Means for milk, not otherwise specified, the product from complete and uninterrupted milking , in a hygienic, healthy cows, well fed and rested. The milk of other animals must be called according to origin of species. One of the main characteristics that defined the milk is the set of their sensory characteristics, and the main flavor. The control of milk quality in Brazil has been an important factor for the consolidation of the entire production chain, passing necessarily by the dairy industry. The production of milk with good quality guarantees, of course, food safety for consumers. The measures to obtain milk begin on the property, in carrying out correct procedures for milking, storage and transportation of the product also in the dairy. Later, in the laboratory evaluation of physicochemical properties, research fraud, and microbiological examinations. Finally, measures of health education are need for producers to become aware of the economic benefits by obtaining a better quality milk. The objective of this review is to emphasize the importance of using diagnostic procedures methods for the control of mastitis and consequently obtain better Milk quality

The society continues demonstrating its need regarding the products and services, even though it becomes increasingly value the protection of the environment. In this context, environmental management is defined as a management method that emphasizes to continuously improve results and promote sustainable development. Moreover it has as a tool the laws which provide the benchmarks and mechanisms for companies to adapt their activities in such a way that does not alter the quality of the environment. In this sense, in order to propose improvements to a dairy aiming their environmental suitability, a present study was prepared by following the production activities of the enterprise, the raising of standards and applicable legal requirements and environmental assessment for the preparation of an array of aspects and impacts with the task of identifying the most significant according to MOREIRA (2006). The results indicated that some of the impacts of high relevance are related to the generation of wastewater and solid waste, which do not have treatment and / or proper disposal and indeed require intervention for their suitability. Through, these results were drawn up proposals for actions conformation. In addition, they were proposed meeting the requirement for health and safety at work, in accordance with the standard regulations. This study has the function, therefore, propose to the company in question, an environmental management plan that ensures the protection of the environment and health of employees and consequently the improvement of production processes and products

As lipases (triacilglicerol acil hidrolases, E.C. 3.1.1.3) constituem uma classe de enzimas que catalisam a hidrólise de ligações ésteres dos triacilgliceróis de cadeia longa, operando na interface óleo/água. Em meios orgânicos, dependendo da quantidade de água, essas enzimas podem catalisar reações de esterificação e transesterificação, atuando como biocatalisadores da síntese de óleos e gorduras. As lipases destacam-se em processos industriais, nos quais são utilizadas como aditivos na produção de detergentes, de papel e celulose, na indústria de laticínios, de cosméticos, entre outros. As lipases microbianas são de maior interesse para aplicação em biotecnologia e em química orgânica, sendo necessária a prospecção de novas fontes de lipases com propriedades distintas. O presente trabalho avaliou a influência de diferentes meios de cultura, do tempo de cultivo, de fontes de carbono e sua concentração, de fontes de nitrogênio, agitação, pH e temperatura sobre a produção de lipase extracelular pelo fungo filamentoso Penicillium janthinellum, isolado de solo de região de Mata Atlântica. A avaliação das melhores condições de cultivo foi realizada através da análise da atividade enzimática, acompanhada pela determinação do íon ρ-nitrofenol liberado na hidrólise do substrato sintético ρ- nitrofenil palmitato. Os experimentos foram realizados em frascos de Erlenmeyer de 125mL contendo 25mL de meio de cultivo, inoculados com 1mL de suspensão contendo 107 conídios, e incubados a 28°C com agitação de 160 rpm e pH 5,5. Entre os quatro meios de cultura testados, o melhor resultado (0,476 ± 0,04 U/mL), com 5 dias de cultivo, foi verificado com o meio 2 composto por (g/L): bacto-peptona 5,0, extrato de levedura 1,0, NaNO3 0,5, KCl 0,5, MgSO4·7H2O 0,5, KH2PO4 2,0 e azeite de oliva 10,0)... Fresh cheeses such as Minas frescal and ricotta are excellent means for undesirable microorganisms to thrive, damaging quality and wholesomeness of these products. In this context, this study aimed at evaluating the contaminating microorganisms in the processing line of fresh cheese, namely Minas frescal and ricotta, of a dairy plant nestled in the city of São José do Rio Preto-SP. The analyses were carried out with the following steps: water, pasteurized milk, curd, mass, whey, palmar surface and coagulation tank, and cheeses with zero and five days of shelf life. Such steps were monitored by determining the MLN of total coliforms and thermotolerants; counting of coagulase-positive Staphylococcus and mesophilic aerobic bacteria; search of Escherichia coli, Salmonella spp. and Listeria monocytogenes. Twelve samples were evaluated in each step. Among the water samples, three are provided with higher values than the ones recommended in terms of mesophilic aerobic bacteria. Three milk samples did not comply with thermotolerant coliforms. The mass samples, curd and whey showed a decrease in the counting for all microorganisms. Both palm surface and coagulation tank showed low counting for all bioindicators. All milk samples showed compliance regarding phosphatase/peroxidase.

