El objetivo de este documento es desarrollar un plan de negocio, para analizar la viabilidad de la puesta en marcha de una nueva empresa, una escuela de cocina infantil. Inicialmente la empresa se plantea con la opción de venta de dos productos, uno que serían las propias clases de cocina, con diversas temáticas y un segundo producto, que aprovechando las instalaciones consistirá en la opción de celebrar cumpleaños o fiestas infantiles, donde los niños cocinaran su propia merienda. La escuela se abriría en el municipio de Coslada, en la comunidad de Madrid, por lo que todos los reglamentos o requerimientos legales e impuestos se analizaran dentro del prisma de dicho municipio y comunidad autónoma. El Plan de negocio analizara los siguientes aspectos: - Estrategia: creación del plan estratégico de la empresa: Análisis y selección de las estrategias (misión, visión, etc, de la empresa), estudio de competencias, etc. - Marketing: Definición de productos, canales de comunicación con los posibles clientes y desarrollo del pricing de los productos. - Financiero: Análisis del impacto financiero de la apertura y funcionamiento del proyecto.---ABSTRACT---The aim of this document is to develop a business plan to analyze the feasibility of launching a new business, a school for children kitchen. Initially the company raises two products, own cooking classes, with different themes and a second product through which the facilities for children's birthday celebration where children can take advantage cook their own snacks. The school would open in the town of Coslada, in Madrid, so that all regulations and legal requirements and fees will be analyzed within the prism of that community. The Business Plan will analyze aspects of: - Strategy: creation of the strategic plan of the company: Analysis and selection of strategies (mission, vision, etc, of the company), study skills, etc. - Marketing: Definition of products, channels of communication with potential customers and development product’s pricing. - Financial Analysis of the financial impact of the opening and operation of the project.

Introdução: A caracterização dos padrões alimentares dos adolescentes permite analisar os efeitos da dieta como um todo sobre a saúde. Objetivos: Identificar na literatura científica as múltiplas soluções adotadas nas técnicas multivariadas para obtenção de padrões alimentares; Analisar a relação entre os principais padrões alimentares praticados por adolescentes brasileiros com o excesso de peso e obesidade e Analisar a influência de fatores socioeconômicos sobre os principais padrões alimentares praticados por um grupo multiétnico de adolescentes. Métodos: Esta tese foi composta de três artigos. O primeiro corresponde a uma revisão da literatura sobre padrões alimentares estimados por diferentes técnicas multivariadas. Para os demais artigos duas bases de dados foram utilizadas: a Pesquisa de Orçamentos Familiares (POF) de 2008 09 e o estudo Healthy Lifestyle in Europe by Nutrition in Adolescence (HELENA) conduzido em 2006-07. A análise fatorial exploratória foi utilizada para obtenção dos padrões alimentares. O segundo artigo utilizou modelo de regressão logística para verificar a associação entre os escores dos padrões alimentares e o excesso de peso e obesidade ajustado para variáveis socioeconômicas. O terceiro artigo utilizou o modelo de regressão linear para avaliar a associação entre indicadores de renda e escolaridade e os escores dos padrões alimentares. Resultados: Na revisão da literatura foi verificado grande heterogeneidade na escolha dos critérios adotados durante as múltiplas etapas das técnicas multivariadas. No segundo manuscrito, foi verificado que quanto maior a adesão ao Padrão Lanches e ao Padrão Snacks maior a chance de estar com excesso de peso e obesidade. No terceiro manuscrito, 10 padrões alimentares foram identificados entre adolescentes de áreas urbanas no Brasil e Europa. Entre os adolescentes brasileiros, maiores níveis socioeconômicos e educacionais da pessoa de referência do domicílio foram associados positivamente com o padrão composto por queijo, cereais matinais, frutas e sucos de fruta, leite e derivados. Entre os adolescentes europeus, maiores níveis socioeconômicos e maior educação das mães foram positivamente associados ao padrão composto por bebidas lácteas, cereais matinais; leite e derivados, manteiga e margarina, além disso, maiores níveis socioeconômicos também foram negativamente associados com o padrão composto por óleos vegetais, nozes, sementes, pão, carnes, leguminosas, hortaliças e tubérculos, ovos e os maiores níveis de de educação materna foram associados negativamente com o padrão composto por pão; carne; bebidas açúcaradas e salgadinhos. Conclusão: Os achados mostraram a elevada prática de padrões alimentares baseados em alimentos com altas concentrações de gorduras e açúcares os quais estão sendo responsáveis pelo aumento no excesso de peso e obesidade entre os adolescentes brasileiros. No geral, os adolescentes que possuíram maior renda ou bens materiais e maior nível de escolaridade do adulto responsável praticaram padrões alimentares um pouco mais saudáveis. No entanto, no Brasil a maior escolaridade da pessoa de referência do domicílio por si só não está diretamente associada a melhores práticas alimentares entre os adolescentes, o contrário do que acontece na Europa. Sendo assim, o maior acesso à renda e a maior escolaridade dos responsáveis desempenham um papel importante na adoção de padrões alimentares mais saudáveis entre os adolescentes.

