Goats are social animals which groups are organized from dominance hierarchies, established by agonistic behaviors. The quality and productivity of the goat s milk can be influenced by the dominance hierarchy. In this context, the objectives of our work were describe the social and food behavior of Saanen goats in a semi-extensive production system; characterize the social organization from the assessment of dominance hierarchies in two seasonal periods and correlate the physicochemical quality of the goats milk according hierarchical position. The experiment was conducted in the EMPARN s experimental station, located in the district of Cruzeta/RN. We utilized 17 multiparous goats of the Saanen race, with different age and weight. The observations were performed in precipitation and drought phases. The scan method recorded the trough permanence and agonistic interactions by method "all occurrences" in the pasture the alimentary behaviors of eat, ruminate on foot, ruminate lying, leisure on foot, leisure lying and walk, by the focal animal sampling method. The goats milk was submitted to analyzes of: density, protein, fat, lactose, CSS and total solids. The animals spend most of the time feeding themselves, and the activities that demand greater energy expenditure are done in the morning. The animals changed the hierarchical structure during the seasonal periods because of the withdrawal of some individuals of the group, having more aggressive behavior in the rainy season. The dominant animal the lowet production, the more CSS and the lesser fat, the goat in the middle of the hierarchy was the one that obtained the best production and quality. We conclude that the Saanen goats adapt to the environment and the conditions of the group to ensure better survival and its production is influenced by the internal dynamics of the group

Goats milk is responsible for unique traditional products such as Halloumi cheese. The characteristics of Halloumi depend on the original features of the milk and on the conditions under which the milk has been produced such as feeding regime of the animals or region of production. Using a range of milk (33) and Halloumi (33) samples collected over a year from three different locations in Cyprus (A, Anogyra; K, Kofinou; P, Paphos), the potential for fingerprint VOC analysis as marker to authenticate Halloumi was investigated. This unique set up consists of an in-injector thermo desorption (VOCtrap needle) and a chromatofocusing system based on mass spectrometry (VOCscanner). The mass spectra of all the analyzed samples are treated by multivariate analysis (Principle component analysis and Discriminant functions analysis). Results showed that the highland area of product (P) is clearly identified in milks produced (discriminant score 67%). It is interesting to note that the higher similitude found on milks from regions “A” and “K” (with P being distractive; discriminant score 80%) are not ‘carried over’ on the cheeses (higher similitude between regions “A” and “P”, with “K” distinctive). Data have been broken down into three seasons. Similarly, the seasonality differences observed in different milks are not necessarily reported on the produced cheeses. This is expected due to the different VOC signatures developed in cheeses as part of the numerous biochemical changes during its elaboration compared to milk. VOC however it is an additional analytical tool that can aid in the identification of region origin in dairy products.

Sediment formation was investigated during UHT treatment of goats' milk, subjected to indirect treatment at 140 degrees C for 2 s, with upstream homogenisation. Stabilisers evaluated were sodium hexametaphosphate (SHMP), trisodium citrate (TSC), disodium hydrogen orthophosphate (DSHP), and sodium dihydrogen orthophosphate (SDHP). With no added stabiliser, goats' milk produced a heavy sediment on UHT treatment. Addition of SDHP reduced pH, had little effect on ionic calcium and did not substantially reduce sediment. However, addition of SHMP, DSHP and TSC each reduced ionic calcium, increased ethanol stability and reduced sediment. Following stabiliser additions, there was a good correlation between ethanol stability and ionic calcium (R-2=0.85) but not between ethanol stability and pH (R-2=0.08). Overall, reducing ionic calcium reduced the amount of sediment formed for all these three stabilisers, although there was no single trend line between sediment formation and ionic calcium concentration. Sediment formation was not well correlated with pH for TSC or for SHMP, but it was for DSHP, making it the only stabiliser where sediment formation correlated well both with ionic calcium and pH, which might account for its effectiveness at higher ionic calcium levels. Sediment was much reduced when the temperature was reduced from 140 degrees C to 125 degrees C and 114 degrees C. There were no further changes in sediment on storage for two weeks. Analysis of the sediment showed that it was predominantly fat and protein, with a mass ratio ranging between 1.43:1 and 1.67:1. Its mineral content was usually less than 5% of dry weight. The maximum amounts of P and Ca were found to be 2.32% and 1.63%, respectively.

China from 1997 to 1999 on 1) Growth regulation of yak from born to adult and 1/4 wild yak from born to one and half year; 2) The effect of nursing or not on the growth and development of dam; 3) Meat performance of local yak; 4)Milk productivity of female yak. It can be served as the theory basis from which crossbreed improvement of yak and government decision could be drawn.

Mycobacterium avium ssp. paratuberculosis (MAP), the cause of Johne's disease in cattle, sheep and goats, may have a role in Crohn's disease in humans. Animals with Johne's disease shed viable MAP in their milk and faeces. The organism is also widely disseminated in the blood and tissues of infected animals. Consequently, transmission to humans via consumption of animal-derived foods is a distinct possibility. Milk, other dairy products, beef and water have been identified as possible food vehicles of transmission. To date, viable MAP has been cultured from raw cows', sheep and goats' milk, retail pasteurized cows' milk, and some retail cheeses in several countries during recent studies. MAP has not been isolated from retail beef to date, although limited testing has been carried out. The public health consequences, if any, of low numbers of viable MAP being periodically consumed by susceptible individuals are uncertain. An association between MAP and Crohn's disease is not proven, but neither can it be discounted on the basis of current evidence. A precautionary approach is therefore warranted in relation to the existence of MAP in food, and action is needed to reduce the prevalence of Johne's disease in the cattle population worldwide, in order to minimize public exposure to this potential human pathogen.

