GCTase production by a new strain of Bacillus alkalophillc CGII isolated from Brazilian wastewater of manioc flour industry was examined. The growth medium used was composed by 1.5% starch, 1.5% nitrogen and 1% Na 2CO3. Higher activity was obtained with starch, maltodextrin and galactose. When glucose was added to the medium, no enzyme production was observed. High enzyme activity and growth were reached when aeration was increased (88.6 U/mL). The enzyme characterization showed an optimum pH and temperature 8.0 and 55°C for starch hydrolyses, respectively. Mg+ and Ca++ showed small activation; however, Hg + and Cu+ showed a strong enzyme inhibition.

Shifting cultivation in the humid tropics is incredibly diverse, yet research tends to focus on one type: long-fallow shifting cultivation. While it is a typical adaptation to the highly-weathered nutrient-poor soils of the Amazonian terra firme, fertile environments in the region offer opportunities for agricultural intensification. We hypothesized that Amazonian people have developed divergent bitter manioc cultivation systems as adaptations to the properties of different soils. We compared bitter manioc cultivation in two nutrient-rich and two nutrient-poor soils, along the middle Madeira River in Central Amazonia. We interviewed 249 farmers in 6 localities, sampled their manioc fields, and carried out genetic analysis of bitter manioc landraces. While cultivation in the two richer soils at different localities was characterized by fast-maturing, low-starch manioc landraces, with shorter cropping periods and shorter fallows, the predominant manioc landraces in these soils were generally not genetically similar. Rather, predominant landraces in each of these two fertile soils have emerged from separate selective trajectories which produced landraces that converged for fast-maturing low-starch traits adapted to intensified swidden systems in fertile soils. This contrasts with the more extensive cultivation systems found in the two poorer soils at different localities, characterized by the prevalence of slow-maturing high-starch landraces, longer cropping periods and longer fallows, typical of previous studies. Farmers plant different assemblages of bitter manioc landraces in different soils and the most popular landraces were shown to exhibit significantly different yields when planted in different soils. Farmers have selected different sets of landraces with different perceived agronomic characteristics, along with different fallow lengths, as adaptations to the specific properties of each agroecological micro-environment. These findings open up new avenues for research and debate concerning the origins, evolution, history and contemporary cultivation of bitter manioc in Amazonia and beyond.

We present a simple sieving methodology to aid the recovery of large cultigen pollen grains, such as maize (Zea mays L.), manioc (Manihot esculenta Crantz), and sweet potato (Ipomoea batatas L.), among others, for the detection of food production using fossil pollen analysis of lake sediments in the tropical Americas. The new methodology was tested on three large study lakes located next to known and/or excavated pre-Columbian archaeological sites in South and Central America. Five paired samples, one treated by sieving, the other prepared using standard methodology, were compared for each of the three sites. Using the new methodology, chemically digested sediment samples were passed through a 53 µm sieve, and the residue was retained, mounted in silicone oil, and counted for large cultigen pollen grains. The filtrate was mounted and analysed for pollen according to standard palynological procedures. Zea mays (L.) was recovered from the sediments of all three study lakes using the sieving technique, where no cultigen pollen had been previously recorded using the standard methodology. Confidence intervals demonstrate there is no significant difference in pollen assemblages between the sieved versus unsieved samples. Equal numbers of exotic Lycopodium spores added to both the filtrate and residue of the sieved samples allow for direct comparison of cultigen pollen abundance with the standard terrestrial pollen count. Our technique enables the isolation and rapid scanning for maize and other cultigen pollen in lake sediments, which, in conjunction with charcoal and pollen records, is key to determining land-use patterns and the environmental impact of pre-Columbian societies.