This systematic review discusses data on the dietary intake of preschool children living in the Mediterranean countries of the European Union, including the comparison with a Mediterranean-like diet and the association with nutritional status. Specifically, data from the multinational European Identification and Prevention on Dietary and life style induced health effects in children and infants (IDEFICS) study and national studies, such as the Estudo do Padrão Alimentar e de Crescimento Infantil (EPACI) study and Geração XXI cohort in Portugal, ALimentando la SAlud del MAñana (ALSALMA) study in Spain, Étude des Déterminants pré-et postnatals précoces du développement et de la santé de l'ENfant (EDEN) cohort in France, Nutrintake 636 study in Italy, and Growth, Exercise and Nutrition Epidemiological Study in preSchoolers (GENESIS) cohort in Greece, were analyzed. In the majority of countries, young children consumed fruit and vegetables quite frequently, but also consumed sugared beverages and snacks. High energy and high protein intakes mainly from dairy products were found in the majority of countries. The majority of children also consumed excessive sodium intake. Early high prevalence of overweight and obesity was found, and both early consumption of energy-dense foods and overweight seemed to track across toddler and preschool ages. Most children living in the analyzed countries showed low adherence to a Mediterranean-like diet, which in turn was associated with being overweight/obese. Unhealthier diets were associated with lower maternal educational level and parental unemployment. Programs promoting adherence of young children to the traditional Mediterranean diet should be part of a multi-intervention strategy for the prevention and treatment of pediatric overweight and obesity.

Angola encontra-se em processo de restruturação e de desenvolvimento a nível económico e financeiro. A opção pelo investimento em Angola surgiu com as oportunidades de negócio que o país apresenta e também pela necessidade de descentralização do setor da restauração. Após efetuar uma pequena análise do mercado angolano, foi elaborado o projeto “Sweet Art” que está associado ao mercado da indústria alimentar e o mesmo orienta as respetivas propostas de valor para o conjunto de indivíduos e famílias que compram bens e serviços para o consumo próprio. O objetivo principal desse trabalho consiste na elaboração de um plano de negócios viável para a abertura de uma pastelaria em Angola, na província de Luanda - bairro do Talatona, com oferta de doces, salgados, gelados de frutos naturais e secos e também sumos e batidos naturais. Por sua vez, os seus objetivos específicos compreendem a: descrição da ideia; a composição de um plano estratégico, para um melhor estudo do meio envolvente; constituição de um plano operacional de marketing (marketing mix); o plano de operações; plano de pessoal; e um plano financeiro para analisar a sua viabilidade económica e financeira. Na primeira etapa do trabalho foi abordada a componente conceptual e, em seguida, foi apresentado o plano de negócios em si, que terá uma duração estimada de cinco anos, sendo que no terceiro ano se verifica o retorno do investimento. Após elaborado o plano de negócios foi possível concluir que o empreendimento Sweet Art é viável económica e financeiramente.

