The apparent diffusion coefficients for sucrose, NaCl and water during osmotic dehydration of tomatoes in ternary solutions were determined. Long time experiments (up to 60 h) were carried out in order to determine equilibrium concentrations inside tomatoes, whereas short time experiments (up to 4 h) were performed to provide detailed information on kinetics of water loss and solids gain at the beginning of osmotic treatment. The mass transfer rates for water and solutes showed to be dependent of NaCl and sucrose concentrations in osmotic solution and simple regression models as functions of solutes concentration were determined for diffusion coefficients. Salt and sucrose diffusivities showed to be interdependent, with increasing NaCl concentration causing the enhancement of water loss, at the same time that higher sucrose contents hindered the excessive salt penetration. The objectives of the present study were to evaluate the spread of Salmonella Enteritidis to different cutting boards (wood, triclosan-treated plastic, glass, and stainless steel) from contaminated poultry skin (5 log CFU/g) and then to tomatoes and to analyze the effect of different protocols used to clean these surfaces to control contamination. The following procedures were simulated: (1) no cleaning after handling contaminated poultry skin; (2) rinsing in running water; (3) cleaning with dish soap and mechanical scrubbing; and (4) cleaning with dish soap and mechanical scrubbing, followed by disinfection with hypochlorite. The pathogen was recovered from all surfaces following procedure 1, with counts ranging from 1.90 to 2.80 log, as well as from the tomatoes handled on it. Reduced numbers of S. Enteritidis were recovered using the other procedures, both from the surfaces and from the tomatoes. Counts were undetectable after procedure 4. From all surfaces evaluated, wood was the most difficult to clean, and stainless steel was the easiest. The use of hypochlorite as a disinfecting agent helped to reduce cross-contamination. The aim of present work was to study, through means and variances of generations, the genetic control of fruit-set percentage in tomatoes, in a biparental cross between line Jab-95 (resistant to fruit-set) and 'Caribe' cultivar (susceptible to fruit-set) after being subjected to high temperatures. F1, F2, and backcross generations for both parents (P 1, P2) were produced in a greenhouse at FCAVUNESP, Jaboticabal-SP, Brazil. A randomized complete block experimental design with four replications was used to evaluate the different generations. Estimates of genetic parameters were obtained according to Mather and Jinks (1982). An additive-dominant model was fitted to explain the variation observed. The mean degree of dominance (0.54), indicated incomplete dominance in the direction of increasing fruit-set percentage at high temperatures. The genetic control of fruit-set percentage, at high temperatures, for tomato was found to be oligogenic or polygenic (3.54 genes). The heritability in a limited sense was 83.91%, suggesting that the selection of individuals based on the characteristic evaluated can be efficient.

The aim of the study was to evaluate production and determine the level of total soluble solids for cherry tomatoes, under protected cultivation carried out with different types of spacing and pruning. The experiment was performed according to a randomized block design in a 2×2 factorial scheme, with two types of spacing between plants and two types of pruning, and with five repetitions. The cultivar 'Sindy' (De Ruiter) was utilized. Each experimental parcel contained seven plants, and fruits were collected from the five central plants. The seedlings were produced in Styrofoam trays of 128 cells and transplanted at 33 days after planting using two types of spacing between plants (0.3 and 0.5 m) and 1 m spacing between rows. The plants were grown as single-or double-stem form and staked individually. The parameters evaluated were the number of fruit per plant, fresh weight of fruit and the level of total soluble solids expressed in °Brix. There was no evidence of significant interaction between the treatments. For fresh weight of fruit per plant, there was a significant effect when the plants were grown with a spacing of 1 × 0.5 m, with 4.12 kg per plant, compared to a production of 3.00 kg per plant with a spacing of 1 × 0.3 m. With regard to the number of fruit per plant, a significant difference was seen between the two types of spacing, where a spacing of 1 × 0.3 m yielded a lower number of fruit per plant (188.8), compared to that observed with a spacing of 1 × 0.5 m (238.1). With regard to the two types of pruning, there was a significant effect for only the number of fruit per plant, where the mean number of fruit was 188.4 with one stem and 238.4 with two stems. No significant difference was observed between the treatments for the level of total soluble solids. It is concluded that for the cultivar 'Sindy', under protected cultivation, production is better with a spacing of 0.5 m between plants and the use of two stems per plant.

The experiment was conducted in the experimental area belonging to the Section of Crop Production and Aromatic Medicinal Plants of the FCAV-UNESP, Jaboticabal Campus - Sao Paulo, Brazil. Tolerance to high temperature was studied in six determinate genotypes of tomato (Lycopersicon esculentum L.): Agrocica 8, Apex 1000, Botu-13, Calmech VFAS, Nemadoro and Jab-2, which were cultivated in a greenhouse at temperatures above 33oC for at least 2 h/day during blooming. The objectives of the study were to identify the genetic diversity of the genotypes studied and to determine their performance associated with tolerance to high temperature. Dissimilarity was determined by the generalized Mahalanobis distance. Delineation groups were optimized with the Tocher technique. A random block design was utilized with six treatments and with three replications. Two similarity groups were identified: 1 - Apex 1000, Botu-13, Calmech VFAS, Jab-2, Nemadoro and 2 - Agrocica 8. Crossing of genotypes within one group has no advantage because little genetic divergence and no heterotic response would be expected. However, the crossing of genotypes between groups is suggested. Knowledge of these groups will be important for efficiency future breeding efforts.

