Zooplankton standing crop and proximate principals were estimated for 8 coastal and 13 oceanic stations of the northern Arabian Sea during March 1991. Biomass did not show any significant difference (p < 0.05) between coastal and oceanic waters. Protein was the principal biochemical component among proximate principals with an average value of 29.6% in coastal and 34.2% in the oceanic zone, suggesting that protein form a major metabolic reserve. Other components such as lipids and carbohydrate seem to be low in tropical zooplankton. The organic carbon and caloric density did not show significant correlation. Average caloric density was 2.5 k.cal super(-1). The average standing stock was 9.25 mg m super(-3) and 5.90 mg m super(-3) for coastal and oceanic water, respectively. Coastal region is more productive than oceanic region in terms of standing crop, as expected.

Biochemical composition of the muscle of juveniles belonging to 18 different species of freshwater fishes showed that the protein percentage in juveniles was higher than the adults. The fat, on the other hand, was much lower. This suggests that the body fat increases with the onset of maturity. No clear inverse relationship was found between fat and protein in juveniles. Moisture percentage was very high in juveniles. This was probably because of low fat content. In most species the sum of fat and water contents (F + W) was found to be constant. The percentages of ash, calcium and phosphorus were higher in juveniles than those of adults. Dry matter percentage varied inversely with the moisture and in most species carbohydrate was generally low. In juveniles although the calorific value of protein-fraction was high the total calorific value was lower than the adults.

A culture experiment of mud crab for 84 days was conducted in earthen pond at Brackishwater Station, Bangladesh Fisheries Research Institute, Paikgacha, Khulna. The aim of the experiment was to study the effects of cowdung application on crab production and water quality. There were three treatments as without cowdung (T1), 500 kg cowdung/ha/fortnight (T2) and 750 kg cowdung/ha/fortnight (T3) with three replicates for each. The result was evaluated on the basis of growth, production, survival rate etc. The experimental months were mid-April '96 to mid-July '96. To maintain a good water quality, water was exchanged in every spring tide. The range of salinity during the experiment was 8-19 ppt. Trash fish and fresh shrimp head were used as feed on raw basis in every alternate week at a rate of 8% body weight of crab at the same time rice bran and wheat flour were used at a rate of 2% body weight as a source of carbohydrate. The production of T1, T2 and T3, were 720.35 kg, 862.16 kg and 669.19 kg/ha respectively. Though the effects of cowdung on production of crab is insignificant but in terms of production, survival rate and growth, the study suggest that the application of cowdung in addition to feed can be recommended for mud crab culture at a rate of 500 kg/ha/fortnight.

Laboratory experiments were conducted to determine the effect of compounded feeds on growth of juveniles (3 to 4 cm) of the Banana prawn Penaeus merguiensis. In all, seven diets were prepared with different combinations of locally available ingredients. Diascure, a local tuber was used as source of carbohydrate and vitamin mineral mixture (1%) was used in all the diets. The results indicated that diets with groundnut cake (diet 2, 3, 5 and 7) produced better survival and growth. In diets 4 and 6 growth was good but survival was very poor. Amongst all the diets, diet 7 produced significantly better growth, survival and food conversion ratio.

Morphometric characteristics of Lamellidens lamellatus were studied using a random sample of 138 individuals collected from Bathalagoda reservoir in Kurunegala district. The largest number of individuals in the collection was between 40-50 mm in length. They had a body weight between 60-80 gm. The most abundant bio-chemical component in the adductor and in the foot was protein. Carbohydrate and lipid quantities were almost equal while ash showed the least value. The total protein content ranged from 48.8% to 73.4%; the carbohydrate content from 12.64% to 23.8%; and lipid content from 12.0% to 28.1% of their dry weight. It was found that there were significant relationships between the length and the body weight; and between length and volume.

Studies on the nutrient composition of smoked-dried Clarias gariepinus were carried out, to assess the effects of pest infestation on the dried catfish from two different market (Abakpa and Kpirikpiri market) area in Abakaliki Metropolis, Ebonyi State, Nigeria. Fish samples from the two markets where kept for pest to infest it and it were taken to Biochemistry Laboratory of Food Science and Technology in Ebonyi State University to assess the damage of pest on dried catfish using standard methods. There was a significant different among the mean weight of fish from the two markets (Abakpa and kpirikpiri; 19.13kg and 18.98kg respectively) compared with the mean weight of the control 20.09kg. There was a variation in the proximate composition of the fishes from the two markets compared with the control, the decreases of the proximate composition are: crude protein from 60.07% to 40.27%; fat from 8.35% to 5.90%; moisture content from 11.67% to 10.67; fiber from 12.93 to 11.93; ash from 4.02% to 3.54% and carbohydrate 12.67% to 5.89%. The longer the storage periods of the infested smoked fish the more the tissue was degraded. Proper handling and storage of dried catfish are required to prolong the shelf life and nutrient content of dried catfish.

The caryophyllaeid cestode Lytocestoides fossilis infects the freshwater catfish Heteropneustes fossilis. The study was conducted for two consecutive years (2004-06) to record the bio-statistical data of the parasite. The incidence, intensity, density and index of infection of the parasite have been recorded. The infection was more during June to September, moderate during February to May and low during October to January. The parasite brought about severe histopathological changes in the stomach of infected fish. The changes observed in the stomach of fish included structural damage of the villi, inflammation, and fibrosis associated with hyperplasia and metaplasia. The hypertrophy of mucous layer led to vacuolation and necrosis. Histochemical changes were noticed with enhanced carbohydrate, protein and lipid contents. The enhanced substrate content in the infected organ might be due to the disfunctioning of the digestive tract, which results in the accumulation of various metabolites. Mucus secretion was triggered as a protective interaction against parasitic invasion. The parasitic infection affects the general metabolic state of the host and as the result, the fish becomes sluggish and moribund.