Purpose: The purpose of this longitudinal study was to determine factors associated with mutans streptococci (MS) infection and development of caries lesions in a group of children 21 to 72 months old. Methods: The 63 caries-free children, recruited since birth, were divided into: (1) a study group of 24 children who were colonized with MS; and (2) a control group of 39 children without MS. The children were recalled every 3 months for approximately 24 months, and their social, medical, and dental histories were updated. At each recall, the teeth were checked for presence or absence of plaque, enamel hypoplasia, and caries lesions, and their MS status was assessed using a commercial test kit. Results: MS infection was associated with: (1) visible plaque (P < .01); (2) enamel hypoplasia (P < .05); (3) commencement of tooth-brushing after 12 months of age (P < .05); (4) lack of parental assistance with tooth-brushing (P < .025); and (5) increased hours of child care/school (P < .05). Four children (20%) were colonized at an age range of 21 to 36 months, 9 (45%) at 37 to 48 months, and 7 (35%) at 49 to 72 months (P < .001). Eight children who developed caries lesions: (1) had more hypoplastic teeth (P < .001); (2) ate sugar-containing snacks (P < .05); and (3) did not brush regularly with chlorhexidine gel (P < .01) compared to those who remained free of caries lesions. Conclusions: Lack of oral hygiene, consumption of sugar-containing snacks, and enamel hypoplasia are significant factors for both MS infection and caries lesion initiation.

In the analysis - Recreational Food Service Is Big Business - by Gary Horvath, President, Recreational Foodservice Division, Service America Corporation and Mickey Warner, Associate Professor School of Hospitality Management at Florida International University, Horvath and Warner initially state: “Recreational food service is very different from routine food service management. The authors review the market and the management planning and challenges that create that difference.” Recreational food is loosely defined by the authors as food for special events. These can be one-time events, repeated events that are not on a fixed schedule [i.e. concerts], weekly events such as football-baseball-or basketball games, or other similar venues. Concessions are a large part of these fan based settings. “An anticipated 101,000 fans at a per capita spending of $5-6 [were expected]. A typical concessions menu of hot dogs, popcorn, soda, beer, snacks, novelty foods, candy, and tobacco products comprises this market segment,” say Horvath and Warner in reference to the Super-Bowl XXI football championship game, held in Rose Bowl stadium in Pasadena, California, on January 25, 1987. Some of the article is based upon that event. These food service efforts focus on the individual fan, but do extend to the corporate-organizational level as well. Your authors will have you know that catering is definitely a part of this equation. The monies spent and earned are phenomenal. “Special events of this type attract numerous corporate catering opportunities for companies entertaining VIP guest lists,” the authors inform. “Hospitality tents usually consist of a pregame cocktail party and buffet and a post-game celebration with musical entertainment held in lavishly decorated tents erected at the site. In this case a total of 5,000 covers, at a price of $200 each, for 12-15 separate parties were anticipated.” Horvath and Warner also want you to know that novelties and souvenirs make up an essential part of this, the recreational food service market. “Novelties and souvenirs are a primary market and source of revenue for every stadium food service operator,” say Horvath and Warner. The term, “per capita spending is the measurement used by the industry to evaluate sales potential per attendee at an event,” say the authors. Of course, with the solid revenue figures involved as well as the number of people anticipated for such events, planning is crucial, say Horvath and Warner. Training of staff, purchasing and supply, money and banking, facility access, and equipment, are a few of the elements to be negotiated. Through both graphs and text, Horvath and Warner do provide a fairly detailed outline of what a six-step event plan consists of.

Los alimentos tradicionales de la ciudad de Cuenca representan un aporte de energía importante a la dieta, además pueden considerarse como alimentos sanos gracias a la combinación balanceada de ingredientes que contienen. La determinación de macronutrientes en estos alimentos permite elaborar una base de datos de composición local de los alimentos tradicionales de mayor consumo en la ciudad de Cuenca, de los cuales no se tienen datos. El contenido de macronutrientes presentes en los alimentos dependerá del proceso de elaboración al cual hayan sido sometidos, ya que estos pueden variar en cantidad con respecto a los ingredientes en estado crudo. Una porción promedio de la mayoría de los alimentos tradicionales estudiados aportan más de un 10% de una dieta diaria (2000 Kcal). Los alimentos tradicionales son usualmente consumidos como snacks por su alto contenido calórico sin embargo su consumo balanceado resulta más beneficioso por su contenido nutricional. Al estimar la ingesta de los alimentos tradicionales por medio de encuestas de consumo es posible establecer la ingesta diaria promedio, lo cual correspondió a un aporte de energía menor al 10 % de una dieta promedio de 2000 Kcal.

