This report summarises research undertaken by Queensland University of Technology, Brisbane, in partnership with Diversicare, on ‘Meeting the cultural food needs of Queensland’s Culturally and Linguistically Diverse (CALD) aged’. An earlier literature review[6] summarised the state of the evidence in relation to Australia’s CALD aged population and their less than optimal usage of Home and Community Care services (HACC), in particular, food services. This report builds on the information presented in the literature review aiming to explore the current provision of food services to CALD clients and the barriers and enablers to this service provision in Queensland.

This assessment form is designed to help your HACC service provider arrange for the most appropriate food and meal services that they can. It includes questions relating to food preferences, health and nutrition, abilities to source and prepare foods as well as questions to highlight if you are at risk of not having adequate access to appropriate foods. It is understood that some people from certain cultures may not feel comfortable answering some of these questions. Therefore, please do not answer those questions with which you are not comfortable.

This chapter examines the history and breadth of use of the term “food literacy” in scholarly literature. It reviews and compares various popularly used definitions from diverse paradigms. Other terms such as “cooking”, “food skills” and “food wellbeing” used to describe the everyday knowledge, skills and behaviours used to meet food needs are also examined.

Globally, the food system and the relationship of the individual to that system, continues to change and grow in complexity. Eating is an everyday event that is part of everyone’s lives. There are many commentaries on the nature of these changes to what, where and how we eat and their socio-cultural, environmental, educational, economic and health consequences. Among this discussion, the term "food literacy" has emerged to acknowledge the broad role food and eating play in our lives and the empowerment that comes from meeting food needs well. In this book, contributors from Australia, China, United Kingdom and North America provide a review of international research on food literacy and how this can be applied in schools, health care settings and public education and communication at the individual, group and population level. These varying perspectives will give the reader an introduction to this emerging concept. The book gathers current insights and provides a platform for discussion to further understanding and application in this field. It stimulates the reader to conceptualise what food literacy means to their practice and to critically review its potential contribution to a range of outcomes.

There has been tremendous growth in international trade on fish and fisheries products in the last four decades. In 1970 the value of internationally traded fish was estimated at 3 billion; this increased to US$ 15 billion in 1980, US$ 36 billion in 1990 and US$ 55 billion in 2000 (Ahmed, 2003). Recent statistics show that fish trade has surpassed other agricultural commodities that have traditionally been traded internationally such as coffee, tea, cocoa, sugar, cereals, meat, oils and milk. In 2000, fish contributed 22% of the value of all agricultural exports, making it the highest internationally traded food product (Ahmed, 2003). In another perspective, nearly 40% of the world's fish is now sold in the international market. The flow of fish in the international market is highly lopsided. About 50% of fish exportscomefromthedevelopingworld ,ofwhich 20%arefrom low-incomefood deficient countries. Most of this fish, however, is consumed by the developed countries, which account for nearly 80% of all imported fish. The EU, USA and Japan are the major importers, accounting for over 77% of global fish imports. Thus, while developing countries playa big role in fish production , they consume very little of it, instead preferring to sell for the hard currency. In some fish exporting countries, especially those in Asia, there is some link between fish exports and imports of substitute and complementary foods. Much of the increased earning from fish exports in those countries is explained by a corresponding rise in expenditure on imported foods. This is not the case in many of the fish exporter nations in Africa. In their case, fish exports generate foreign exchange that they use to meet other socio-political objectives; hardly is it aimed at solving the wider food needs. Therefore, one of the most immediate concerns of international fish trade is its impact on food security in the poor exporter nations.

La situation de la forêt tropicale dans les pays en développement en général, et en République Démocratique du Congo (RDC) en particulier, est inquiétante. Les émissions de dioxyde de carbone dues au déboisement sont de l’ordre de 1,6 GtCO2e/an, soit 17% des émissions mondiales de « gaz à effet de serre ». Sous l’égide de la Convention-cadre des Nations Unies sur les changements climatiques, le REDD+ a été institué pour lutter contre cette déforestation et la dégradation des forêts. Cette étude examine les différentes opportunités qu’offre ce programme pour l’aménagement écosystémique du couvert forestier de la RDC et les obstacles contextuels à sa mise en oeuvre. Pour la RDC, le REDD+ présente un certain nombre d’opportunités : réduction des émissions liées au déboisement et à la dégradation des forêts; amorce des travaux d’afforestation et de reforestation par une gestion durable des ressources conduisant à la création des emplois et favorisant la croissance des PIB et des exports; accroissement du rendement et maintien d’une plus grande couverture des besoins alimentaires. Le REDD+ peut favoriser la croissance du Produit intérieur brut agricole. Il peut contribuer à l’électrification des ménages et réduire de moitié les dépenses des ménages dépendant de l’exploitation minière et des hydrocarbures et, ainsi, générer des milliers d’emplois en infrastructures. Pour les populations locales et autochtones, il peut contribuer aussi à protéger et à valoriser les cultures liées à la forêt. Mais, face aux pesanteurs d’ordre juridique, politique, social, économique, technologique et culturel caractéristiques de ce pays, ces opportunités risquent d’être amenuisées, sinon annihilées. Étant donné que l’essentiel du déploiement du dispositif du REDD+ se réalisera dans les zones rurales congolaises, l’obstacle majeur reste le droit coutumier. La solution serait d’harmoniser les exigences et finalités du REDD+ non seulement avec le Code forestier de 2002 et ses mesures d’exécution mais aussi avec le droit coutumier auquel les communautés locales et autochtones s’identifient.

El presente proyecto, titulado “Integral development of an Agricultural Training Center to ensure food security in Glory Special Needs Primary School. Kitgum, Uganda” fue llevado a cabo de Julio de 2011 a Febrero de 2012 en la escuela primaria Glory Special Needs, dedicada a la atención y educación de jóvenes discapacitados, en Kitgum, Uganda. El proyecto se realizó con la colaboración del grupo de cooperación de la ETSI Agrónomos, AgSystems, la Fundación AmigoSolidarios y la ONG local NUCBACD. Su objetivo principal fue el desarrollo y puesta en marcha de un centro de capacitación Agrícola para dotar de igualdad de oportunidades a los jóvenes con discapacidad de Kitgum, potenciando y favoreciendo su integración en la comunidad, y garantizar así la seguridad alimentaria de los 137 alumnos internos en la escuela Glory Special Needs. El trabajo realizado supuso una acción relevante en Kitgum, superando la visión de una economía familiar basada en las actividades agrícolas, para centrarse en la profesionalización de la Agricultura como motor económico de la región. Este documento presenta una descripción de las principales actividades que se desarrollaron con el fin de alcanzar el objetivo planteado, desde un punto de vista educativo, sostenible e inclusivo. Para conseguirlo, se plantearon tres lineas de trabajo: - Programa productivo. - Programa educativo. - Programa organizativo.