The study was conducted at the Section of Crop Production and Aromatic Medicinal Plants of FCAV-UNESP, Jaboticabal Campus - Sao Paulo, Brazil. Nine indeterminate tomato (Lycopersicon esculentum Mill.) genotypes, Jumbo, Santa Clara, Cláudia VF, Concorde, Débora Plus, FM-9, Carmen, Príncipe Gigante, and CL 5915, were evaluated for high temperature tolerance. Three determinate tomato genotypes, FM-9, Suncoast and TSW-10, were cultivated in a greenhouse at more than 33°C air temperature for at least 2 h/day during bloom. The objective was to identify variable genotypes to determine their tolerance of high temperature. Four replications of fifteen treatments were planted in a randomized block design. Dissimilarity was determined by the generalized Mahalanobis distance. Delineation groups were optimized with the Tocher technique. The tomatoes were classified into six groups of similar temperature responses. CL 5915 was the most tolerant of high temperatures. Crossing of genotypes within one group has no advantage because little genetic divergence and no heterotic response would be expected. However, the crossing of genotypes between groups is suggested. Knowledge of these groups will be important for efficient future breeding efforts.

The production and quality of tomatoes has increased with the emergence of new genotypes and cropping systems such as hydroponics, however, there are few studies on the nutrition of plants. The objective was to evaluate the growth and motion of absorption of nutrients by Raisa tomato cultivar, grown in hydroponic system. The experimental design was randomized blocks with eight treatments consisting of the times of sampling: 15, 25, 35, 45, 55, 65, 75 and 85 days after transplanting (DAT) and five replications. The tomato seedlings were transplanted to pots of 8 dm(3) (on 31-03-2008), filled with the base substrate of coconut fiber, constantly irrigated with Hoagland and Arnon nutrient solution. During the experimental period and focuses on the development of plants and dry leaves, stems, fruits and roots. The dry matter accumulation of leaves and roots of tomato cultivar Raisa was relatively faster than the national stem and fruit, over cultivation, with predominance of dry fruits (45%) on the leaves (27%), the stem (24%) and roots (3%) at the end of the cycle. The accumulation of nutrients and micronutrients by the tomato cultivar Raisa was fit with linear increase throughout the cultivation, except for Mn which was quadratic. Most of the tomato nutritional requirement for nutrients was K, N and Ca and micronutrients was Fe, Zn and Mn.

Onions (Allium cepa L.) are grown in different parts of the Brazilian territory and are considered the third most important vegetable crop cultivated in the country, only behind potatoes and tomatoes. The present work was carried out aiming to evaluate the postharvest quality of twelve different onion cultivars grown in the Southeast of Brazil. Onions of the cultivars; 'Adocicada', 'Branca', 'Picante' and 'Roxa' were harvested in commercial fields and the cultivars 'Princesa', 'Serrana', 'Bulbo duplo', 'Granex 33', 'XP 6803', 'XP 8418', 'RP 6010' and 'Superex' were obtained in experimental fields. After harvest, bulbs were taken to the postharvest laboratory and evaluated for total soluble solids, titratable acidity, and pungency (aliinase activity). For total soluble solids 'Superex' had the lowest sugar content (5.4 degrees Brix) whereas the cultivar named 'Picante' showed the highest Brix (11.0 degrees Brix) among the studied materials. For titratable acidity, it was verified that 'Serrana' had the lowest acid content (0.094 g piruvic acid.100 g(-1) FW) whereas 'Branca' showed the highest content of organic acids. When pungency was evaluated it was verified that aliinase activity varied from 1.37 pg piruvic acid.100 g(-1) FW for 'Adocicada' to 12.18 mu g piruvic acid.100 g(-1) FW for 'Roxa', which was considered to have hot pungency (high alliinase activity and low TSS/TA), whereas 'Bulbo duplo' was evaluated as pungent (high alliinase activity and TSS/TA). The combination of the studied characteristics indicated that an onion with high pungency must have high aliinase activity and titratable acidity, whereas sweet onions shall have high soluble solids contents and low aliinase activity. Based on this information, 'Branca' bulbs were considered acids (weak pungency and high acidity), whereas 'Adocicada', 'Princesa', and 'Serrana' bulbs are sweet, due to low alliinase activity and titratable acidity. 'Superex', 'XP 6803', 'Granex 33' and 'Picante' had a moderately pungent flavor (alliinase activity intermediate and low TSS/TA), but 'XP 8418' and 'RP 6010' flavor was evaluated as lightly pungent (low alliinase activity TSS/TA).

Epidemiological studies have provided evidence that high consumption of tomatoes effectively reduces the risk of reactive oxygen species (ROS)-mediated diseases such as cancer. Tomatoes are rich sources of lycopene, a potent singlet oxygen-quenching carotenoid. In addition to its antioxidant properties, lycopene shows an array of biological effects including antimutagenic and anticarcinogenic activities. In the present study, the chemopreventive action of lycopene was examined on DNA damage and clastogenic or aneugenic effects of H2O2 and n-nitrosodiethylamine (DEN) in the metabolically competent human hepatoma cell line (HepG2 cells). Lycopene at concentrations of 10. 25, and 50 mu M, was tested under three protocols: before, simultaneously, and after treatment with the mutagen, using the comet and micronucleus assays. Lycopene significantly reduced the genotoxicity and mutagenicity of H2O2 in all of the conditions tested. For DEN, significant reductions of primary DNA damage (comet assay) were detected when the carotenoid (all of the doses) was added in the cell culture medium before or simultaneously with the mutagen. In the micronucleus test, the protective effect of lycopene was observed only when added prior to DEN treatment. In conclusion, our results suggest that lycopene is a suitable agent for preventing chemically-induced DNA and chromosome damage. (C) 2007 Elsevier Ltd. All rights reserved.