Background: Various factors have been investigated to account for the higher premature death rates in Scotland compared to England. Higher levels of deprivation in Scotland provide a partial explanation for these differences but recent work comparing areas of the UK with similar deprivation profiles and low life expectancy has shown that this is not the only reason. One hypothesis yet to be tested adequately is differences in diet and nutrition. Objective: To conduct a comparative analysis of dietary intake between Scotland and England using pooled food purchase data from the Living Costs and Food Survey (LCFS) from 2001 to 2012 and to assess differences in equivalised income quintiles (controlling for survey year, age of household reference person, and age household reference person left full-time education). Results: Lower intakes of fruit and vegetables, oil rich fish, fibre, vitamin A, folate, vitamin C and vitamin D and higher intakes of red and processed meat, whole milk, butter, savoury snacks, confectionary, soft drinks, saturated fat and NMES (added sugar and sugar in fruit juice), sodium and alcohol were found for Scotland compared to England. Differences between Scotland and England were higher for those on lower incomes for dietary components known to be related to health outcomes. For example fruit consumption was 14g/day lower for the lowest income quintile compared to 4 g/day lower in the highest quintile for Scotland versus England. Conclusions: A poorer diet in Scotland compared to England, particularly among disadvantaged groups, is likely to be one of the reasons for excess mortality. The current evidence on the continued poor diet in Scotland, particularly in disadvantaged groups, should not be ignored. Identifying effective, culturally appropriate approaches to improve diet across the population and notably in the most deprived areas needs further investment. Funded by NHS Health Scotland. Evidence suggests that current levels of salt consumption across Europe are linked with several chronic diseases. In recent decades, high blood pressure has increased, together with the consumption of processed foods. World Health Organization (WHO) recommends a salt intake of less than 5 g/day for the prevention of cardiovascular disease. The aim of this study was to evaluate the salt content of processed foods available in the Portuguese market and to compare the determined values with the recommended daily intake established by WHO. Categories of processed foods that contribute to a higher intake of salt were identified: pastry, bakery, fast-food, snacks, ready-to-eat meals, nuts, seeds, soups, cereals, sauces, patties, among others. Between 2013 and 2015, 267 processed food samples were acquired in food chains and restaurants from Lisbon region (Portugal) and the salt content was quantified using Charpentier-Volhard method. High amounts of salt were quantified in the analysed processed foods, namely snacks, fast-food, patties, meals and bakery products. If we consider one portion of a curd cheese pie (193 g), the intake of salt can reach 45% of the recommended value. For snacks, regular portion size is 35 g. One portion of a salty snack can contribute with 31% of the salt recommended daily intake. Up to now food industry has developed efforts to decrease the salt content of some food products, namely bread. However, there still exist foods with high salt content and from a nutritional point of view this should be a priority area of intervention. The obtained results are an effective assessment of current salt content in foods which will be important for further reformulation strategies and to monitor progress in the next years.

Objective: To illustrate an unusual mechanism causing hypoglycaemia. Material and methods: A 76-year-old man presented with episodes of agitation and confusion and was resuscitated with oral glucose gel when found to be hypoglycaemic. Results: A CT scan for an abdominal mass confirmed a solitary fibrous tumour (SFT). The sarcoma multidisciplinary team suggested conservative management. The patient's episodic hypoglycaemia was managed with diet modification including corn-based starch, scheduled snacks and dexamethasone. Glucose levels were within normal range at discharge from hospital. The patient was referred to the palliative care team for follow-up. Conclusion: SFTs causing non-islet cell tumour hypoglycaemia are difficult to treat. KEYWORDS

