi, relativamente limitato, pari a circa il 15%, con percentuali più favorevoli in acidi grassi insaturi. L’analisi del profilo sensoriale condotta ad inizio shelf-life ha invece evidenziato come questa tipologia di prodotto sia caratterizzata sia al gusto che all’olfatto da note più sapide e speziate , oltre ad una maggiore consistenza della fetta, rispetto agli altri campioni analizzati, mentre i risultati relativi al termine della shelf-life hanno evidenziato come esso tenda ad essere soggetto ad alterazioni sensoriali rilevabili proprio al termine della fase di conservazione dovute nello specifico alla formazione di composti responsabili dell’odore di rancido. I test discriminanti, condotti con giudici non allenati, non hanno invece fatto registrare differenze sensoriali significative tra il prodotto con formulazione classica e quello di nuova formulazione, confrontati ad inizio e a fine shelf-life. Riassumendo, dai risultati ottenuti da questo lavoro sperimentale, il prodotto di nuova formulazione, arricchito in acidi grassi polinsaturi della serie omega-3, risulta essere in linea con il claim “Alimento fonte di acidi grassi omega-3”, presenta in generale un contenuto di grasso totale inferiore a quello di altre tipologie di salumi ed un rapporto più favorevole tra acidi grassi insaturi e saturi, per questo può essere considerato un prodotto interessante dal punto di vista della salute e della nutrizione. Proprio per la sua formulazione più ricca in acidi grassi polinsaturi, tende però a fine shelf-life a presentare una leggera nota di rancido, riconducibile ad una maggiore ossidabilità della frazione lipidica. Tale variazione sensoriale è risultata comunque percepita solo da un panel allenato, mentre un test di tipo discriminante, condotto con giudici non allenati, non ha messo in luce differenze significative tra il salume di nuova formulazione e quello con formulazione classica né all’inizio, né al termine della vita commerciale del prodotto.

Questa relazione finale è incentrata sul lavoro sperimentale richiesto dalla collaborazione con l’azienda Natural Salumi ed ha come obiettivo principale quello di verifica dei parametri qualitativi e compositivi di una nuova tipologia di salume in fase di studio. L’azienda ha infatti messo a punto un nuovo “prodotto funzionale” addizionando componenti aventi attività nutraceutica al salame ottenuto da sole parti magre di suino (tipo NaturalFetta) e si propone di arricchire il proprio prodotto con acidi grassi polinsaturi della serie omega-3 (da olio di semi di lino), noti per gli effetti benefici esercitati sulla salute umana. Sul prodotto di nuova formulazione si effettueranno sia la determinazione della percentuale lipidica mediante metodo ufficiale Soxhlet ed automatizzato Soxtec, al fine di individuare il quantitativo totale della parte grassa, che una caratterizzazione del profilo quali-quantitativo in acidi grassi, fondamentale per verificare la conformità con i requisiti indicati dal Reg. 1924/06 (e successivi come il Reg. UE 432/2012) previsti per le indicazioni da inserire in etichetta (claims) per i prodotti arricchiti con acidi grassi polinsaturi (PUFA). La determinazione del profilo in acidi grassi e, nello specifico, del contenuto in acido -linolenico, sarà realizzata mediante gascromatografia previa estrazione della frazione lipidica dei salumi con metodo di Folch modificato, che prevede un'estrazione solido-liquido. La concentrazione di acido alfa-linolenico sarà inoltre monitorata durante tutto il periodo di shelf-life del prodotto (45 gg) al fine di valutare eventuali variazioni durante la conservazione. Per soddisfare quest’ultima finalità, le analisi saranno eseguite sia all’inizio (T0) che alla fine (T1) della vita commerciale del prodotto. Le stesse analisi verranno inoltre condotte sia sul prodotto a formulazione classica che su un prodotto del tutto simile, commercializzato da un’altra azienda e considerato come leader di mercato. In relazione ad un possibile aumento di ossidabilità della frazione lipidica, sarà realizzato un controllo dei parametri chimici, qualitativi e compositivi, con particolare riferimento ai prodotti di ossidazione del colesterolo (date le loro implicazioni in ambito biomedico). La maggiore presenza in formulazione di acidi grassi polinsaturi potrebbe infatti favorire un incremento dei COPs (Cholesterol Oxidation Products), che saranno separati, identificati e quantificati mediante la procedura SPE/GC-MS (estrazione e purificazione in fase solida accoppiata ad analisi gascromatografica con rivelazione mediante spettrometria di massa).

La mia sperimentazione si inserisce in un progetto di respiro nazionale- “AGER-STAY FRESH”- volto a trovare soluzioni di lavaggio alternative al cloro per il prolungamento della shelf-life delle produzioni di IV gamma. Questi prodotti rappresentano, attualmente, uno dei più promettenti ed innovativi comparti del settore ortofrutticolo e sono definiti, secondo le norme della Comunità Europea, prodotti minimamente trasformati, cioè soggetti a interventi tecnologici ridotti, ed utilizzabili per il consumo diretto senza ulteriori manipolazioni, o con manipolazioni minime. La loro espansione sul mercato deriva dal fatto che sono in grado di offrire alta convenienza, alto valore nutrizionale ed organolettico e sono concepiti dai consumatori come prodotti “genuini” in quanto a base vegetale e, generalmente, non contengono sostanze antimicrobiche. Tuttavia, le materie prime vegetali utilizzate per le produzioni di IV gamma sono spesso caratterizzate da elevate contaminazioni microbiche (4-6 log UFC/g) poiché, durante la crescita o il post-raccolta, frutti o vegetali vengono a contatto con il suolo, insetti o contaminazioni di origine umana.Al momento la shelf-life e la sicurezza d’uso di questa categoria di prodotti sono basate principalmente sul mantenimento della catena del freddo unitamente alla fase di lavaggio delle materie prime con sostanze clorate. Recentemente, però, alcuni autori hanno evidenziato alcuni svantaggi derivanti da questa fase di processo come la formazione di composti clorati cancerogeni. In questa prospettiva, il principale obiettivo di questo lavoro di tesi è stato quello di valutare gli effetti di olio essenziale di cedro e alcuni composti bioattivi degli oli essenziali (citrale, esanale, trans-2-esenale e carvacrolo), utilizzati singolarmente o in combinazione, sulla shelf-life di mele affettate di IV gamma. Su tutti i prodotti sono state eseguite analisi microbiologiche, di texture e colore. Un ulteriore obiettivo di questo lavoro sperimentale è stato quello di ottimizzare alcuni parametri di processo come la riduzione del rapporto acqua di lavaggio/prodotto ed incrementare la temperatura dell’acqua utilizzata al fine di meglio solubilizzare gli antimicrobici in fase di dipping.

Different procedures for monitoring the evolution of leafy vegetables, under plastic covers during cold storage, have been studied. Fifteen spinach leaves were put inside Petri dishes covered with three different plastic films and stored at 4 °C for 21 days. Hyperspectral images were taken during this storage. A radiometric correction is proposed in order to avoid the variation in transmittance of the plastic films during time in the hyperspectral images. Afterwards, three spectral pre-processing procedures (no pre-process, Savitsky–Golay and Standard Normal Variate, combined with Principal Component Analysis) were applied to obtain different models. The corresponding artificial images of scores were studied by means of Analysis of Variance to compare their ability to sense the aging of the leaves. All models were able to monitor the aging through storage. Radiometric correction seemed to work properly and could allow the supervision of shelf-life in leafy vegetables through commercial transparent films.