Among the edible crabs, Podophthalmus vigil occupies a distinct position in Porto Novo coast. Though the fishery is seasonal, P. vigil supports an additional crab fishery from august to october. An attempt has been made to evaluate the nutritional status of different size groups of P. vigil. It has been observed that protein and moisture values are more in smaller crabs, corresponding with a drop in carbohydrate and fat. In bigger size groups, the values of fat and carbohydrate are found to be higher, while protein and moisture contents decreased slightly. The total meat content varies in different crabs of the same size group and the average value of the total consumable part is found to be only less than 30% of the total weight of the animal.

Fish sausages are finely ground fish flesh, either of a single species or mixed, homogenised with starch, sugar, fat, spices and preservatives, generally filled in cylindrical synthetic or natural casings and pasteurised. Similar products containing small pieces of quality fish and lard are termed "fish ham". They are highly relished products in Japan, annual consumption exceeding 2 lakh tones. Preliminary studies have shown that they can catch a lucrative market in our country. However, being a pasteurised product which is often consumed as such without any further cooking, strict quality control measures have to be enforced so as to avoid food poisoning hazards. Besides physical characteristics like absence of damages, pin-holes, curliness and air pockets as well as jelly strength, texture and flavour, chemical characteristics like pH and acid values, moisture, carbohydrate and fat contents and volatile bases have to be assessed. A very important test that has to be carried out along with the above, before passing a lot for free distribution is the bacteriological examination to avoid the presence of pathogenic organisms.

A method has been evolved to enhance the production of natural feed in brackish water fish farms by providing substrates for bio-growth ('aquafeed' production) which is a biomass complex consisting of sedentary and associated organisms of plant and animal species. The seasonal fluctuations of the aquafeed production over different substrates ranged as: 787-1830g/coconut leaf (6m²)/45 days, 16.0-072.9g/glass panel (2x10x10cm²)/30 days, 52-230g/nylon mat (2x25x25cm²)/30 days and 18.6-123.1g/wooden block (6x10x10cm²)/30 days. The average dry weight composition of the major components of aquafeed obtained in the present study was sand-silt-clay 40%, protein 22%, carbohydrate (water soluble) 1.8% and fat 3.35% (water content 85%). Mugil cephalus of 1.85 cm reared in a 0.01ha pond and fed on aquafeed attained a size of 23 cm length and 146.73g weight during one year. Survival rate was 54% at a density of 1000/ha. Salinity and temperature of the pond during the culture period ranged between 1.4 and 32.8‰ and 28.1 and 36.5°C respectively.

The culture of Penaeus monodon has explicitly defined the need for diet formulations or supplementary feeds that would promote optimum growth and survival of the animal. A total of 28 feed combinations were developed for P. monodon. Fish meal, shrimp head meal, squid head meal, Ascetes spp. rice bran, and soybean cake were used as primary ingredients in these feeds. The commercial vitamin mix No. 22 was added to the dry ingredients. Gelatinized corn starch and wheat flour were used as binders. The pellets were extruded using a portable kitchen grinder with a diameter of 4 mm. The products were either sun-dried for 8 hours or oven-dried overnight at 50 degree C to stabilize moisture at 8-10%. The pellets were then kept in covered glass bottles and stored in the laboratory at room temperature. The cost of the feeds excluding labour were also computed. The pellets were analyzed for protein, fat, carbohydrate, crude fiber, ash, and moisture contents using standard procedures. They were also analyzed for water stability. To test the stability of pellets in water, 2-g samples were placed in plankton nets (mesh #40) and suspended in water for two, and six hours. The undissolved samples were then vacuum-dried and the moisture determined. Cost of the feeds ranged from P1.10 to P2.60 per kg depending on the feed ingredient. Squid and Ascetes spp. were rather expensive for use as basic ingredients. Proximate analysis of dry weight showed percentage protein content ranged from 20-63 g; fat, 8-20 g; carbohydrate (by difference), 11-36 g; ash, 8-28 g; moisture, 6-11 g; and crude fiber, 5 . 13 g. Stability tests showed that after two hours, 35-88% of solids remained intact and after 6 hours, 20-55% of the pellets remained undissolved. When a pellet disintegrates easily, pollution of the water occurs. Chances for the shrimp to feed on the pellet is minimized when the pellet is unstable. Thus, the search for a more compact feed pellet has to be continued.

The proximate composition of the high temperature processed fish sausage was found to be 14.56% protein, 4.65% fat, 69.14% moisture, 2.12% ash and 8.12% carbohydrate. The quality of the product during storage was assessed on the basis of the changes observed in the physical, chemical and microbiological parameters. The results of the different tests such as pH, volatile base nitrogen (VBN), trimethyl amine nitrogen (TMA-N) and jelly strength are summarized and discussed. The total bacterial load increased gradually during storage but was not proportional to the initial load.

Studies on the biochemical composition of crab meat from body and claw revealed marked differences in relation to flavour. Protein content is on the higher side in crabs (19.1 to 20.9%) with high percentage of free amino acids and phosphorus and less carbohydrate and fat. The variation in composition due to the presence of eggs in female crabs and the importance of claw liquor and its composition are reported.