Este trabajo nos da un pantallazo general sobre dos aspectos muy estudiados en la actualidad: el desarrollo territorial rural y la eficiencia (como elemento clave para la competitividad) y se propone dar visibilidad a la relación existente entre ambos, destacando el papel de la eficiencia a la hora de fortalecer estos procesos de desarrollo. Para abordar estas temáticas, en primera instancia el artículo realiza una breve descripción de la conformación de la cuenca lechera, proceso histórico donde las diversas actividades y micro procesos no surgen de mecánicas preestablecidas y conexas entre los actores locales, sino más bien admiten la idea de que en el territorio se produce la coordinación/descoordinación de las acciones de todos los agentes locales. Como conclusión de este punto se muestra que para el caso estudiado se han sentado las precondiciones tendientes a consolidar el proceso de desarrollo territorial. Entre ellas se pueden citar una identidad tambera caprina, un mercado dinámico que falta profundizar en su conocimiento pero que existe, alianzas que aunque fueron muy limitadas en su accionar, como también en el tiempo, fueron generando una actitud y una acumulación de capital social tendiente a la valoración de las especificidades del propio territorio. A continuación este documento se introduce en el segundo concepto analizado, la eficiencia, mediante estudios prácticos y ejemplos concretos para cada uno de los principales eslabones de la cadena productiva: el ordeñe, la industrialización y la comercialización. A modo de conclusión se plantea que para el diseño de estrategias tendientes a fortalecer el desarrollo territorial como primera medida los actores involucrados deben contar con toda la información y conocimiento posible sobre el proceso productivo. Esto facilitaría el acompañamiento a los distintos eslabones en el proceso de solución de sus ineficiencias, las que habitualmente son trasladadas al resto del complejo productivo. Finalmente, se deja abierto el interrogante de quién se hace cargo de las ineficiencias presentes en el sector y cómo se asume ese costo.

De outubro de 1998 a fevereiro de 1999 foram analisadas 359 amostras de leite colhidas de 28 cabras lactantes, nos estádios inicial, médio e final da lactação, nas ordenhas da manhã e da tarde. de março a julho de 1999 foram analisadas 150 amostras de leite dos mesmos animais, ordenhados uma única vez ao dia. Os teores de cloretos de amostras colhidas nos períodos da manhã e da tarde apresentaram valores crescentes (P<0,01) durante a lactação, 0,175gCl/100ml e 0,211gCl/100ml de leite nos estádios inicial e médio, respectivamente, para as amostras colhidas nas ordenhas da manhã e 0,183gCl/100ml e 0,217gCl/100ml de leite nos estádios inicial e médio, respectivamente, para as amostras colhidas nas ordenhas da tarde. Para as amostras de leite colhidas de animais ordenhados uma única vez observou-se aumento no teor de cloretos (P<0,01) do início para o final da lactação, 0,179gCl/100ml e 0,216gCl/100ml de leite, respectivamente. em relação ao horário e número de ordenhas, as diferenças não foram significativas. Os resultados ressaltam a necessidade de se estabelecer padrões físico-químicos específicos para o leite de cabras, uma vez que, independente do estádio da lactação e do número de ordenhas diárias, os valores estão acima dos limites considerados normais para o leite bovino.

Farmlets, each of 20 cows, were established to field test five milk production systems and provide a learning platform for farmers and researchers in a subtropical environment. The systems were developed through desktop modelling and industry consultation in response to the need for substantial increases in farm milk production following deregulation of the industry. Four of the systems were based on grazing and the continued use of existing farmland resource bases, whereas the fifth comprised a feedlot and associated forage base developed as a greenfield site. The field evaluation was conducted over 4 years under more adverse environmental conditions than anticipated with below average rainfall and restrictions on irrigation. For the grazed systems, mean annual milk yield per cow ranged from 6330 kg/year (1.9 cows/ha) for a herd based on rain-grown tropical pastures to 7617 kg/year (3.0 cows/ha) where animals were based on temperate and tropical irrigated forages. For the feedlot herd, production of 9460 kg/cow.year (4.3 cows/ha of forage base) was achieved. For all herds, the level of production achieved required annual inputs of concentrates of similar to 3 t DM/animal and purchased conserved fodder from 0.3 to 1.5 t DM/animal. This level of supplementary feeding made a major contribution to total farm nutrient inputs, contributing 50% or more of the nitrogen, phosphorus and potassium entering the farming system, and presents challenges to the management of manure and urine that results from the higher stocking rates enabled. Mean annual milk production for the five systems ranged from 88 to 105% of that predicted by the desktop modelling. This level of agreement for the grazed systems was achieved with minimal overall change in predicted feed inputs; however, the feedlot system required a substantial increase in inputs over those predicted. Reproductive performance for all systems was poorer than anticipated, particularly over the summer mating period. We conclude that the desktop model, developed as a rapid response to assist farmers modify their current farming systems, provided a reasonable prediction of inputs required and milk production. Further model development would need to consider more closely climate variability, the limitations summer temperatures place on reproductive success and the feed requirements of feedlot herds.