In order to assure the maintenance of foods integrity and quality, for avoiding chemical, physical or biological contamination, it is essential to follow the Good Manufacturing Practices (GMP). Among the techniques used for evaluating GMP there is the observational analysis carried out by means of a check-list form application. The present study evaluated the suitability of GMP in a dairy industry producer of Minas fresh and ricotta cheeses, located in São José do Rio Preto, SP, by applying a check-list form. A significant improvement in conformity was evidenced, increasing from 43% to 78%. Neither the blocks related to the handlers nor the existing documentation in the company showed any improvements, as poor conditions unchanged. All of the other evaluated blocks showed significant improvement after applying the GMPrelated corrective measures. Based on these findings, the observance of corrective measures by the dairy industry on dairy products, physical environment, GMP, and handlers training was crucial for assuring the improvements and to increase the product quality and consumers safety.

Food contamination caused by enteric pathogens is a major cause of diarrheal disease worldwide, resulting in high morbidity and mortality and significant economic losses. Bacteria are important agents of foodborne diseases, particularly diarrheagenic Escherichia coli. The present study assessed the genetic diversity and antimicrobial resistance of E. coli isolates from pasteurized milk processed in 21 dairies in northwestern State of Parana, Brazil. The 95 E. coli isolates were subjected to antimicrobial susceptibility testing according to the recommendations of the Clinical and Laboratory Standards Institute and assessed genotypically by Enterobacterial Repetitive Intergenic Consensus-Polymerase Chain Reaction (ERIC-PCR). The highest rate of resistance was observed for cephalothin (55.78%). ERIC-PCR revealed high genetic diversity, clustering the 95 bacterial isolates into 90 different genotypic patterns. These results showed a heterogeneous population of E. coli in milk samples produced in the northwestern region of Parana and the need for good manufacturing practices throughout the processing of pasteurized milk to reduce the risk of foodborne illnesses.

Chemical composition, proteolysis and functional properties of commercial Mozzarella cheese with reduced fat content found in the market of Londrina – PR were evaluated. The cheeses were analyzed for chemical composition, meltability, free oil formation, and the indexes of extension and depth of proteolysis during 30, 45 and 60 days of storage at 5°C. The samples showed no significant difference in chemical composition. The fat content of all samples complied with current legislation regarding the minimum percentage (25%) of fat reduction. Among the three brands tested, the cheeses of brand C showed the highest depth index of proteolysis. In all chesses, the meltability has increased during storage period. The, the brand C had significantly higher (p <0.05) free oil content when compared to other brands tested.

We aimed to identify the influence of dietary fat profile on body mass index (BMI) and waist circumference (WC) in a middleclass general population sample. A cross-sectional study of 448 adults aged 35-85 years was carried out from January 2004 to December 2007. Patients were divided in two groups according to family income: Group 1 (G1) with higher income, and Group 2 (G2) with lower income. Demographic and socioeconomic status were identified, along with anthropometric data, health eating index (HEI) and dietary profile. The groups were similar with respect to gender, age, BMI and WC. HEI was higher in G1 due to a higher intake of protein (+12.8%), dairy products (p<0.001), higher intake of vegetables (p<0.01), fruit (p<0.001), and less dietary fat (-9.8%). The main contribution of fats was saturated fat for G1 (+5.0%) and polyunsaturated fat for G2 (+14.4%). Besides differences in socioeconomic status the groups had similar BMI and abdominal fatness. Only differences in fat profile were correlated with the anthropometric measures mostly explained by the lower vegetable oil intake in higher income participants.