Although sparsely populated today, the Llanos de Mojos, Bolivia, sustained large sedentary societies in the Late Holocene (ca. 500 to 1400 AD). In order to gain insight into the subsistence of these people, we undertook macrobotanical and phytolith analyses of sediment samples, and starch grain and phytolith analyses of artifact residues, from four large habitation sites within this region. Macrobotanical remains show the presence of maize (Zea mays), squash (Cucurbita sp.), peanut (Arachis hypogaea), cotton (Gossypium sp.), and palm fruits (Arecaceae). Microbotanical results confirm the widespread use of maize at all sites, along with manioc (Manihot esculenta), squash, and yam (Dioscorea sp.). These integrated results present the first comprehensive archaeobotanical evidence of the diversity of plants cultivated, processed, and consumed, by the pre-Hispanic inhabitants of the Amazonian lowlands of Bolivia.

Objective: To identify food acquisition patterns in Brazil and relate them to the sociodemographic characteristics of the household. Design: A cross-sectional national Household Budget Survey (HBS). Principal component factor analysis was used to derive food patterns (factors) on the basis of the acquisition of food classified into thirty-two food groups. Setting: The source of data originates from the 2002-2003 HBS carried out by the Brazilian Institute of Geography and Statistics between June 2002 and July 2003 using a representative sample of all Brazilian households. Subject: A total of 48 470 households allocated into 443 strata of households that were geographically and socio-economically homogeneous as a study unit. Results: We identified two patterns of food acquisition. The first, named `dual`, was characterized by dairy, fruit, fruit juice, vegetables, processed meat, soft drinks, sweets, bread and margarine, and by inverse correlations with Brazilian staple foods. In contrast, the second pattern, named `traditional`, was characterized by rice, beans, manioc, flour, milk and sugar. The `dual` pattern was associated with higher household educational level, income and the average age of adults on the strata, whereas the `traditional` presented higher loadings in less-educated households and in the rural setting. Conclusions: Dietary patterns described here suggest that policies and programmes to promote healthy eating need to consider that healthy and non-healthy foods may be integral in the same pattern.

Objectives: The goal of this study was to understand the relationship between economic change (wage labor, retirement, and the Bolsa Familia program) and dietary patterns in the rural Amazon and to determine the extent to which these changes followed the pattern of the nutrition transition. Methods: The study was longitudinal. The weighed-inventory method and economic interviews were used to collect data on dietary intake and household economics in a sample of 30 and 52 women in 2002 and 2009, respectively. Twenty of the women participated in both years and make-up the longitudinal sub-sample. Comparative statistics were used to identify changes in dietary patterns over time and multiple linear regressions were used to explore the relationship between economics, subsistence strategies, and diet. Results: There was a significant decline in kcal (P < 0.01) and carbohydrate (P < 0.01) but no change in protein intake over time in both the larger and smaller, longitudinal subsample. The percent of energy, carbohydrate, protein, and fat purchased increased in the larger and longitudinal samples (P <= 0.02) and there was an increase in refined carbohydrate and processed, fatty-meat consumption over time. The abandonment of manioc gardens was associated with increased dependence on purchased food (P = 0.03) while receipt of the Bolsa Familia was associated with increased protein intake and adequacy (P = 0.02). Conclusions: The dietary changes observed are only in partial agreement with predictions of the nutrition transition literature. The relationship between the economic and diet changes was shaped by the local context which should be considered when implementing CCT programs, like the Bolsa Familia. Am. J. Hum. Si les études sur les groupes noirs ruraux connaissent un essor dans l´Antropologie brésilienne contemporaine, au Nordeste, et spécialement au Rio Grande do Norte, ce genre de recherches restent rares. Ce travail a comme principal objectif de faire une description ethnographique des communautés du Pêga, do Arrojado e do Engenho Novo, dans la commune de Portalegre/RN, désignées comme des descendants africains et dont les membres se reconnaissent comme appartenant a une "grande famille". Ainsi, nous voulons analyser les processus d´élaboration d´une identité collective et comprendre le rôle des relations de parenté dans la vie cotidienne, festive et religieuse de Portalegre. En effet, nous pouvons observer que les "parents" développent des stratégies économiques et affirment leur alterité, reprennant des traits culturels et religieux qui leur sont propres pour se présenter comme un groupe doté d´une grande cohésion face a la société environnante. Nous utilisons la méthode ethnographique et la technique de l´observation participante, alliée à l´analyse des sources historiques primaires dans le but de décrire ces pratiques et stratégies. Nous pensons que la participation des membres du groupe à la production agricole, spécialement dans la confection de la farine de manioc, la construction des relations sociales au quotidien et l´organisation de la danse de São Gonçalo représentent autant d´occasions où la mémoire du groupe se fortifie, l´identité collective se cristallise et où la sociabilité se trouve consolidée. Nous analysons ces pratiques collectives et ces moments festifs comme des moyens de réaffirmation d´une identité locale centrée sur les relations de parenté