Introduction: There are few studies assessing overall diet and food patterns of the oldest population. Objectives: To examine food groups consumption (grams and servings) and their compliance with the dietary guidelines in community-dwelling very old Spanish adults. The relationship with the risk of malnutrition was also studied. Methods: Within the cross-sectional health study of elderly people of Villanueva de la Cañada (Madrid, Spain), in 98 non-institutionalized elders aged ≥ 80 years (66% women) food consumption was calculated from a 24-hour dietary recall and nutritional risk was assessed by Mini Nutritional Assessment (MNA). Statistical significance was evaluated at 95% confidence level (p < 0.05). Results: Men consumed significantly higher amounts of snacks/pickles and alcoholic beverages. The consumption of cereals/grain products (2 servings/day), vegetables (1.5 servings/day) and meat, fish, eggs (1.4 servings/day), was below desirable levels. As nutritional status got worse, fruit consumption was significantly smaller (p = 0.039). Relatively weak but highly significant correlations were found between MNA and oils/fats, fruits and alcoholic beverages. After adjustment for energy intake, oils and fats and fruits associations disappeared whereas a negative association between milk/dairy products and MNA was found. Conclusions: Dietary patterns of the elderly population of Villanueva are departing from the traditional Mediterranean diet and though adequate consumption of fruits, milk/dairy products, oils/fats and sugar/confectionery has been achieved, cereals/grain products, vegetables and the meat,fish,eggs group consumption was below the desirable levels. Deterioration of the nutritional status coincided with a reduction in the consumption of all food groups except for ready meals and milk/dairy products whose consumption increased. Further research on the influence of fruit, milk/dairy products, wine and olive oil consumption on nutritional status is required.