Agouti paca is both considered as a species vulnerable to extinction and recognised with the potential for domestication. In spite of this, its behaviour is poorly documented and captive breeding is mainly based on trial and error. The aim of the present research was to analyse whether different strategies of straw supply could affect the behaviour and welfare of pacas in captivity. The study was done with eight adult pacas grouped in four mated pairs, three of them with one offspring. Each group was housed separately in 10 m 2 pens and the straw collecting behaviour was recorded. The quantity of straw collected per day was measured to compare four different strategies for straw supply and nest removal, where: every day nest removal treatment (1R) = supplying 1 kg of straw every day (outside the burrow) and removing all straw from inside the burrow every day; every 3 days nest removal treatment (3R) = supplying 1 kg every day and removing after 3, 6, and 9 days; no nest removal treatment (9R) = supplying 1 kg every day and removing after 9 days; nest deprivation treatment (Dep) = supplying 1 kg every day except at days 3, 4, and 5 and removing after 3 and 9 days. Straw collecting was always performed after 17:30 h, with three behavioural acts being performed: mouthing, transporting, and depositing the straw into the artificial burrow. The straw collected per day mean of 1R was significantly higher than the means of other treatments. During the deprivation period of Dep, chips cut from the eucalyptus branches and a great quantity of fruits and manioc were found inside the burrows. The motivation to collect seemed to increase as a consequence of straw deprivation. By these we conclude that straw should be offered to pacas in captivity, giving them the opportunity to collect straw by themselves. Doing this we expect to promote an effective environmental enrichment for this species in captivity. (c) 2005 Elsevier B.V. All rights reserved.

This research aims to study the manioc flour productive chain in order to understand how the relationship between its segments happens, specially between the flour agroindustry and the distribuition. This research was made from a study of case that envolved three agro industries from the Potiguar wasteland and a company of food distribution. The filiére and the supply chain management analysis were applied to identify the functioning and the organization of the manioc flour productive chain. From the study of case it s noticed that the existing contracts, even the informal ones, has mutual benefits and it suggests that they be legalized

O trabalho teve por objetivo avaliar a viabilidade do uso da manipueira, residuo líquido resultante da prensagem da massa ralada de mandioca, como substrato na biossíntese de ácido cítrico por Aspergillus niger. Os meios de manipueira foram comparados nas mesmas condições de temperatura, a meios sintéticos, utilizados tradicionalmente. em se tratando de proposta de um novo substrato, foi estudado o armazenamento do resíduo a temperatura ambiente por 72 horas, e realizada a caracterização físico-química da manipueira e dos meios elaborados com esse substrato. Foi avaliada a produção de ácido cítrico nos meios sintéticos e de manipueira. Verificou-se que a produção de ácido cítrico não diferiu quanto ao meio. Não foi observado crescimento do microrganismo nos meios de manipueira com concentrações acima de 70 mg/l de cianeto. Os resultados obtidos mostraram necessidade de maiores estudos para viabilizar o uso da manipueira como substrato na biossíntese de ácido cítrico por A. niger, principalmente no que diz respeito à liberação enzimática do cianeto.