Introducción: la obesidad infantil es uno de los problemas de Salud Pública más graves del s.XXI, sobre todo por las complicaciones cardiovasculares y endocrino-metabólicas asociadas. La prevalencia de obesidad se ha multiplicado por más de dos entre 1980 y 2014, estimándose que, a nivel mundial, más de 42 millones de niños tienen sobrepeso. En adultos hay estudios que reportan que la ingesta proteica conlleva efectos beneficiosos aunque altos niveles de determinados aminoácidos se relacionan con obesidad y resistencia insulínica; no obstante, en niños existen escasos estudios que confirmen tal asociación. Objetivos: analizar cómo se relacionan los niveles sanguíneos de los aminoácidos de cadena ramificada, la homocisteína y la citrulina con las variables que se utilizan en la práctica clínica habitual para diagnosticar obesidad en niños y adolescentes, así como estudiar si hay relación de éstos con la resistencia a la insulina. Material y métodos: estudio observacional analítico longitudinal prospectivo de una cohorte. Colaboración entre niveles asistenciales (atención hospitalaria y atención primaria). Se seleccionaron niños en diferentes centros de salud de Málaga entre 6-11 años, prepúberes (estadios de Tanner 1-2). Para conseguir un intervalo de confianza del 95% y siendo la prevalencia de sobrepeso-obesidad del 30%, se estimó que habría que incluir unos 100 sujetos. Criterios de exclusión: obesidad de causa secundaria, enfermedad orgánica añadida, ingesta crónica de medicamentos y antecedentes de diabetes personales o en familiares de primer grado. Se realizó: hoja de recogida de datos clínicos, epidemiológicos, encuesta de hábitos sociales, alimentarios y de ejercicio físico. Se extrajo una analítica sanguínea con bioquímica básica y ampliada (perfil lipídico, vitaminas B9 y B12, transaminasas, insulina…) y se determinaron aminoácidos de interés para el estudio (homocisteína, isoleucina, leucina, valina, citrulina, tirosina, fenilalanina y acilcarnitinas (C3 y C5)). La obesidad se define como IMC ≥2 SDS expresado en Z score (gráficas de Hernández). Para la resistencia insulínica se usó un índice HOMA mayor de 3. De los 100 sujetos de estudio en el momento basal completaron el seguimiento, a los 12 meses, 40 de ellos, repitiéndose todas las mediciones, para determinar si las variaciones clínico-analíticas se relacionaban con variaciones en los aminoácidos. Conclusiones: Los sujetos con exceso de peso presentaron niveles menores de colesterol-HDL y vitamina B12, y mayores niveles de triglicéridos, insulina e índice HOMA. No se observó relación entre el exceso de peso y el ácido fólico. Los factores epidemiológicos más asociados a niños con exceso de peso fueron: la presencia de sobrepeso en el progenitor “padre”; el elevado consumo de zumos, refrescos y snacks; la existencia de una mayor distancia del hogar al colegio; y el exceso de horas viendo la televisión o jugando a la consola. La resistencia insulínica se relacionó inversamente con los niveles plasmáticos de leucina e isoleucina, en el momento basal. Aunque la valina y la citrulina no obtuvieron significación estadística, sus datos fueron similares a los de la leucina e isoleucina. También se evidenció una relación directa entre la resistencia insulínica y el IMC y los TG, e inversa con el HDL, la vitamina B12 y el ácido fólico. La homocisteína no se correlacionó con datos antropométricos ni con resistencia insulínica. Los BCAA (valina, leucina e isoleucina) se relacionaron inversamente con el IMC y el perímetro abdominal, tanto en el momento basal como tras un año de seguimiento. La leucina e isoleucina obtuvieron asociación estadística con la resistencia insulínica, es decir, aquellos con HOMA >3 presentaron menores niveles de estos aminoácidos, a diferencia de los datos contrarios de otras publicaciones. Se constató la ausencia de diferencias, tras un año de evolución, entre los valores medios de los BCAA con respecto al desarrollo de resistencia insulínica. Sólo se apreciaron diferencias estadísticamente significativas para la arginina, siendo menores sus cifras en los que desarrollaron resistencia insulínica. Hay que resaltar que sólo la valina, al año de seguimiento, estuvo ligeramente aumentada en niños con índice HOMA > 3, aunque los datos no fueron significativos. Este hecho podría ser el primer indicio de las consecuencias de la resistencia insulínica en el metabolismo de los aminoácidos. La citrulina se relacionó inversamente con el perímetro abdominal y con el IMC. No hubo diferencias con la resistencia insulínica ni con el IMC al año. Bibliografía: a destacar: WHO. Baking fun es una empresa dedicada a la producción y comercialización de snacks saludables para niños. Sabemos que el momento de la comida no es fácil para los padres, y más aun cuando quieren alimentar con frutas y verduras a los más pequeños. Es por esto que nuestros snacks, a diferencia de los snacks tradicionales buscan combinar lo saludable con lo divertido, para que puedan alimentar balanceadamente a sus hijos mientras ellos se divierten y disfrutan nuestros snacks.

Snackggies, es una empresa ubicada en la ciudad de Bogotá cuya actividad económica es la elaboración y distribución de Snacks. Esta pretende entrar al mercado con una línea de productos poco convencional. Su enfoque, es ofrecer alternativas a los niños y jóvenes para que consuman verduras de una manera diferente, rica y agradable. Esto se realizará por medio de la elaboración de chips de verduras con sabor naturales. Con estos productos se busca que los niños y jóvenes disfruten y se diviertan consumiéndolas, pues se conoce que ellos son la población que mayor inconveniente presenta al comerlas y por ende sus padres lo perciben de la misma manera. La característica principal de Snackggies es desarrollar productos saludables comparados con los Chips que ofrece el mercado, pues se usará materia prima de calidad y a esto se le suma la forma de cocción; ya que se utilizará tecnología de aire caliente o AirFryer, cuya función es freír alimentos con una porción mínima de aceite, aportando una cantidad reducida de calorías vacías y grasas trans a los alimentos. Además, son productos creados para la lonchera de los niños y con diseño atractivo para ellos. Para la empresa lanzar al mercado estos productos es muy significativo y gratificante, pues se ha desarrollado durante un año un estudio en el cual se ha venido conociendo tanto al cliente como el consumidor, con el fin de desarrollar un producto que cumpla con sus necesidades y se logre posicionar como una alternativa innovadora para el consumo de verduras.
